FAGOR PANS ARE WELL MADE
VERY WELL MADE AND FOR THE PRICE IT IS VERY HARD TO BEAT.I WISH FAGOR MADE A PAN JUST A LITTLE SMALLER,BUT I LIKE THIS ONE.IT JUST FIT IN MY OVEN. I HAVE OTHER FAGOR PANS AND THEY ARE ALL WELL MADE.
Well built paella pan
I have been looking all over for a reasonably priced but well made larger paella pan.I couldn't find any in the usual department stores and consumer oriented bath and kitchen stores.I then went to several high end culinary shops and suffered sticker shock at seeing good paella pans mostly in the $100 to $200 range with some priced higher.I searched the internet with only somewhat better pricing.When I saw the Fagor 15 inch paella pan at amazon.com at around $23 I thought I'd give it a try, figuring I'd get a cheap product made out of light metal for that kind of money.Boy, was I surprised when the item came.It is made out of heavy, thick aluminum with a high quality non-stick interior surface.The handles are thick stamped metal rolled to a nice diameter and riveted securely to each side of the pan.Instead of a cheapy pan that would be disposable after a year or two, this pan is built to last.Read more

Versatile Sear and Bake Pan
At first I hesitated on adding this "paella" pan to my Sitram Catering Collection. But, I was looking for a pan with a wide opening (about 12") that had low sides (about 3 inches) and had short (eared) handles (did not need to toss or shake, and preferred to conserve on cooktop space). I also wanted a copper bottom since it helped brown meat better. This was sort of a pan that I would use for chicken parmigiana, chicken cordon blue, beef rolls or something that you would sear and finish in the oven.
Too Small for Paella!
Sitram is an excellent brand for commercial cookware. However, a 12-inch paella pan is too small for most paella recipes. I use a Calphalon Hard Anodized 16-inch paella pan, and it is always filled to the brim no matter the type of paella that I am making. So, unless one is making dinner for two, I recommend a larger paella pan. Since making paella is a lot of work (and fun, too), I usually make it when entertaining a group. The paella pan can be used for more than paella, such as for making dutch pancakes, latkes, or party-size au gratin dishes.
