Intended for the busy chef or serious home cook, the system takes knives through three stages--reshaping, coarse honing, and fine honing--in a series of simple steps. The Edge Restorer works first, using two tungsten carbide cutters to restore new angles to a rounded edge. The cutters adjust easily for different cutting edge angles and are much faster and more accurate than a stone. The second phase uses the Diamond Fingers Sharpener, a set of six stainless-steel spring fingers that are bonded with 450-grit crushed industrial diamonds. This steel will also perform better than a steel without diamond dust because it accomplishes the final task of a professional sharpening, which is polishing the edge to a fine point while realigning the edge.
