    High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives.     This knife has made me eat more vegetables, just because it's so much fun to chop carrots.I was a little concerned with the handle at first, but it's very comfortable, and isn't slick at all, even in soapy water.I also worried that maybe I should have gotten the bigger version of this knife.Again, my fears were unfounded, as this was the perfect size for vegetable preparation.You can't really describe the feeling of using the best tool for the job... but if you've ever had that feeling, you already know how you'll feel using a Global.When I slice carrots for snacks, they come out as perfect, translucent discs.Any vegetable I've cut has been a joy.

    I really like this knife for making thin slices of small to medium size veggies. However, I think this knife is a bit small for mincing onions and the side is too short for scooping like a cleaver (which is bad for your knife anyway). I still usually grab for this knife because its insanely sharp, light, and versatile because of its size. I can use it as to slice tomatoes, shred lettuce, and then dip it in the mayo jar.     I am a beginning cook.I have always marveled at the guys in the local shops whacking at the chicken, etc with a meat cleaver.I think I bought the thing for reasons of machismo alone. But, how easy it makes preparing meat and foul.Itfeels like an appropriate weight to my male hands.A couple of cuts and my chicken is dispatched.The knife looks well-made but it lacks the bolster of high-end Henckels.Unless you are cleaving whale or walrus, I doubt it matters.

    This is a Japanese chef's knife, a low-tip style with a broad blade and slightly curved cutting edge. For Asians, this knife is the same kitchen workhorse the French chef's knife is for Europeans. Its cutting edge is less curved, so it provides little rocking action, but for straight-down slicing and precise chopping, it's superb. Its 7-inch blade can be manipulated by cooks of any hand size, and its balance should please. Classic three-rivet handles distinguish Pro S from Henckels' other quality lines. Handles are smaller, a feature those with small hands may appreciate. Pro S knives this size and larger are high-tech welded to combine three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel.     After working in amatuar kitchens and going through the school of hard knocks I finally got into a real restaurant where I was expected to have my own knives. I looked around quite a bit for a good knife and as soon as I held this one in my hand I knew it was the one and I have not been dissapointed. The weight and balance are perfect. It's still sharp after over 2 months of everyday use chopping everything from chives, parsley, and limes to opening plastic bags and slicing open baked potato's . All I do is hone it everyday before I go into work and the edge stays all night. As long as that is done I'm sure it will provide me many years of valuable service.

    I received this Henckels Santoku knife as a graduation present, along with a full set of Pro S knives, when I graduated from Culinary School. I had done a lot of research about different brands of knives and felt that the Henckels Pro S series was the best for me. The grip is not cheap and I love the weight of the knife in my hand. And the santoku knife is excellent. I have been using it almost everyday for 4 years. It has replaced my chef's knife as my primary knife and I now use it for simple tasks like cutting up vegetables such as onions and potatoes. And I also use it for more difficult tasks such as cutting up a chicken. This is a great knife that with proper care and sharpening will last for many years.

    This is the knife I use everyday in the kitchen. Blade is the perfect size for pretty much doing everything and remains sharp for while, if honed regularly. It's also lighter than the chef's knife. My only complaint about the knife (therefore dropping it half a star) is that the blade is not perfectly straight,there's a slight curvature of the blade.     My brother made a salsa with this knife while I was visiting and I asked about the knife. He let me try it and I fell in love. Every member of my family now owns this knife and is it the favorite among all the henckels I own. The heft, balance, edge and handle are perfect. It moves like part of your hand. This knife is worth 120 dollars at least. Buy it and never look back.

    With over 26 years of practical experience in professional kitchens, as an Executive Chef, and Corporate Chef, I have used many knives. About four years ago I purchased this knife, and it instantly became my favorite. From its balance, to it's high quality edge holding Solingen German steel blade, I always find myself picking this little sweetie over my former favorite, Wusthof 8 inch Chef knife. Don't get me wrong I still love my Wusthof, but the santoku has become a part of my hand. If this knife lacks anything, it could be stamped from a thicker piece of steel, for more heft, but then it would no longer be a true Santoku.     Of all of the Henkels I own this cleaver seems to get used the most of all !! It holds a sharp edge longer than any other Henkle Iv'e owned and it's a Great size shape and wieght !!

    This meat cleaver has a nice sized and weighted blade, a comfortable handle that won't slip. 4-0 out of 5 stars The best cleaver I have found.
    I own several Henckles and Wusthof knives, and enjoy the quality of all. My only complaint has been the price, but that has been addressed by companies like Calphalon. The cleaver has become more of a specialty item in recent years, and is only available from a few sources. After looking at the market, I chose the Henckles 5 star. I think I made the right choice. It is not really a large cleaver, but more along the lines of "just right". Read more
