Editorial Review

The unique "East/West" blade design of Füri Pro Coppertail knives combines the sharpness and scalloping of a Santoku with the thinness and curved edge of a chef's knife. The result is cutlery that is superb for straight slicing without sticking but that still works into a great rocking motion for speedy mincing or chopping. Not to mention that Coppertail knives are the cutlery of choice for cookbook author and Food Network host Rachael Ray, who has a great deal of clout with home chefs.Read more

5-0 out of 5 stars Amazing knives!
I bought theese knifves to start out my first kitchen, I can't belive how amazing they are. Usally i struggled with my parents old knives just to cut things like tomatoes. With theese knives I am able to slice tomatoes effortlessly. Dicing things like garlic and onions is a task I usued to leave for the food processor, but belive me you feel like a professional chef they way you can run these knifes through foods. WARNING: They will make you want to cook more than you do now!

5-0 out of 5 stars Really great knives
I bought these knives as a gift for a student at the California Culinary Academy. She said the knives are really great, far better then any Santoku she's had.

5-0 out of 5 stars Best Knives I've Ever Had
These wonderful knives are extremely sharp and do the job in half the time of my other ones, and they weren't a cheap set!The Furi Pro is light and comfortable to handle. The case it comes in is beautiful!I expected it to be paper-thin and fall apart after a short while, only to find a beautifully crafted wooden box that is slender enough for the drawer.

4-0 out of 5 stars As Easy to Use as Shown on Ms. Ray's Cooking Show
I have always been afraid of knives and tend to use them gingerly in the kitchen. However, this knife is very sturdy with a comfortable-to-hold handle. It is as easy to use as demonstrated on the 30 Minute Meals show.
5-0 out of 5 stars Furi Pro Rachel Ray 7-Inch Gusto Grip East/West Knife
This knife is as sharp as Rachel is cute... wonderful balance and cleans like a dream,SHARP !!!We have been using a japanese laminated kitchen knife for 20 + years and have never found a knife that could be as sharp. But it was getting tired, the handle had come loose and the blade was pitted because it was not a stainless base.
4-0 out of 5 stars Overall a good knife
I've been using this knife for several months now and find it to be a good all around knife. It's heavy enough to cut up chicken yet sharp enough to cut tomatoes. It is weighted somewhat differently and I often find that I have my finger on top of the blade when cutting extensively. I also like the "rounded" santoku since you can rock the blade or cut flat, whichever you prefer.

5-0 out of 5 stars Amazing!
This was my first major knife "investment" and I was a little intimidated by the price tag. It's absolutely worth it though. I had no idea a great knife could make prep work SO MUCH easier!

5-0 out of 5 stars THE chef knife
The Wusthof Grand Prix is the knife to own.I don't care what all the other folk's are yammering about (Global, or those new santoku knives, etc) this is the knife to invest in.Unlike the Global (which is a good knife), the Grand Prix feels perfectly balanced in the hand. The blade holds it's edge very well and is easy to maintain with steel and/or stone. The handle, which is made from a synthetic material, is very comfortable to grip and produced to the same quality level as the blade.THIS is the knife most chefs purchase to use in their kitchens. This knife makes me feel like i can out-chop iron chef sakai!

5-0 out of 5 stars I cook for a living...

5-0 out of 5 stars WOW what a knife!
I love it, love it love it! This is the best vegetable knife I ever had! It is absolutely wonderful! What else can I say?

5-0 out of 5 stars Great knife, great value, great gift
We love ours and use it constantly. It looks cool. Our friends are intrigued by it. We have bought several as gifts - they have all been very well appreciated. It's very sharp and easy to use. It's the best knife I've used to thinly slicing onions. For the price it's simply amazing. I wish thos company would introduce had a paring knife!

5-0 out of 5 stars Unbelievable value.
I've had this knife for nearly about a year, purchased at the same time as a name brand chef's knife, which cost 5x more.I've used the Komachi much more often--twice daily, and it has kept its sharp edge much better than the other knife! So I give this 5 stars for function and price. It has become my favorite knife. When it finally goes, I won't hesitate to buy another one. ... 3-0 out of 5 stars I wanted to love it, really I did
The Furi knives are well made, that is evident. And the rubberized handle provides a good, safe grip. But this little sucker just doesn't cut very well; the blade seemed dull right out of the box.I purchased the Furi sharpener and used it (and used it) but can't get the knife sharp. It's a shame because this little five incher would be wonderful for chopping all sorts of veggies.

5-0 out of 5 stars Great Little Knife
This is a great little knife!I have small hands and found this knife to be a great size that is easy to handle.I like that it has an orange handle, it makes it easy to find in my wood block.Others have said that it is poor quality, but I disagree. It may not be the same quality of a $100 knife, but look it is only $40.Overall it is a great addition to my kitchen.

5-0 out of 5 stars A Wonderful Find At A Reasonable Price!A++
I just purchased this knife, having a larger Wustof Santoku Knife.I wanted this smaller knife to handle jobs that did not require the larger Santoku. This knife is simply wonderful; and despite other reviews about the orange handle, the ease of use makes up for the color. The handle is quite comfortable and the grip makes it easier to chop and cut without fatigue. It's easy to clean and the knife is as sharp as any of the other higher priced knives that I own such as Henckel's or Wustof's.Highly recommend!!! ... Read more

Editorial Review

High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-inch chef's knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Read more

5-0 out of 5 stars Best knife I own.Convinced me to buy the set.
After working with a combination of German knives for more than ten years, I decided to buy a Global knife and give it a shot.It feels great in my hand and is easy to handle and work with. The blade is incredibly sharp and has held its edge very well.
5-0 out of 5 stars It is shaaaaaarp!
I bought one for my daughter a year ago and finally bought one of my own recently and it is the most amazing knife imaginable. As a vegetarian, I use it constantly for chopping and so on and it is simply effortless.Money very well spent as I know it'll last a lifetime.

5-0 out of 5 stars Good Balance, easy to sharpen, ugly as sin.
I originally bought this knife because one of the chefs at the restaurant I work at had one. I picked it up one day and the lightness and balance blew my mind. A couple weeks later I bought my own as well as a ceramic water sharpener.

4-0 out of 5 stars Great Knife at a Great Price
I bought this knife based on a recommendation from Cook's Illustrated. It's sharp enough to cut just about anything, and light enough that it doesn't fatigue your hand or wrist. I clean mine in the dishwasher and haven't had any problems so far. I also own a paring knife from Victorinox, and I plan to buy the 6" chef's knife as well. The 8-inch blade on this knife features a curved cutting edge and a blunt back; chopping, dicing, and mincing duties are simplified--and made safer--by utilizing a quick rocking motion on the cutting edge. Part of the popular Four Star series, the hand-honed blade is made with Henckels's Sintermetal Component Technology (SCT), which allows three different grades of steel to be combined to form a single piece, fusing together the blade, bolster, and tang. What does this mean in layman's terms? A strong, high-quality knife that will last a lifetime.Read more

4-0 out of 5 stars could be better
This is my first quality chef knife. Although most items cut very easily, harder items such as carrots dont cut as easily as I had hoped. I am using the Henkels honer but maybe it needs to be sharpened with a sharpener. Even so, I am very pleased with the results I am getting.

5-0 out of 5 stars I cook for a living...
I gotta tell ya...this has been the best "out of the box" knife that I have used in a long time and I have purchased and used every FORGED 8 inch chef's knife from every line of every manufacturer listed here on Amazon. The factory edge was perfectly honed and sharp as a razor right from the get go. Usually I have to use a sharpening steel for a few strokes to reclaim the edge but not this one. Maybe I got lucky but I do love it dearly.5-0 out of 5 stars There is simply no better line of cutlery on the market.
I've been using my Henckel's chef's knife for many years now, and I continue to be impressed with it at every use.The size, weight and balance make it comfortable to use, even for larger "projects" that might cause your hand or arm to get tired with a lesser product.Even after countless uses, the edge remains super sharp, requiring only rare application of the sharpening steel.I found this out the hard way a few days ago with a careless slip of the hand...The heavy duty stainless steel has stood up perfectly to umpteen-bazillion trips through the dishwasher, without the tiniest hint of rust or discoloration.Read more

5-0 out of 5 stars my favorite knife
as a cook at a well known nyc restaurant, i spend a minimum of 3 hours a day with a knife in my hand. over the years, i have used many brands and types of knives.I've owned german--wustof, messemiester and japanese--global and mac, but i find myself constanly reaching for this knife. it feels really comfortable in my hand.it's well balanced in is great for everything.if i could only own one knife, this would be it.I would also like to note that anyone with hand or wrist problems including arthritis should give this knife a try.i've had tendonitis from cooking and the ergonomic design of the hand has been a tremendous relief.at first it may feel a bit awkward, but it soon feels comfortable.i'm just a little embarrased now that it has the rachel ray print on the blade.that's not something you want seen in a professional kitchen.

5-0 out of 5 stars Thank you Rachael
This knife is the most outstanding piece of cutlery I have ever used in my life. I have given my "chef's knife" to Goodwill after I first used my "Rachael." More to the point my daughter has been a professional chef for almost 20 years, has prepared dinners for three President's of the United States, and has been an Executive Chef at two fine restaurants in the Middle Atlantic area, - she has tried my "Rachael" and I had a hard time keeping her from walking off with it. That will be a Chanukah present for her.
5-0 out of 5 stars Sharp, Perfectly Balanced, Great Feel
There is no shortage of expensive, high quality kitchen knives, but this is my favorite and the one I reach for most often. The steel is first grade excellent, it takes and holds a very sharp edge, and it feels like a natural extension of my hand. It also looks lovely. You can certainly spend more money, but a knife with these qualities is all you really need. ... Read more

Very good knife, close to $100+ german quality. It arrived sharp and is easily sharpened. Holds an edge well, almost as well as a pricey Henckels. 4-0 out of 5 stars A good knife, but not perfect
I ordered this knife in order to determine whether a larger set of Global knives was in my future.Although it's a nice knife, it's not something I feel a need to own more of. I'm an avid cook, but it comes out of my spare time, so I'm looking for comfortable knives that are easy to use and clean; this one isn't as comfortable as I'd like.
5-0 out of 5 stars The finest paring knife you can aquire
I have been an avid amateur cook for 25 years and have worked with a wide variety of kitchen tools during that period. Knives that I have utilized range from the "cheap but effective" to the finest products from Henckels. But the knives I use daily are the Globals', and the one that I cannot be without is this one. Although it is designated by the manufacturer as a Utility knife, it is simply the best paring knife I have ever used, and I've gone through a lot of them. Its razor sharpness is easily maintained, it has a perfect heft and balance, and it is exactly the "right" size and shape. It just feels great. Sorry if I sound so effusive -- I am not connected with the Global Corporation in any way -- but I would recommend this knife to any serious cook who has exacting standards in kitchenware. ... The indispensable workhorse of any cutlery collection, a cook's knife performs a wide variety of cutting tasks, from fine chopping to dicing and slicing. The heavy 8-inch blade of this definitive model provides enough heft to allow the knife rather than the cook to do the cutting labor, but is more maneuverable than larger models. The length of the cutting edge makes quick work of all slicing jobs. 5-0 out of 5 stars Knife Expert Approved; Multi-Functional and Durable
I am a stage performer as well as a chef.I specialize in contortion and throwing knives (often with my feet).I use the Wusthof so much in the kitchen, that I thought I would incorporate it into my act.I throw the knives at flying fruit and vegis and perform flips with knives between my toes and fling them at my assistants. Throwing knives are usually smaller, perfectly balanced, and forged from one solid piece. They require perfect tang as well and incredible strength.Wusthof is the ONLY high-end kitchen knife that meets these requirements.
5-0 out of 5 stars best out there
I own the nine inch version of this knife. It is definetly the best knife i have ever used. And after using this every other knife you use just doesnt feel good enough. Ive been told that the only knife company better then wusthof is global. Ive never tried a global knife but it is around the same price range as this. The only difference i would think is that these knives look alot better than global. If your not convinced that this knife is sharp, try cutting cutting a tomato when its new or has just been sharpened (since this will be when its at its best) you shouldnt have to try very hard since it will just drop to the cutting board as soon as it touches the tomato. Its an excellent knife to say the least.

5-0 out of 5 stars I am not a chef but with this knife I feel like one.
This knife is well worth the money. It is not only sharp but it behaves in your hand begging to be tuned loose on meat vegetables, fruit you name it.Honestly, I felt it was too much for me but as I got better accustomed to its heft, I knew it was me that did not possess the skills to wield the tool. Do not doubt yourself, learning to use it is a joy.Treat yourself. ... Read more

1-0 out of 5 stars VERY DISAPPOINTED
I bought this knive about 6 months ago. When I first started using it it was great. After about 2 weeks it became so dull I had to throw it away. This knife can't be sharpened.I recently bought a better knife that can be sharpened and I am very happy with it.

1-0 out of 5 stars Stayed sharp for a couple days
I got a Pure Komachi Chef's Knife last year and enjoyed it the first couple times I used it.After that, the blade got dull and since you can't sharpen it, it became useless.I'm afraid there is no such thing as a "forever sharp" knife.I couldn't even cut a cherry tomato with the Komachi without having to saw through it.
5-0 out of 5 stars oustanding knives

3-0 out of 5 stars Sharpness
Ok I was given 4 steak knives and the 8 Inch Chef Knife for Christmas last year and found after using the large knife for a couple things that it was not sharp anymore. Not like when took it out of the package the first time.We do have a knive sharpening tool it looks like I don't know a rounditem that we got from much cheaper knivesquite a few years ago and somy husband sharpened the knife "thought it was a life time knife" and alright it was sharp again, but have to sharpen each time want to use or every other time. When husband bought for a gift seeing it had a lifetime warranty, maybe it would stay sharp for a lifetime but maybe we are a little ignorant to the Lifetime warranty, and they don't tell you in the directions you have to sharpen. So as far as sharpness, it's ok but have to resharpen all the time.......

5-0 out of 5 stars Very satisfied restaurant chef
Wow, I bought this knife back when I worked in a local Italian restaurant in college.I cut and prepped all the veggies and fruit. One of my other duties was sharpening all the knives in the kitchen. After being frustrated with all of the low cost Sysco knives since they were never sharp and could never be sharpened, I noticed that the boss always had his own knife - at first a Henkel and then a Global.I decided to invest in my own knife for restaurant work. This chef's knife was what I found on sale and I can't tell you how please I was (and still am) with this knife.Out of the box - it was so sharp I was scared of it, but I eventually realized what the phrase "a sharp knife is a safe knife" really means, because prep work with this thing was a dream.I bought a plastic holster for the blade so I could use it myself. But every other cook in the kitchen wanted to use it.It feels GREAT in your hand while you are cutting which is due to the shape, balance, shape and material of the handle and the full tang blade.I would also like to comment that it has an attractive classic look to it.I still have the same chef's knife 7 years later and occassionally take it to a professional knife shop for sharpening. What else can I say? I love this knife and will probably buy a full set if I can find one that has everything I want.Oh, I forgot about how great the price is - I have used Henkels, Globals and a few others and I can tell you if you keep this knife sharp you will be just as happy so you don't need to spend all of that $$ on the so-called higher quality brands.Chicago Cutlery has outdone themselves with this knife! ...

Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 5-1/2-inch knife for precisely slicing and chopping vegetables is an example--have thinner blades and are lighter than traditional European-style knives. Read more

  • Blade made of high-tech molybdenum/vanadium stainless steel

5-0 out of 5 stars A Great Knife
You can't go wrong with this knife.I use it almost as much as I use my 8 inch chef's knife. It holds an edge well, feels light in your hand, and has perfect ballance.

5-0 out of 5 stars Holy Crap, that's a good knife.
This knife has made me eat more vegetables, just because it's so much fun to chop carrots.I was a little concerned with the handle at first, but it's very comfortable, and isn't slick at all, even in soapy water.I also worried that maybe I should have gotten the bigger version of this knife.Again, my fears were unfounded, as this was the perfect size for vegetable preparation. You can't really describe the feeling of using the best tool for the job... but if you've ever had that feeling, you already know how you'll feel using a Global. When I slice carrots for snacks, they come out as perfect, translucent discs.Any vegetable I've cut has been a joy.

5-0 out of 5 stars Super sharp, great medium size knife
I really like this knife for making thin slices of small to medium size veggies. However, I think this knife is a bit small for mincing onions and the side is too short for scooping like a cleaver (which is bad for your knife anyway). I still usually grab for this knife because its insanely sharp, light, and versatile because of its size. I can use it as to slice tomatoes, shred lettuce, and then dip it in the mayo jar. Perfect for making gourmet sandwiches. Great knife, worth every penny. I plan on getting a 7 1/2 inch Global vegetable cleaver/knife and a Shun 10" chef's as well. ... Read more

Editorial Review

Cook's knives are indispensable kitchen helpers. They perform a wide variety of cutting chores, from mincing to dicing and slicing. The 6-inch blade of this example provides sufficient heft to allow the knife rather than the cook to do most of the cutting labor; its relatively small blade length makes it ideal for slicing, cubing, and all but the largest chopping jobs. Many people favor a cook's knife of this size because it combines the maneuverability of a paring knife with the strength and weight of a larger cook's knife.Read more

Features

  • Heavy 6-inch blade superior for chopping and other cutting tasks
  • Forged high-carbon stainless steel blade, hand-honed for razor-like sharpness
  • Traditional-style composition handle is triple-riveted for strength and permanence

5-0 out of 5 stars Nice knife.
All I can say is this knife is SHARP right out of the box.The Wusthof and Henkels (high end models e.g. Classic and Five Star) knives cut like butter, but I prefer the Wusthof's look and feel. The only problem is I am too scared to used these fancy knives, because I slightly cut myself when I was cleaning them since everyone says not to put them in the dishwasher.

5-0 out of 5 stars extremely versatile
I have the 8 inch cooks knife as well but find myself using the 6 inch more frequently.
5-0 out of 5 stars A great knife, but I shoulda got it in 8"
This is a terrific knife - chops well, great feel, I like everything about it.My only complaint is that I should have bought the 8" blade instead of the 6" blade. While this knife is more maneuverable than the larger 8" or 10" blades in this series, this blade overlaps in utility with most Santoku blades which are usually only available in sizes up to about 7" or so, and which I also have. Not a knock on the knife, but if you're building a set, I recommend going for the larger blade if you have a decent utility knife in the collection already or something else in the sub-8" range.

Editorial Review

A good chef's knife becomes your daily kitchen companion. It's used for everything from prepping steaks for the grill to finely mincing onions, and chances are you'll reach for it every time you cook--so it better be good. This lower-priced line from Henckels is a great value: excellent quality knives with their standard lifetime warranty. There's good balance, and the handles are a shade heavier than other lines, which some cooks will prefer. The 8-inch blade length is the most practical for multipurpose use, and regular sharpening will keep the stainless-steel blade razor-sharp. It's only minimally flexible, which makes it a great choice for vegetables such as potatoes and turnips. While it's dishwasher-safe, unless it needs sanitizing after use with raw meat, it's often easier to hand wash. Read more

5-0 out of 5 stars Good knife
It's been month since I bought it. I have used it to cut meat and vegetables. So far it haven't lost its sharpness.

4-0 out of 5 stars Great knife for a budget
This knife is not as good as the higher quality henckels knives, but it is still very good for the price, and if you are getting your first chef's knife, or are not a rabid cooking fiend, this would be a good choice.

5-0 out of 5 stars Identical to more expensive German Knives
I have an 8" Wusthof Chefs knife, and got this knife for a friend...they are nearly identical! The Henckel is maybe 1/4 longer...but the build quality is awesome. The henckel also seems to hold an edge alot longer...You can get two of these henckels for the price of one Wusthof... ... Read more

5-0 out of 5 stars best knives on earth.... can be used to operate
This things are sharp.... the metal is so high grade that when the blade goes dull, a small effort is needed with a honning steel to make it sharp as new....
5-0 out of 5 stars Excellent Knife
I received this knife as a gift maybe six years ago by a friend (a chef) who complained about the lack of good knives in my kitchen. It is by far the best knife I have ever owned and the standard by which I make new knife purchases. It's currently the only name I absolutely trust in knives, and affordable too.

5-0 out of 5 stars EXCELLENT knife for the money!
I bought this knife because it received great reviews from Cooks Illustrated Magazine (kind of the Consumer Reports for the home cook). Really, this is a nice knife, and on caliber with a Henkles knife that I own. It sharpens nicely, and has a good balance to it. If you'd like quality, but don't want to turn over half you paycheck for it, give this a try. Also try Dan's Knives - a store on eBay. You'll find it for a better price. ... Read more
