The 8-inch blade on this knife features a curved back and a straight, scalloped edge. The serrated edge penetrates resistant crusts, slicing evenly through even hard loaves of bread without crushing the delicate interior. This knife's best at slicing tomatoes and other veggies.It's a bit shortfor cutting big peasant loaves, and the straight blade makes it harder tocut at an angle down through the bread, since the sharp point, while greatfor starting a cut through an obstinate veggie skin, can get stuck in yourcutting board.The serrations work great, however, slicing through bothcrust and soft inner breadness.

I suspect if I was a professional chef I would know the difference and buy the super expensive other brands, but for a recreational cook I find these knives to be supurb.The price is right, the balance and heft is great, and they hold a fine edge.I usually run them through a hand sharpener before I use them, and they are always razor sharp.To restore edges (I haven't had to do that yet with these knives) I use the "scary sharp" sandpaper on glass method.

My grandparents always had quality knives when I was growing up.As I stocked my own kitchen, I searched for the best quality I could afford.I've tried Henkels and Chicago and both were disappointing.I bought this knife and was so impressed that I bought another and also bought one for my mother.It is superb in quality and comfort.I prefer the traditional handle over the contemporary handle.I put this knife in the diswasher and have had no problem with the handle.Great buy.

I bought this knife as a replacement for a cheap one that we used for years but was finally too dull to keep. After using it, I can't figure out why I didn't buy this a long time ago. It's fantastic. The handle grip is terrific, you get great leverage and the blade is wicked sharp--it's almost scary. I own both Henckels and Wusthof, and to me the Wusthof is definitely the superior blade. I highly recommend this knife.

I own an 8-inch Wusthof Classic Chef's knife and a 6-inch Cook's knife, but I reach for this smaller, lightweight, serrated knife for many tasks. It's easier to wash, and I do wash it by hand and never put it in the dishwasher. It's terrific for cutting citrus fruit. The label does call it a sausage knife, so the reviewer who mentioned that is correct. I haven't tried it yet on sausage, but I'm sure it will work great for sausage, tomatoes, and narrow bread loaves. I even use it to dice onions. I have no regrets about adding this knife to my collection.

This is one of my kitchen workhorses. Gets almost as much use as my chef's knife and paring knife. I use this for tomatoes, sandwiches, rolls, bagels, slicing oranges, etc. Performs perfectly. It's very sharp and well made. You really only need 3 to 5 knives, even for the most well-equiped kitchen, and in my kitchen this is one of my 5.

A crusty loaf yields easily to this tough knife, whose serrations are big enough to rate--in knife-speak--as "scallops." Classic three-rivet handles distinguish Pro S from Henckels' other quality lines: TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of larger knives combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. Excellent ability to cut breads. Only drawback is that it's a bit too long for our knife block. Just double check on the length of your knife block if this concerns you.

When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. I guess i found this a little irritating since i spent a fortune on this knife. It cuts bread fine, but i would not purchase again if i had the choice.

A fine knife for most bread but when cutting large, tough loaves it has trouble "finishing" off the bottom of the crust.A better design is a knife with a slight curve, and sure enough Henckels has one of those as well.If you like hearty, thick crusted bread, then spend a few more dollars and buy the 9" instead. ... This knife will probably last forever, but the sharpness was a disappointment and I felt the serrations were too widely spaced. When coring, cutting, seeding, skinning bushels of tomatoes, the knife is important.

I bought this knife a couple of weeks ago mainly for slicing up tomatoes, and other veggies. My wife asked where I got such a sharp knife and could we see if they have something in a steak knife size. My point is we are very pleased with this knife.

I am a stage performer as well as a chef. I specialize in contortion and throwing knives (often with my feet). I use the Wusthof so much in the kitchen, that I thought I would incorporate it into my act. I throw the knives at flying fruit and vegis and perform flips with knives between my toes and fling them at my assistants. Throwing knives are usually smaller, perfectly balanced, and forged from one solid piece. They require perfect tang as well and incredible strength. Wusthof is the ONLY high-end kitchen knife that meets these requirements.
