Editorial Review The 7-inch hand-honed blade on this knife features a modest curve near the bolster and a straight cutting edge. The blade is long, slim, and flexible and is ideal for filleting fish or chicken; the thin edge allows the meat's fibers to be cleanly separated, making quick work of even the toughest tuna. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion. Read more Features Reviews (2)

|
Editorial Review Branching out from its already successful cookware line, Anolons Advanced collection features high-grade materials with substantial weight. This 6-inch boning knife is ideal for de-boning a chicken, filleting a fish, or cutting meat off of any roast with bones. However, the smooth edge feels a little "sticky" when cutting through thicker cuts of meat. Immediate sharpening on a fine steel is recommended before using this boning knife to bring its edge to a sharper and safer angle. Read more Features

Editorial Review Fine craftsmanship and premium materials make Calphalon cutlery as outstanding as Calphalon pots and pans. This beautifully balanced, full-tang 5-inch boning knife is constructed of a single forged piece of high carbon, no-stain, rust-resistant steel. The hand-ground blade holds a perfect edge that sharpens more readily than regular stainless steel. Contoured for comfort, the seamless handle will not absorb moisture, crack, or chip. Each Contemporary knife is etched on the end with its name and/or size, allowing quick identification when stored in a block. With its long thin blade, this boning knife is perfect for cutting raw meat from bone and trimming fat. All Calphalon knives come with a lifetime warranty. Read more Features Reviews (2)

Editorial Review Designed with advice from actual fishermen, this beautifully-fashioned knife fillets, debones, and skins both larger and smaller fish from the days catch. The blade curves into a pointed tip, ideal for slitting a fish along the backbone and separating the fillet from the bones. Its unsurpassed flexibility enables chefs to make one long, clean stroke rather than "saw" through a fillet in a jagged cut. Read more Features

Editorial Review High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 6-1/2-inch boning knife with flexible blade is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Read more Features Reviews (2)

Editorial Review With a flexible blade that bends around big bones and joints, this knife will fillet a trout but works best with poultry and meats. Classic three-rivet handles distinguish Pro S from Henckels' other quality lines. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, a feature those with small hands may appreciate. The steel used in the Pro S line is identical to that of the Five and Four Star lines. While this boning knife is dishwasher-safe, hand washing is recommended. Read more Features Reviews (5)

Editorial Review This versatile 3-1/2-inch blade is sized and shaped for delicate, precise tasks, like trimming meat and de-boning poultry, where a larger knife might have trouble maneuvering around tendons and bones. Like a standard parer, its also great for cleaning, trimming, and peeling fruits and vegetables. Durable, well-made, and moderate in price, Chicago Cutlerys Insignia line is ideal for cooks who are looking to step up to higher-performing cutlery but dont want to break the bank for a set of famous-name German knives. Made from heavy-duty high-carbon stainless steel for rust and stain resistance, they feature forged blades for a leap in quality above cheaper stamped knives. Chicagos exclusive Taper Grind edge is tapered to be razor-sharp and cuts with precision; these knives will need to be re-sharpened regularly, but they take an edge beautifully and with regular maintenance can stay out-of-the-box sharp for years. The full tang extends from one end of the knife to the other for a superbly balanced feel and added strength, while the heavy-duty forged bolster enhances safety. Ergonomically designed polymer handles are durable and non-porous, so theyre impervious to water and bacteria. Triple-compression stainless steel rivets secure the handle to the blade for increased stability. Chicago Cutlery covers their knives with a lifetime guarantee; they recommend hand-washing and drying for best results. Read more Features
