    Editorial Review

Fully forged from a single piece of German high-carbonstainless steel, this 8-inch chef's knife with its curved blade isideal for rocking through a chopping or mincing task as well as forall-purpose cutting. The 8-inch length suits most cooks, thoughsmall-handed cooks might prefer a 6-inch knife and experts, a 10-inch.The broad blade is tapered from spine to edge and from heel to tip, with a bolster providing balance and safety. Additional balance andstrength come from the full tang running through the handle, which isformed of hygienic, fiberglass-reinforced poly that won't crack, split,or chip and is attached to the tang with the traditional three rivets. The high-carbon stainless-steel blade takes and holds a fine edge andit won't rust, stain, or discolor. A quality knife like this should behand washed. It carries a lifetime warranty against defects. --FredBrack ... Read more

2-0 out of 5 stars The cheapest 'good' knife, but not the best value
Recently I decided to upgrade my knife collection at my home and cabin, which meant buying two knives. My mainstay, a Japanese sushi knife, has incredibly hard steel but was too delicate for day to day use. After doing the research I bought the Tramontina Professional Series 8" Cook's Knife and also the Calphalon collector's editon knife, figuring to keep the best one at my house and exile the loser to my cabin. I ordered the Tramontina ($...) and bought the Calphalon ($...). If money is the primary thing I would buy the Calphalon. But if I had it do over again I would buy two Tramontina knives. The steel of both of these tools is very, very, good; unless you toss your knives in a drawer you won't have to sharpen these very often. The difference is in the balance, feel, look, and workmanship. The Calphalon blade has a wave or slight curve to it and when you run your hand along the side of the blade you can feel hollow places and irregularities in the forging. The Tramontina is just dead on. The handle is a bigger disappointment for the Calphalon, because it is almost square in cross section with a sharp transition from top to side and side to bottom. It just doesn't feel very good. The Tramontina, on the other hand, has a more rounded and complex shape that feels just right. The least important is the look. Seen from the top, the Tramontina's tang meets the bolster by curving outward in both directions, with the handle pieces having a matching curve, so the knife is rounded in two dimensions at the bolster. It's hard to describe but it just looks like a quality product. The Calphalon's tang keep's it's flat bar shape right into the bolster, with the handle pieces cut off square to fit, so it is square in both dimensions. Again, this is a minor point. I have since bought the Tramontina 6" utility knife and I'm just as happy with it. I highly recommend this product and for me, it was worth the extra $.... If you decide to get the Tramontina make sure to get the Professional Series as they make other, cheaper knives.

5-0 out of 5 stars Good knife with good price.
This knife is a little bit heavy but well balanced. Though I don't have any Wusthof or Henkels to compare, this is definitely the best 8' kinfe I ever had. Usually I test a kife by chopping scallions. This one cuts very fine. So far I am very pleased with its service. It is eapecially handy to cut pineapples or honeydews. In these cases, you need some weight in the knife to do the job.

5-0 out of 5 stars Great Value
I like cooking knives.I purchased this blade ... simply to play with it.It does not compete with top of the line Wustoff, Henkels or Sabatier knives (forged in Europe of course). However those knives are generally at least 3-5 times the price of this knife.

This knife has many of the benefits of the higher quality European knives. They are forged and the steel is high quality. This knives lacks the workmanship detail you'd find in top of the line knives.Only someone who is really [particular] or interested in great knives would even notice these differences IMO. Also, the knife is extremely heavy for a Chef's knife.I have a 1/2 dozen so I should know. That could be a drawback for some but on the other hand weight can aid some cutting tasks. You might like the extra weight.

It won't replace my Wustof, Henkels or Sabatier forged chef knifes but I will keep it and use it and someday give it away to a younger relative just starting out.

I wish I'd have bought a knife like this years ago instead of even trying stamped blades.

If you don't have a forged chef knife this is a great way to get started with forged knives. You won't believe how much easier a good knife can made your prep.

The knife is made in China but the steel is German. The workmanship is better than other Chinese made knives in my collection. ... Read more

    Editorial Review

There are certain dishes that absolutely require cast-iron cookware, and others that just simply taste better when made with it. Just try throwing an aluminum pot onto the campfire and watching the blisters form or sampling a hearty spoonful of jambalaya that wasn't made in a cast-iron kettle. Fancy alloys and coatings on other types of cookware are simply trying to emulate the innate qualities of properly seasoned cast iron: heat retention, even heat distribution, and a scratchproof nonstick surface that will never warp. Since 1896, Lodge has been steadily producing the world's most extensive selection of professional cast-iron cookware, lovingly poured one piece at a time. Cared for properly, these products will last for generations. --Dominic Johnson ... Read more

5-0 out of 5 stars NO Complaints, Tiny Bit of Advice
After reading the other reviews, there's nothing I can add to better describe the quality and value of this pan.It is HUGE, works great, and is inexpensive.

My ONE bit of advice, spend the extra $4 on the pre-seasoned version. My house smelled like a foundry for days after the seasoning process was done on this pan, it is WELL WORTH $4 not to have to put up with that stink for a few days. Its not a horrible smell, but it lingers.HOWEVER, if the pre-seasoned pan is sold out, dont wait, buy this pan and season it yourself, its not that big of a deal.

5-0 out of 5 stars If you know what cast iron cooking is, there're no negatives
I am surprised by some of the comments here cast as negatives on this pan:
It rusts if left in the sink too long.
    It has to be seasoned.
    I couldn't season it.
    It's so heavy.
    It's not really black, it's a silvery-grey.
It comes with complicated instructions about how to season it.

Well, all of these things may be true. But you know, it is _cast iron_. You really have to want to use cast iron to use this pan at all, and you use cast iron because of the advantages it has--all of which are mistakenly cast as negatives by a few reviewers.

Of course it rusts if "left in the sink too long." It's unfinished iron (before you season it), and iron rusts. You do not leave unseasoned cast iron cookware in the sink at all, ever, for any reason (or in any other constantly wet place). Toss any of your unfinished iron stuff into the sink. It'll rust. Your kid will wrinkle up if left in the bathtub for a couple hours--is this a deficiency in your kid? No, it's the nature of the thing. You're not supposed to leave the kid in there that long! Your nonstick Calphalon will become very sticky, losing its finish, if you keep washing it in the dishwasher. Is that a deficiency in the product? Well, no--as Calphalon says, DON'T DO THAT. "Doc, it hurts when I do this." "Don't do that."

Of course it has to be seasoned. It's... cast iron. And the instructions are a lot more involved than "fry up your bacon and wash any which way." But do you want cast iron or not? If yes, accept that it has to go through some seasoning. And only the first couple treatments are artificially administered as treatments per se--the majority of seasoning comes very easily through normal use and normal washing (for cast iron). So anyone can season it.

(Remember to coat the WHOLE PAN in shortening when doing the oven-seasonings, not just the interior. I have a feeling many complaints about rust, especially on the bottom, are from people who are seasoning only the cooking surface. [And then soaking it in a sink, which you NEVER do.] You need to season the whole pan, inside, outside, handle, everything.)

It's not black? Well, yes--when it's not seasoned. Seasoning improves with use of the pan over time (and proper care), and that black color develops. It starts out grey; after the first oven-seasoning with shortening it may be a brownish color; after a few months of use a dark brown; eventually nearly black--and that is beautiful.

So how do you care for and clean it? Well, until it is fairly well seasoned, you NEVER let it sit in water for any amount of time. ANY TIME AT ALL. You don't soak it. You don't dishwasher it. You don't suds it up. You don't set it in the sink.

You let it cool, and then you clean it with very hot water and a brush--a plastic brush should do--to scrub the food off. (Not a hard abrasive plastic or steel pad or brush. Just a good stiff plastic bristle brush.) If you need any extra abrasive power at all (rarely will you), use salt as a scrub. Then you towel-dry it well, and then put it on a burner at medium for four or five minutes (I always set a timer). Occasionally, you may want to give it a fine coat of oil or shortening; I put a little on, let it sit, and then wipe it clean.

Over time, the iron will become pretty well sealed and the pan nearly black (the cooking surface will be black). And it will be nonstick.

This is cast iron. It's great stuff. And yes, there is some user-participation involved. But for the benefits of cooking with cast iron, they're worth the trouble to many who cook.

5-0 out of 5 stars The pan to end all pans
I have one of these and it's my favorite piece of cookware. It's durable enough that it will last you a lifetime, so it's about the best value you can find in a piece of cooking gear. I use mine just about every meal I cook. There is a 'grill pan' version of this that is also quite useful.

    Pros:

    - you can use it both on the stovetop and in the oven
    - after a few uses, it's basically non-stick
    - retains a lot of heat, meaning it's great for searing, stir frying, etc. other pans lose all their heat on contact with the food
    - no teflon, which is harmful to humans and pets
    - heavy, so it stays put on the stovetop

    Cons:

    - you MUST season it
    - it's heaviness means it is not good for cooking omlettes or anything you might want to flip in the pan
    - it's cast iron, so it will rust if left in the sink too long
    - not dishwasher safe ... Read more

5-0 out of 5 stars If I had to choose...
If I were stranded on a desert island with only one cooking utensil allowed, it would be a very hard choice between my Wusthof chefs' knife and the Lodge Dutch oven. I cannot begin to describe the versatility of this pot without sounding like an ad. Suffice it to say that it never leaves my stove top, except when I put it in the oven. Browning, braising, stewing...whatever, this is my weapon of choice more often than not (and I have a decent selection of pots and pans). Add to that the fact that abusing it on campfires only makes it better and what is left to say? As far as I'm concerned, a cast iron Dutch oven is the most utterly useful kitchen pot ever devised, and my kids aren't getting mine until I'm totally non compos mentis.

5-0 out of 5 stars Your Lodge will outlive you!
Cast Iron is ALWAYS a good value for the money and it's indestructable (I'm still using my mother's Lodge skillet that she got for a wedding gift in 1954). This dutch oven goes from the table to the campground with ease. It stews and bakes beautifully - get a dutch oven cookbook and learn how to make campfire biscuits as well as those stews and chilis at home! Cast Iron still manages to look dressy on a table and you can tote it from your stove to the church potluck! Also makes a fabulous wedding, shower, or housewarming gift. Forget expensive wedding registries - buy the bride this Lodge Dutch Oven andLodge Cast Iron Skillet. She'll hand them down to the next generation. Also great for those kids who just moved into their first apartment - they'll never destroy THIS piece of cookware no matter what they burn! A must have for EVERY cook.

5-0 out of 5 stars yumm....beats any crockpot!!!
Just cooked my first of hopefully hundreds..thousand of dishes in this beauty.. I made lamb chop stew. I cooked it for 2 hours but it tasted like all day simmering stew. When my husband first saw the pot he sarcastically made some remark about medieval times..but when he saw and tasted the stew..he apologized!!
I usually make very tasty dishes but something about cast iron...
I am buying nothing but iron from now on..I'm hooked.
This pot is roomy and has high dimensions. It does come preseasoned and is pitch black, not shiny though..the way a well seasoned iron should look, but that comes with time. I re-seasoned mine just for the shine. For those of you who don't cook in cast iron you do not know what you are missing!!!
Forgot to metion what a wonderful deep fryer this oven makes!! Talk about crispy/juicy fried chicken..Perfect, just make sure you give it ample time to heat up and your'e good to go! no more POPEYES!!! ... Read more

Calphalon Commercial Nonstick 12-Inch Omelet Pan

    list price: $115.00

    Editorial Review

Whether firm country-style or tender French, omelets must be cooked quickly and folded in the pan. A classic omelet pan, therefore, is thick-bottomed for rapid, even heating and shallow with steeply sloped sides so omelets can be rolled easily against its sides. This big pan qualifies on all counts, and it's ideal for sautéing and searing, also. Calphalon's Commercial nonstick cookware is coated with an especially durable, multilayered nonstick material. Use only plastic, nylon, and wood utensils. The pan is anodized for hardness. For that no-nonsense, professional-kitchen look, this cookware wears a matte finish. Polished, cast-stainless-steel handles are triple-riveted for durability and balance and stay cooler on stovetops. Holes in the handles facilitate hanging on hook or peg. Made of heavy-gauge aluminum, pans cook without hot spots or warping. The pan comes with a lifetime warranty against defects. --Fred Brack ... Read more

5-0 out of 5 stars Best Pan Ever!
I can definitely tell the difference between Calphalon products and the cheaper alternatives.Cooks evenly, balanced well, and very durable.

    1-0 out of 5 stars 12" Calphalon 12" non-stick frypan
I purchased a Calphalon model 1392 (look at the bottom of the pan for this info). The pan cooks and the food releases like a dream -- the problem is the handle and the flaw is major. It is small in cross section, has a nasty curve downward and is very "slick". The handle stays cool but it makes the pan very difficult (for this in-shape male) to handle, to the point of being dangerous. Too bad they ruined an otherwise outstanding product with such a blunder. So much for testing a new design by the people who designed it. I'm returning it, regretfully. Most of my cookware is Calphalon and I continue to trust the brand -- Ford had an Edsel and I still bought three mustangs.

We have owned these tongs for a while now and I cannot find anything to complain about! The handle(s) are very sturdy - allowing you to really get a good squeeze on something if it is heavy or slippery. The stainless steel always emerges from the dishwasher spotlessly clean and the "locking" mechanism allows these to be stored in the folded position, saving me a lot of cluttered drawer headaches!

Seriously, these would be good tongs at any price and at this price they are well worth the money spent.

2-0 out of 5 stars Nice while they lasted
The locking feature was great, it made them much more manageable while in use and for storage. However, the plastic grips starting coming out very soon after I bought the tongs. Not long after that, the locking mechanism broke. This made them very hard to use and store, so we chunked them and bought a different kind.It is probably worth a little extra money to get tongs that last.

5-0 out of 5 stars Great tongs
I got both 9 and 12 inch tongs for my bridal shower.I LOVE them, so does my husband. They are sturdy, easy to handle, the lock is smoth and does not get stuck like some other brands.I am getting my in-laws, who love to cook, a pair this christmas and I know they will love them too. ... 5-0 out of 5 stars Great Starter Set
I'm getting ready for my own place and bought this because it was on sale. I like how there was almost everything that I need to start out for those first yet attempts at making something edible (hey, tastes good is the next step!).

I would suggest getting the little Pyrex pinch bowls/condiment bowls because it makes cooking a little easier when everything is measured and ready to go.

This set makes a great gift, too. HINT HINT!!! :c)

5-0 out of 5 stars I've used this set more than 10 years and love it!
I've been using these bowls and measuring cups nearly daily for more than 10 years, and find them absolutely indispensable. They don't crack or stain, and look as new as they when I bought them! One of my favorite features is that the smooth pyrex makes them extremely easy to clean.I usually just sponge them off by hand, but have never had a problem putting them in the dishwasher, either. The bowls stack neatly in the cupboard, for easy space-saving.The cups are a bit more awkard to stack due to their handles, but I stack those too without a problem.

The bowls - I love the fact that they're see-through.I've used the larger ones for mixing wet or dry ingredients in cakes, muffins and pancakes; and rinsing produce; and I've used the medium sizes for rinsing rice and other grains.I've even used the smallest bowl as an extra bowl at the table!I don't use my microwave, but pyrex is a material known to work in the microwave.

The measuring cups - I like the easy-to-read markings in American measurements on one side, and metric on the other. Also, the handles are easy to hold and the spouts make for a good clean pour. I like the fact that the markings on the American side are both in ounces and fractions of cups. The one-cup measure has markings in 1/4, 1/2, 3/4, 1 cup, as well as 1/3 and 2/3 cups, and calibrations in between the markings.I've never had a problem, even when doubling or halving recipes into odd measures. For measures smaller than 1/4 cup, you'll need to use measuring spoons (4 Tbsps = 1/4 cup.)The large four-cup measure is a great time saver for making soups that call for 8 or 10 cups of water. I also use the two- or four- cup measure when juicing-I put the cup right under the juicer spout and know exactly how much juice I'm getting.Remember I said they don't stain? My larger cups have had quite a bit of carrot/kale/beet juice in them and if they were going to stain, they would have by now!

It's a great deal to be able to get all these pieces together in one set, rather than individually the way I bought them.Given the durability, multiple uses, and the way the set stays in excellent condition year after year, I think it's one of the best kitchen values there is.If you can't find these pieces new, I recommend looking for them used.

3-0 out of 5 stars A perfect assortment
I got a set of these to replace essential kitchen items lost in a move. I was really pleased with the assortment:

The three sizes of Pyrex measures are useful--the metric marks are easy to read, too.
The glass bowls are good for mixing and also can go in the microwave. What was pleasing were the litte extras included-- a dough scraper, a set of measuring spoons that snap together and an egg separator that snaps onto the side of a cup. ... Read more

Washing and drying leafy vegetables has never been simpler or more fun than with this gadget. One hand is all you need to press the soft, cushioned knob to start the spinning; when the built-in brake is applied and the job is done, the basket and bowl can be taken apart and used separately. The knob locks down for easy storage, and the spinner is dishwasher-safe. Use this tool with lettuce, raw spinach, broad-leafed herbs, and greens--they end up clean and oh-so-dry, and the drier your leaves, the better salad dressings will adhere and the less mushy your sandwich bread will become. Puddles at the bottom of your salad bowl disappear... Good Grips products are moderately priced and have won the Tylenol/Arthritis Foundation Design Award. --Laurie Notaro ... Read more

2-0 out of 5 stars Just okay...
I'm still looking for the perfect salad spinner. I had this one and broke it after trying to take the lid apart to try to clean under the lid--don't attempt that! I didn't like how this one had a domed lid so you couldn't stack stuff on top of it. I also found that the interior of the basket wasnt smooth but a bumpy basket weave so little bits of lettuce get stuck in it.

2-0 out of 5 stars Worked great until it broke
This was a wonderful salad spinner for the several months it worked. Then it broke. In my kitchen, very few things break. The occasional wooden spatula after fifteen years of use is fine but things tend not to break unless I drop them. This is my second Oxo product that broke while I was using it (the other one was a knife--yes, a knife snapped in two while I was cutting).I still love my Oxo peeler but with two out of three of my Oxo products breaking, I'm done with Oxo for the most part.

1-0 out of 5 stars worked well until it exploded
I bought this item and used it for about 2 months, then It exploded while I was spinning a salad and was impossible to repair. I went on to buy a Tupperware salad spinner (green) and have been using it for four years with no problems at all. ... Read more

3-0 out of 5 stars Budget Kitchen
Every slice of the knife leaves a cut on the surface of this board. If that bothers you, you should get something else that's made of harder stuff. If you need to get something so you can stop using the dinner plates and counter top as a cutting surface, or if you like soft cutting boards (I think they feel better against the edge of the knife) then this might be right for you.Basically, it's under ten dollars and it's probably better than the one they have hanging up above the shelves at your local super market.

1-0 out of 5 stars Disappointed in BOARD!!
This board is constructed of VERY soft material. All of the reasons that I ordered this were lost the first time that I used it.
All of the knife marks are places where germs can accumulate. (Yes, I wash it, but sometimes my husband does.) My main reason for buying this board was because it was listed as "nonporous", if that is the reason you are looking at this board, forget it. ...

4-0 out of 5 stars Nice Cutting Board
This is a very functional cutting board.Used it to replace a wodden cutting board I'd been using for years. My only complaint is that there are no feet on the bottom of the board to keep it from sliding around, but solved the problem by purchasing some from [local store] that you can attach yourself. ... For professional accuracy, nothing beats this digital thermometer for instantly ascertaining the temperature of foods, whether they're frozen, on the buffet line, or being cooked. Its 1/3-inch LCD face, protected by a rugged polycarbonate cover, displays temperatures from minus 58degrees to 302 degrees F, and updates every second. An on/off switch prolongs the life of the 1.5-volt watch battery that powers the thermometer. (Two batteries are included.) The thermometer comes with a pocket case and has a 4-5/8-inch stainless-steel stem tipped with a temperature sensor, so the thermometer reads temperatures near a food's surface or deep inside. --Fred Brack ... 5-0 out of 5 stars love it, love it, love it
I use this product all of the time. Meat, bread, you name it.

3-0 out of 5 stars Adequate, not great
As others have said, this really can't be described as an "instant read" thermometer. Before I bought it, I was thinking that it would take a moment to calculate, then display the temperature right away. What it actually does is slowly climb. It does jump in the beginning, like from 0 to 100, but as it gets closer to the right temp, it definitely slows down. I don't know why that happens, but you can literally watch it tick up from 137.1 to 137.2, and so on and so forth. Usually by that point I just yank it out and say it's close enough, which is hardly instant. :)

That said, I don't think it takes two minutes to read, as another reviewer opined, though as I said it takes longer the higher it climbs, so maybe if you're cooking really hot stuff it might. For most of the normal temps I'd estimate it at about 30 seconds. It just feels longer because you have to stand and stare at it. :) Not a great product, but if you don't mind a little waiting, it's quite cheap, and it will get the job done eventually.

By the way, I agree the on/off switch is quite small, but I don't have a problem with it. If you have nails you might, though. Happy cooking!

5-0 out of 5 stars OXO HAS GREAT PRODUCTS!!!
OXO has a fabulous line of products, no matter where you purchase them. You will fall in love the first time that you use them, literally. I have so many products by OXO, you would think that I work for the company itself. Just the other day I found a Soft Grip Spatula by OXO at Target and I love it already. OXO can be expensive, but it is well worth it. I found there products to be very long lasting as well. I have measuring cups and spoons, mixing bowls with grips, tongs, and the actual set. I am trying to find other products as well. I did not know that Target carried OXO, now I can come to shop at Target. They are worth every penny. I have had my 9-pc. set for over 3-4 years now, it has yet to mess up. Great Buy!!!!

5-0 out of 5 stars Wish I'd Known
When adding items to our wedding registry, I DID NOT ADD THIS SELECTION. Mostly because I already had a couple of spoons and spatulas. But, here it is more than a year after marriage and I am still adding individual pieces to my utensil drawer. I finally got around to buying a peeler last week (and it's an OXO brand peeler). I wish I would've known.
