5-0 out of 5 stars I use it for everything
This is my choice pan when I am cooking on the stove, lots of room in it to avoid making a mess. The Calphalon commercial and professional pots and pans are deffinately not "non-stick" and since they are what make up my collection of my pots and pans they are a bit hard to clean up if you dont take extra care, so that is why I always use this casserole for everything putting it in a place all by itself.I belief you can get this pan in non-stick, but I prefer mine just the way it is, as if it gets really messy I use a brillo pad and doesn't look any worse for wear.As far as cooking I use it for lots of frozen bags of veggies over the stove, reducing, meats, ect.

5-0 out of 5 stars Handsome AND utilitarian
I love the look of this pot! It is a workhorse, big enough to roast a small chicken or loin of pork. I first used it to braise a pork loin with rosemary and sage which was supposed to take two hours, because of the even heat and the high conductivity of the anodized aluminum, the loin was done in about 2/3 the time. Then I browned the roast in the pan with garlic and olive oil till it stuck to the pan. I figured clean up was going to be a nightmare! I de-glazed the pan with a mouthful of red wine then soaked it while we ate the most delicious pork we have ever had, tender and succulent. After dinner, the pan cleaned up with soap and hot water and just a minimum scrub with Bon Ami. All the Calphalon lids seem to be interchangeable. Now that I have a drawer full of lids, I have trouble remembering which is which..this dome shaped lid can be substituted on the other pans with flat lids and vice versa. I'm a firm believer in this product. My wife now says I only cook so I can use these pans... Do you think two people really NEED a 12 qt. stock pot??? I do!
Update:Herself wanted "comfort food" one night.I made a quick chicken pot pie using leftovers and a from the grocery store pie crust, put it in this pan and popped it in the oven.Best we've ever had.Because of the shortening in the pie crust, no sticking at all, rinsed the pan with warm water and put it away.( I know, I know, next time I'll use some soap)

5-0 out of 5 stars The most used piece of cookware I own!
This is the most versatile and useful item in the set. I have two and it is rare that I will cook a meal with out using one or both.
They can be used as a smaller stock-pot, a sauce pan, or a great alternative to a wok. I use mine to make soups, stir-frys, saute's, and just about anything else. The cooking surface is great, easy to clean, and heats evenly.
They are not "non-stick"in the way teflon coated pans are, but its a small concession since you'll never have to worry about the surface "peeling" like teflon. ... Read more

Calphalon Commercial Hard-Anodized Limited Edition 5-Piece Super-Sized Set

Editorial Review

What's in the Box
12-quart stockpot with lid, 5-quart saute with lid, and 12-inch omelet pan

This Calphalon limited edition set is comprised of one 5-quart sauté pan, one12-quart stockpot, and one 12-inch omelet pan—-just the right pans for family cooking. Calphalon's Commercial Hard-Anodized cookware wears a matte finish and is made ofheavy-gauge aluminum to resist hot spots or warping. Though not nonstick like some Calphalon cookware, this super-size set is anodized for stick-resistance as well as hardness. Contoured, cast-stainless-steel handles resist heating and are triple-riveted for durability and balance, and metal utensils won't harm the surface. The 5-quart sauté pan is ample for frying a couple of chickens, braising corned beef, sautéing loads of vegetables, or browning meats. Or fill it with stew and stick it into the oven. At 12-1/2 inches in diameter by 2-1/2 inches high, this is a big pan that will satisfy many needs. Its handle has a hole for hanging on hook or peg, and a loop handle provides two-handed lifting. The 12-quart stockpot, great for soups, stews, and pasta, also stands up to deep frying. The looped handles are easy to grip and stay cooler than you might expect, thanks to V-shaped splits where they meet the pan, but it's still a good idea to keep hot pads nearby. The extremely sturdy all-metal construction provides the flexibility of taking the pan to the oven or broiler. And the 12-inch omelet pan, ultrathick along the bottom and sides to absorb the higher heat levels, protects delicate eggs from drying and burning. The sides of this pan are sloped to facilitate swirling the pan--gently glide an omelet around and out of the pan and onto the plate. The curved, cast-stainless-steel handle is easy to grip and stays cooler than expected (again, thanks to the V-shaped split where it meets the pan). The surface resists sticking and doesn't affect the flavor or color of food, and it is tough enough to handle stainless-steel utensils and vigorous whisking. Remember to hand wash all Calphalon pans. ... Read more

5-0 out of 5 stars Not a chef, but I love solid, reliable cookware
I give this cookware a "Tim-the-Toolman Taylor" grunt because of how soliid it feels. I bought the set for [$$].You can't buy one piece of this mighty cookware for that price. It heats evenly on my gas range and browns food well.Very satisfied.

5-0 out of 5 stars No brainer
I've used the Professional line for a few years now and liked it much better than the stainless or non-anodized aluminum cookware I had before. But the handle design gets hot pretty quickly so I started thinking about the Commercial line.I'd also lusted after the 5 Qt. saute pan for years -- after patiently collecting several pieces on sale at various places, I'd never seen that pan marked down very much in either line.Obviously many people are buying it at retail. When I saw this fantastic 5 piece set, at a price that was just over half the retail on the 5 Qt. saute, it was one of the most obvious no brainers I've seen. After using the Commercial line for a couple of months now, I'm looking for sales on other pieces to gradually replace all my Professional gear! The "cool-V" handles really do work well; it takes quite a while over fairly high heat before they get too hot to handle.Of course the reknowned Calphalon cooking surface is a given, and it's great.

5-0 out of 5 stars Great Price

Editorial Review

When cooking pasta, shellfish, or corn, you need to quickly remove the contents of the pot to prevent overcooking; this insert allows you to do just that. And when cooking stocks, you can remove vegetables and meaty bones by simply lifting the insert by its sturdy handles, avoiding the risks of pouring from a heavy pot into a strainer in the sink. Unlike many inserts, you don't sacrifice any space with this 12-quart stainless-steel piece. It rests gently on the base of the stockpot and then rises above the pot lip another two inches so that you don't lose any height. The lid fits just as neatly on the insert as it does on the pot. Care for this pan with consideration for the long useful life it offers: wash it by hand with mild cleaners. --Sherry Smith ... Read more

2-0 out of 5 stars watch out for the hot spot
I bought this with high expectations but was disappointed because when I use it on my gas stove, it tends to get a hot spot in the center where your soup/stew can BURN.No fun. It's great for the oven though so I now brown everything in a separate pot, then pour everything into this one and throw it in to bake.

5-0 out of 5 stars Excellent Saucier
I have owned my 8.5 qt. pot for over a year.I, however, got it for $50!It is an excellent piece for things like pot roast or reductions. The outsides and bottoms of the hard annodized surfaces get ugly but who cares! It is a tool!

I own ten pieces of Calphaloncookwear. Two skillets are non stick for things like eggs where I do not want browning.Calphalon is darn nice cookwear that is a joy to use, especially if all one has used is cheap cookwear.

All in all, this is a nice, VERY WIDE, pot.

5-0 out of 5 stars I was surprised at the diameter of this pan
I was not expecting this pan to be as large in diameter as it is.Previously owned pots where more vertical in this size instead of wide.I have fixed mostly soups in this pot.I have really liked its performance. My only complaint is that it seems to have a whitish looking spot the center bottom of the pan that doesn't clean up very good.My overall satisfaction with the item is good.I have had no problem with anything sticking in the pan either.I would certainly recommend it.Cooking with a wide pot is quicker than the taller ones. ... Editorial Review

If you've ever suffered a steam burn draining your spaghetti through a colander, you'll appreciate this three-piece pasta set. A 6-quart insert sits inside the saucepan, so when your pasta is appropriately al dente, just lift the insert for instant drainage. The 6-1/2-quart saucepan has a pure aluminum core for fast heat conductivity so the water will boil faster. Because aluminum can dent, warp, or discolor easily, a hard-anodized coating protects the saucepan and increases its durability. The lid is also hard anodized, which means the oxide film of aluminum has been thickened to protect the pan. The insert is stainless steel, so it won't react to food and will retain its shape through a lifetime of use. The set includes a collector's edition recipe card to get you started on your pasta-cooking adventures. While most metal utensils are safe with anodized surfaces, avoid sharp tools, such as knives. For optimum longevity, this set should be hand washed. --Laura Cuthbert ... Read more

5-0 out of 5 stars Perfect for corn or pasta
I love this for boiling corn or pasta. It doesn't have the nonstick surface like the 2 1/2 quart saucepan, but I bought this for easy draining and it gets the job done well.

4-0 out of 5 stars Heavily used in our household !
I bought this set over a year ago.Although it is on the smaller side, I have to say it is probably the second most used pot in our household (the first being the 2 1/2 qt shallow commercial anodized sauce pan!).It works well for meals for my family of four.I routinely boil 1 pound of pasta or approx. 5 lbs of cubed potatoes for mashed potatoes.I have made soup, chili and spaghetti sauce in the pot as well. It's the right size for enough of these dishes for my family, plus some leftovers to freeze for another full meal.I don't find it as "narrow" or difficult to use as my 8 qt stock pot - the height seems perfect for the width of this pot.

3-0 out of 5 stars Nice, but small
This is a nice pot and fits the burners on my stove without hanging over.

There are two disadvantages:

1.The 6 1/2 qt. size is barely sufficient for 16 oz of macaroni. An 8 qt. pot with insert would've been better.I know Calphalon has an 8 qt. stock pot and an 8 qt. insert, but they don't appear to offer these packaged together, making a set prohibitively expensive.

2.Contrary to what Top 100 Reviewer Michela says above, the stainless steel insert does get hot, and you can burn your hands on the insert handles if you're not using towels or mitts.

Water, aluminum, and stainless steel are fairly good conductors of heat, so all of the elements of this set get hot (which is what you want) EXCEPT for the silverstone handles on the stock pot.

I have mixed feelings about using an insert. You usually have to dispose of the macaroni cooking water anyway, so dumping the entire contents of the pot into a colander makes sense, rendering unnecessary the insert.

Also, if you sauce your macaroni in the pot in the traditional Italian fashion, you're not going to want the water in there, again eliminating the need for an insert.

Alton Brown makes a good point in his new book about getting the biggest pot for making macaroni that you can fit in a cabinet. He suggests going with a cheap aluminum job from a restaurant supply store, because you want it to be as light as possible when filled with water and macaroni.

As other reviewers have noted, 6.5 quarts is sufficient for 16 oz of macaroni or less.If you routinely need to cook more than a pound, you're going to need a much bigger pot.

I have a monster 16 qt. Farberware stainless steel stock pot for times like this.It may not be quite as light as Alton Brown's suggested non-anodized aluminum restaurant supply store model, but it will hold up better over the long term and probably didn't cost too much more. ... Read more

This straight-sided 2-1/2-quart pan can be used for sauces and, covered with its flat lid, for stews and casseroles. Shallow (3 inches) in relation to its capacity and diameter (8-3/8 inches), this pan, unlike conventionally proportioned saucepans, exposes lots of surface and is therefore ideal for reducing sauces or even stocks and broths. Though it's not nonstick, like some Calphalon cookware, the matte-finish pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. 4-0 out of 5 stars Nice saucepan, good price
I have used this pan for around 3 months, so far I satisfy with my purchase through Amazon. it do have a distinguish difference between other cheap saucepan, but sometimes I found that it's rather sticky.

5-0 out of 5 stars This is THE one!!
I love it! The only thing Ive had a problem with (and I even had this happen with my wolfgang puck cookware) is heating oil to fry the kids some french fries. If you dont let it heat just like the directions say then the frozen food will stick pretty bad! But thats minor and with how fast these little babies heat its not even a problem. Im giving away the puckware. Ive got the whole calphalon H.A. line. I love it!! Calphalon cookware does it all.... What everyone says about not being dishwasher safe... Even if it was I wouldnt put mine in the dishwasher.. I wont even use metal on them. To me they are worth the extra care they require.

4-0 out of 5 stars Fast cooking
The wide, shallow form factor means a high ratio of surface area to volume exposed to heat. These aluminum pans also take high heat well, quickly spreading the heat uniformly around the pan, reducing any "hot spots" that may form. This all translates to a pan that can cook well with high heat, getting you to a boil faster and shortening the time it takes to reduce sauces. Foods don't stick very much, though it takes some scrubbing to remove the light brown film that forms over time from the higher temp cooking. ... Read more

5-0 out of 5 stars Chicken pot
Even if you cook nothing else in this pot, buy it just for making chicken. I've switched to a very healthy diet solely because making chicken in this pot is so wonderful. Follow the directions - let the chicken sit at room temp a bit, allow it to cook and 'release' from the cooking surface before turning it - and the absolute best part is having some chicken boullion on hand to make a quick sauce afterwards.

I read the reviews here. My first response is that I would never dream of cooking eggs in this.Get the omelet pan or the international crepe pan offered on this site for that.I have also used it to make a beef roast, searing it on stovetop then putting the whole shebang in the oven. I've even made filet mignon in this pan, when the weather turned bad on a cookout.

Simply put, this pan will improve your quality of life. Cleaning isn't an issue.I soak it in hot water afterwards, scrub it, and good to go.About every third time I use it I break out the Bon Ami and scrub pad.As others have commented in reviews, this pan doesn't even get put away.It sits atop the stove in defiance of the heat-and-eat lifestyle I used to have, and every time I look at it I'm reminded of the aroma of garlic being sauteed in olive oil.I <3 this pot!!!

4-0 out of 5 stars Nice product
I just received my new roasting pan and can't wait to use it.The only thing that I have had the opportunity to notice is that the pan is thin and I was under the impression that it would be thick. There is not non stick teflon on this pan so I'm not sure how well the pan will clean up.The handles are very functional!

5-0 out of 5 stars Best price - best roaster anywhere!
This is the best roasting pan I have ever worked with!Beef, poultry, lamb, you name it.It is great for making lasagna (note: it takes two boxes and will feed about 20.) The forks make lifting any turkey a breeze. If you are really into seasoning meat, then get this set for the injector alone.I've even used this pan to make a large sheet cake.I've never had any problems cleaning it. My husband bought this pan and I thought he was crazy for spending so much on a pan.It was worth every penny! He loves to cook roasts which means I am usually the one cleaning up.None of the burned grizzle sticks to this pan.It just slides right off!The lifters are great too.The baster also has a pointy end and works as an injector too.Great pan!I highly recommend it! ... 2-0 out of 5 stars Just Okay Pans
These pans are certainly not living up to the Calphalon name, everything sticks to them, and they are very difficult to get clean. Granted, they are not very expensive, but I would have paid more gladly to have better non-stick.

Some reviewers say you need to hand wash them, but the item description clearly states "Dishwasher-safe; 10-year warranty" Overall I would not buy them again.

3-0 out of 5 stars Cook well, but how long will they last?
I decided to purchase this set of pans about six months ago despite the negative feedback which so many people have written. The instructions which come with the pans claim that the pans are dishwasher safe, but I preferred to hand wash them. The instructions are also very explicit that the pans should be hand dried with a cloth shortly after being washed.I assume that this is due to the rust issue.

I agree with those who say that these pans look, feel and cook well.I have had good results the few times that I have used them. However, I have used the cookie sheet about eight times now and despite carefully hand washing and drying the pan, I am seeing signs of rust and of the Teflon coating peeling off of the pan.The rust is forming on the underside of the pan where the material has been rolled, so it does not affect the baking surface. The more alarming loss of the Teflon coating is also occurring on the underside of the pan.Furthermore, I once burned the bottom of a loaf of bread in the pan and it left a black mark on the pan that I can not get off.I am careful with these pans and so it is not from abuse that this is occurring.I would expect this to occur with a low quality pan, but these pans I would expect more of over time.

In summary, I think that these are a good value as a set. However, don't plan on buying these pans and having them last a long time for I don't think that they will. The poor craftsmanship by Calphalon means that these will serve you well for a while, but the same can be said for inexpensive pans that you purchase with the expectation that they will fail in a few months.Based on the results of this set, I would never buy any other Calphalon products.Less expensive pans may not look as pretty, but they may serve you better than these.

3-0 out of 5 stars Twistables?
I have only used the "cookie sheet" which is really a roasting pan, as it says on the box. These products do seem sturdy and non-stick.However, when I placed a frozen pizza on the "cookie sheet", I heard a pop in my oven.I looked inside and the roasting pan was warped. It was no more than 425 degrees in there maybe less, I don't recall. Then after I turned off the oven, I heard another pop, and the pan warped back into its original shape. The pizza came out fine, but I have never used it since!I'm afraid it's going to explode inside my oven.I just don't feel safe.Oh yeah, I've tried the muffin tin.It was ok.I don't think that one warped. If the cookie sheet keeps popping, I'm going to return it to get a replacement.Comes with 10 year warranty. ... 2-0 out of 5 stars NOT NONSTICK!!!
These cookie sheets look great, until you use them. They are not non-stick unless you grease them GENEROUSLY.Then the grease bakes on and you cannot get it off. This happened after only using a few times and washing them immediately after use. They are also hard to clean because they are too big to immerse in a kitchen sink and not recommended for the dishwasher (they wouldn't fit in one anyway!).I agree that it is hard to make a good cookie with these. The bottoms are always over done. And it is hard to get the cookies off the sheet without damaging them.

1-0 out of 5 stars Boo! These Stink!
These sheets are quite impressive visually-they appear to be of high quality and sturdy. That's about it, though. They're great to look at, not use. I find that I have to lightly grease the sheets to ensure that cookies don't stick, even when the recipe doesn't call for it and these are supposed to be nonstick, after all. And when I do that, the spaces between the cookies get the grease baked on. I don't usually go by one or two bad reviews on a product, especially one that has alot of reviews, but I should have this time.

2-0 out of 5 stars Calphalon Convenience but Poor Baking Results
After several weeks of use, I've also found that these sheets tend to burn dough on the bottom long before you see any hint of any browning around the edges. This has caused us problems on several established recipes and the sheets don't seem to allow for any workaround, i.e. lower oven temperature and/or shorter bake time.

Like all Calphalon, they clean up very easily but what's the point if you can't trust them with your food in the first place?

PROS
*Extremely reliable nonstick surfaces and durable construction as you'd expect from Calphalong

CONS
*Uneven baking results will leave you with lots of "surprise" burnt items. ... Read more

2-0 out of 5 stars Hard to use
This is supposed to be a universal double boiler, but it's hard to use because it fits no pan well -- making it hard to stir, and giving you a limited "surface area" for use. Also, due to it's curved bottom, it won't stand up on its own if you remove it from the "boiling" pan (to set beside you as you mold candy, etc.)

4-0 out of 5 stars more than double the benefit
For years, I used make-shift pots and pans to double-boil thinking that it isn't worth investing in yet another item that isn't used often but takes up precious kitchen space. My method was clumsy and the process was more like steaming that double-boiling.Since I had different quantities to cook, it was tough to find a double boiler that would fit my different needs and I didn't want to buy several double-boilers.

Then I came across this nice little item and thought that for this price, I couldn't go wrong.Well, I was right for once.

This insert is so practical and beyond versatile!
It holds a variety of things in varying volumes while sitting sturdily in a host of pots. The dome shape allows you to whip up even a small amount of sauce without the ingredients being "lost" as a thin layer on the bottom of a big pot.It cuts down the double-boiling process by more than two-fold.The nice little measurement guidelines help ensure that you are using the right quantity. It is non-stick and cleans without having to scrub.Plus, it hardly takes up any space since it nests nicely in existing pots for storage.

I no longer take a long time and make a mess out of double-boiling.Hollandaise sauces, souffles and fondues are now a cinch to make.I like this so much that I'm picking another one up for a friend.Do your recipes a favor and get this too. You'll earn praises for your culinary speed. ... Read more

5-0 out of 5 stars The One to Own
Hands down, the best skillet I've ever used and owned. I used to fire up the grill all the time, but the Lodge 12" cast iron skillet has made me WANT TO cook my steaks on my stovetop these days. It's heavy, but heat conduction is superb. Just be super careful not to touch cast-iron handles when the skillet's hot, you may "brand" yourself... ouch! You can "season" the cast iron skillet yourself, but I bought the pre-seasoned one to save me the initial trouble. Follow care instructions and you'll have a skillet for life. The more you use it, the better it gets. Those modern non-stick pans (Teflon or what-not) can't touch it. There's nothing to dislike with this fantastic, down-to-earth, USA-made skillet that will grace your family's kitchens for generations to come. Highly recommended!

5-0 out of 5 stars Great price, terrific results
I reiterate the praises that other reviewers have given to this skillet. It is so well-priced for what you get--a highly reliable performer that is indestructible and that will outlast all of us. This skillet goes from the stovetop into the oven or broiler--or into a crackling fire--with no problem. The more I learn about and experiment with cooking, the more I appreciate that versatility. (Just be sure to invest in a silicon or other good quality, high-heat oven mitt or pad to protect your hands when using it in an oven or campfire.)

As much as I love All-Clad products, I've switched primarily to cooking with cast iron, and when I think about all of those Teflon-coated pans I've gone through in the last 30 years that must be filling up landfills somewhere, I wish I had never even heard of Teflon. If you can manage the weight of the cast iron, which most people should be able to do, there is nothing better and longer lasting.

Whether you get the preseasoned version of this skillet or not, the ritual of seasoning the iron with vegetable oil and coarse (kosher) salt is one that I always enjoy, and it requires very little time.

5-0 out of 5 stars Best Kitchen Pan I own!
I was always skeptical about Cast Iron pans, because they just sounded like so much work to keep up with - seasoning, don't do this, do that -- For years I just stuck to my regular pans thinking I wasn't missing anything. Boy was I wrong!

The pre-seasoning part was also a big skeptical point with me, but true to words, it is. I love this pan. It's heavy, but thanks to the helper handle I never feel like I'll drop it. Cleanup is so much easier than I thought, and it really keeps it's tempature, even on a flat electric stove.

I have yet to make something in this pan that didn't come out great. From pan searing steak to frying chicken, I've had nothing but a consistantly good experience. ... Read more

5-0 out of 5 stars Love it!
I bought this inexpensive pot along with a piece of calphalon.I must say, I like the cast iron better! What a great pot, the size is perfect for those quick prepackaged items us working moms make like rice-a-roni, hamburger helper and scalloped potatoes.Yes its heavy, but it's easy to clean and I just leave it sitting my stove. It takes a little to get used to the proper cooking temperatures, so be careful. Also, I would advise getting the tiny handle cover, because the handle does get very hot.I make my daughter home-made chicken tenders at least once a week, and they came out the best ever using this pot.Prior to this I had been using calphalon and it doesn't make the chicken near as crisp and perfect.Love it!

4-0 out of 5 stars Real measurements of the pan
Well, no complaints exactly -- it's what I ordered and wanted -- but be aware of the exact dimensions of the pan. Though measured across the top the diameter of the pan is accurately 10 1/4 in., the sides slope in making the cooking surface a measly 8 in. -- kinda small of you're thinking of frying in larger batches.

I was also hoping to double this deep fryer as a frying pan (I saw the higher sides as a bonus, lessening grease splatter), but again the small 8 in. cooking surface limits what I can make ie. too small for bacon. Apparently, Lodge makes a larger fryer -- a 5qt 12" sucker -- that might be a better choice for a family, but alas, not available (currently) on Amazon.

Otherwise, a great pan, substantial and well made. The lid is a great bonus to have.

5-0 out of 5 stars Bargain of bargains
This big hunk of iron is one of the greatest things in my kitchen. It's great for frying chicken (as you might expect). But it's also wonderful for frying anything else you can imagine (it never lets me down with catfish), making pralines, cooking cornbread, making a mess of jambalaya, any sort of soup that strikes your fancy, or, well, you get the point.

Care is easy, easy, easy--especially if you re-season the skillet on a yearly basis.

You'll keep this pan for at least a decade--which means that you'll pro-rate the cost down to well under a penny a day.Can you beat that? No, really, if you can, I want to know about it. ... Read more

5-0 out of 5 stars Lodge skillet with Ridges is Just the Best
For almost two decades, I have used an untreated Lodge grill pan with ridges to grill just about every type of meat one can image.I also use this pan in the oven to slow cook pork tenderloins and once finished to make a wine-based gravy with the leavings.

Of all the cookware I own, which includes something from just about every maker, this particular pan is the best and most indispensable.I recently bought a pre-treated version of the pan. It's even better for it does not require any effort to season it.I use both pans to grill steaks for friends year-round.Best of all, the price is extraordinarly low for what I got.And I like that.

5-0 out of 5 stars not so hard to clean!!!
I have owned a few cast iron pans by Lodge and I love them all. But living in the city, i miss grilling so I thought I'd try out a grill pan. After reading some positive reviews I bought this one and so far have been very happy with it. Preheat it for 5-10 minutes at high in order to get it red hot, then start grilling away. Do remember to keep the windows and vents open because this thing will create a lot of smoke but it's worth it. I've grilled turkey burgers, steaks and chicken breasts with it and have been very happy with the results (better than using my flat cast iron Lodge pans, by the way).

For those that say it is difficult to clean, my experience has been otherwise. First, wait til it cools off and then use a butterknife to scrape the gunk off from the spines, which takes no more than 30 seconds. Then scrub it with hot water only (NO SOAP!!) with a metal wire brush and rinse it off. dab it dry and if you want, put it over a hot stove for a few minutes to really dry it out, then spray it with some aerosolized vegetable oil and put it away. *very* easy to clean using the method.

One last thing...for $15 or so, it's a steal. Just buy it!!

5-0 out of 5 stars Another great pan
I'm already a big fan of Lodge's cast iron skillet, so it came as little suprise how much use I'd get out the grill pan. This is a heavy duty and super reliable piece of cookware. It goes straight from the stovetop into the oven whenever I make steak or lampchops. I also use it for getting a nice sear marks on grilled vegetables. ... Read more

4-0 out of 5 stars Old-fashioned practicality
I like the heft of cast iron, and the cooking results, too.I have well-seasoned skillets handed down from my grandmother. But every once in a while you come across something so darned "obvious" that you just have to smile. This is one of them. You can use it on the grill or in a skillet.Flat bacon is only one of MANY uses. The handle is also old-fashioned.It dissipates heat pretty fast, so unless you're using it in an oven or on a closed grill, I haven't found any problem.

4-0 out of 5 stars works fine but the handle gets hot
This works great to flatten bacon.I chose this instead of the larger circular one and it fits better in more of my pans. The only question I have is why they didn't spend an extra 50 cents and put a wooden handle instead of a metal one which gets so hot one has to use an oven mitt just to pick up the press.

4-0 out of 5 stars Excellent bacon press
Nice addition to your kitchen if you are cooking bacon, which tend to curl up. The bottom is smooth, with no places for food to catch and hide.

Cavet, the first one I had, the spring on the handle broke. (the wire spring is welded to the wire handle, it must have been overheated as the wire spring broke loose from the handle. Not incapacitating it, as the spring just rolls in you hand, but annoying.) I wrote Lodge Mfg, and they sent a replacement which has worked fine ever since. Hence 4 stars instead of 5.

Requires some assembly, a screwdriver and a small wrench. Easy for any handyperson to do. ... Read more

4-0 out of 5 stars Buy yourself the seasoned one if you never owned cast iron.
Having bought the no name preseasoned cast iron pans vs this need to be seasoned cast iron pan, as the tittle says:Pay the 3-4 dollar difference and get it preseasoned instead.I'm using the preseasoned more because it is just ready.

Keep in mind its large and heavy.Careful in your sink.Coming from stainless steel and converted over to Calphalon ( mostly bought all pieces from Amazon.com ), if you are use to quick clean up and lighter cookware this is harder to convert over for me.

Heat kills everything. If you can accept the fact you are not literally washing everything off if you follow the hot water / salt / scrubbing..and rubbing a paper towel on the pan comes off dark, then you can get some amazing steady heat to sear with. But we all pay for convience and these pans I use mostly to sear meat. With a perference to wash and dry quick in our hurried lives, get the preseasoned.

4-0 out of 5 stars Larger than expected
I purchased this item based on other reviews and I am not sorry I made the purchase for several reasons.I love Lodge Cast Iron, Amazon has the best prices anywhere and free shipping. However, I was taken aback by the size of this skillet. It is huge!I tried it on my gas range and it takes up the front and the back burners but adjustments are needed to keep the sides from burning.

If it is used on just the front burner (the larger burner) the flame is directed to the middle of the pan but there is so much skillet left over that the outer edges never get really hot. I would think the 13inch skillet (which I just purchased also) would make a more reasonable purchasebecuase it is between a 12 which might be too small and the 15 1/4 which is toooooo big!

5-0 out of 5 stars Man is this thing BIG!
I ordered this skillet because my 12-inch only makes 2 burgers or pork chops at a time.No problem like that here! This skillet arrived less than one week after I ordered it (with free shipping). It made some really tasty fajitas the next day, after an easy 1 hour process of seasoning it.

The best way to clean it is right on the stove. Pour in a bit of water while the skillet is hot.Use tongs with paper towels or a dish towel to remove any stuck on bits from the bottom. If there are any left, pour in a little more water and repeat.

Then dry the pan and pour a little veg oil (I use shortening) in and rub into the entire skillet with a paper towel.Wipe off any excess. Once the pan is well-seasoned from many times cooking in it, I don't even oil the pan every time, just when it looks like it needs it. I always follow the number 1 commandment of cast iron though - don't leave any water hanging around inside, keep it DRY! ... Read more

Made byLodge, one of the oldest and most trusted names in cast-iron cookware, this12-inch square griddle is the ideal size for frying up a whole pound of bacon atonce--or griddling eggs, sausage, square-sided pancakes, even sautéingthe kinds of things you don't eat for breakfast. There's an extra handle on oneside to help you lift the griddle and its contents--pretty handy when dealingwith a pan as heavy as this one. Be sure not to use dishwashing liquid onseasoned cast iron, and towel dry and coat with a light layer of oil afterwashing. Never leave cast iron sitting in water, because it will rust. If youtreat cast-iron cookware properly, your own grandchildren will still be using itwhen that fancy aluminum-alloy pan is long gone to the great yuppie kitchen inthe sky. --Mary Park ... Read more

4-0 out of 5 stars Almost Perfect!
This griddle seasoned up without any trouble at all, and consistently produces excellent eggs and pancakes. The griddle heats evenly, but because of its size needs a large burner to operate effectively. That's the only caveat, and I don't consider it a problem. It's just that, if you're going to cover it literally corner-to-corner, you need a large burner (or just do your bacon in the oven).

I love cast iron and have pans handed down to me from my grandmother. But this square pan tops them.No sides easy access. It cooks a steak great.I have given up my George.

4-0 out of 5 stars Wonderful griddle.
I own several cast iron utensils but I probably use this one the most.It has a semi permanent place on my stove where it
is used most frequently for bacon, sausage or browning meats
especially chicken for casseroles. I also use it outside for blackened fish for which it is superb. It needs a little more
seasoning because it still sticks at times. My mother has one that is 50 years old that is the most perfect of pans.Nothing cooks like cast iron. ... Read more

Editorial Review

Now, authentic fajitas are available at home, thanks to this shallow, cast iron fajita pan. Resting on a red-stained wooden base, the pan set also comes with a special potholder (decorated with red chili peppers) that fits over the pan handle. While broiling steak, chicken, or tofu, put the fajita pan into the oven and heat for 30 minutes. When the food is cooked, and the onions and peppers are sautéed, pile them all on the heated pan and carry them sizzling to the table. Serve with a basket of warmed flour tortillas. --Dana Van Nest ... Read more

4-0 out of 5 stars Great for pancakes, too!
My brother gave us this for Christmas. At first, I was pretty disappointed if only because a pair would make more sense for a family of four. This pan is not very large and at this price, why not splurge? However, this is a fantastic pan for pancakes. It heats quickly, it makes one fast, fluffy, huge pancake at a time, it's a breeze to clean, and it's sort of funny! Also the potholder is useful when I use my "real" pans.

5-0 out of 5 stars FAJITA SKILLET DOES JOB
I've used this twice now and have been impressed....it's just like the restaurants.
I always make sure the vegetables are not fully cooked because they will cook in the fajita skillet, since it gets so hot.

5-0 out of 5 stars So versatile!
I love cooking with cast iron. These fajita sets are so versatile. We do our steaks on them.Heat the skillets on the grill first, get them RED-HOT!.... then drop your steaks on them.Turn once. And serve them to guests SIZZLIN'... Your guests will be impressed... and of course they're good for fajitas, too.Ever tried drop biscuits on them?Drop some butter, preheat the skillets, then drop the biscuitdough on.
The secret to castiron cooking is to PRE-HEAT IT!!!and when you're through, wash up, turn upside down in heated oven to dry.Protects your seasoning of skillets.

5-0 out of 5 stars If I had to choose...
If I were stranded on a desert island with only one cooking utensil allowed, it would be a very hard choice between my Wusthof chefs' knife and the Lodge Dutch oven. I cannot begin to describe the versatility of this pot without sounding like an ad. Suffice it to say that it never leaves my stove top, except when I put it in the oven. Browning, braising, stewing...whatever, this is my weapon of choice more often than not (and I have a decent selection of pots and pans). Add to that the fact that abusing it on campfires only makes it better and what is left to say? As far as I'm concerned, a cast iron Dutch oven is the most utterly useful kitchen pot ever devised, and my kids aren't getting mine until I'm totally non compos mentis.

5-0 out of 5 stars Your Lodge will outlive you!
Cast Iron is ALWAYS a good value for the money and it's indestructable (I'm still using my mother's Lodge skillet that she got for a wedding gift in 1954). This dutch oven goes from the table to the campground with ease. It stews and bakes beautifully - get a dutch oven cookbook and learn how to make campfire biscuits as well as those stews and chilis at home! Cast Iron still manages to look dressy on a table and you can tote it from your stove to the church potluck! Also makes a fabulous wedding, shower, or housewarming gift. Forget expensive wedding registries - buy the bride this Lodge Dutch Oven andLodge Cast Iron Skillet. She'll hand them down to the next generation. Also great for those kids who just moved into their first apartment - they'll never destroy THIS piece of cookware no matter what they burn! A must have for EVERY cook.

5-0 out of 5 stars yumm....beats any crockpot!!!
Just cooked my first of hopefully hundreds..thousand of dishes in this beauty.. I made lamb chop stew. I cooked it for 2 hours but it tasted like all day simmering stew. When my husband first saw the pot he sarcastically made some remark about medieval times..but when he saw and tasted the stew..he apologized!!
I usually make very tasty dishes but something about cast iron...
I am buying nothing but iron from now on..I'm hooked.
This pot is roomy and has high dimensions. It does come preseasoned and is pitch black, not shiny though..the way a well seasoned iron should look, but that comes with time. I re-seasoned mine just for the shine. For those of you who don't cook in cast iron you do not know what you are missing!!!
Forgot to metion what a wonderful deep fryer this oven makes!! Talk about crispy/juicy fried chicken..Perfect, just make sure you give it ample time to heat up and your'e good to go! no more POPEYES!!! ... Read more
