Editorial Review

KitchenAid's Artisan stand mixer is a substantial piece of equipment: 325 watts of mixing power make child's play of creaming butter, kneading dough, and whipping cream. The kid in you will appreciate how quick and easy it is to mix up a batch of cookie dough. This model comes with three attachments: a flat beater for making batter, meat loaf, and all textures in-between; a wire whip for egg whites, mayonnaise, and more air-infused creations; and a hook for mixing and kneading yeast doughs. All three are solidly constructed and easily secured to the beater shaft with a simple twist. This model also includes a pouring shield for guiding ingredients to their proper destination, and the bowl itself locks tight to the base. Standing about 15 inches high, jutting out a foot, and weighing more than a grown woman's bowling ball, this stand mixer isn't the sort of appliance you'll wipe down and put away. Better to find a square foot of free counter space for easy access; besides, this machine is as pretty as it is rugged--you'll want to show it off. --Betsy Danheim

From the Manufacturer

The Artisan mixer's strong 325-watt motor delivers the power to handle the heaviest mixtures, and mix large batches easily.

The 5-quart polished stainless steel bowl with ergonomic handle is big enough to handle large batches of heavy mixtures. Its ergonomically designed handle is contoured to fit the hand and makes lifting the bowl more comfortable.

Unique Mixing Action

The beater spins clockwise as the shaft spins counter clockwise; moving the beater to 67 different points around the bowl. This unique mixing action creates a thorough blend of ingredients and eliminates the need to rotate the bowl.

Multiple Speeds

10 speeds allow the user to select the right speed for the mixing job; from very high to very slow stir. It's easy to select the precise speed needed for a perfect mix.

Versatile Accessories

The flat beater, dough hook, and the professional wire whip add to the versatility of the mixer. The flat beater is the ideal accessory for mixing normal to heavy batters. From cake mixes to firm cookie dough, the flat beater mixes quickly and thoroughly.

The dough hook mixes and kneads yeast dough, saving both time and the effort of hand-kneading. The wire whip incorporates the maximum amount of air in whipped mixtures for fluffier whipped cream and angel food cakes.

All attachments are solidly constructed, and attach easily to the stand mixer.

Easy Clean Up

The pouring shield fits around the top of the bowl and prevents ingredient splash-out. The chute makes it convenient and easy to add ingredients.

The tilt-back mixer head allows for easy access to bowl and beaters. A lock lever holds the mixer head securely in place and the bowl fastens tightly to the base.

Optional Attachments

Optional attachments (sold separately) complete the package to make cooking a pleasure. From citrus juicer to sausage stuffer, KitchenAid stand mixers can handle just about any job in the kitchen.

4-0 out of 5 stars Great essential for the baker in your life....you!
I love the mixer's power, capacity and ease of use. It makes even garlic mashed potatoes heavenly. I selected a black model to match my Viking kitchens without realizing the color would need more frequent cleaning. If you use this mixer every day buy a cover or another color to save time.

5-0 out of 5 stars Fantastic!
I got this mixer about a month ago. I've wanted one for years, but always talked myself out of it (too expensive, too big, etc.) After finding a great deal here on Amazon, I finally caved in and let me say, I'm glad I did. I love this mixer! I was worried I wouldn't use it very much, since I already have a very nice bread machine (a "Zo"). I find that I'm using it all the time though. It really is like having an extra pair of hands in the kitchen. Cookie dough is so much easier. I'm also making bread with it constantly. It's just so simple to throw the ingredients in the mixer and let it do all the kneading. I've been making fresh bread and bagels every week and it's been no hassle. It handles the dough very well and stays put. It's a big heavy machine. The only problem I was having with it was I was finding it very difficult to remove the bowl to clean it after I was done mixing something. My husband suggested rubbing some vaseline on the bottom edge and that has solved the problem completely. Now I can pop the bowl off with one hand. Anyway, if you've been wanting one of these and if you like to bake at all, do youself a favor and get one. You will be amazed at how much easier it will make your life. I only wish I'd gotten one years ago!

5-0 out of 5 stars Ivan must like Belgian Waffles too...
Well....my wife of 14 years finally found out about my girlfriend of 13 years and my 7 children with said girlfriend.
She didn't take the news very well, cried, yelled at me, smacked me, then packed up all of her stuff.
She informed me that she had found out about the affair and now had met someone else herself, a Russian Dancer named Ivan Karkov. He came over, punched me in the face, and then helped her move all of her things into a van. And off they went.

As sad as I was to see my wife leave, I was even more sad to see our KitchenAid Mixer leaving. It was the secret to perfect Belgian Waffles that my wife would make for me when I actually spent the night there and wasn't "Busy working at Uncle Joey's Mashed Potato Bar".

I didn't know where I would get a mixer like this, I only shop at Old Navy, Home Depot, and Sam Goody. None of those places had them . (I looked.)
I didn't think I would ever be able to replace my Mixer as easy as I replaced my wife one year into our marriage! So, I asked my girlfriend and mother of my 7 children if she knew where to get a Kitchenaid Mixer. She said she buys all her kitchen needs on Amazon. OF COURSE! I didn't even think of it, maybe it's because all I can think of is some sweaty russian dancer touching my first love.....but, I did go buy one.
I finally got a new one and my Belgian Waffle breakfasts are back! Hooray!

Guess I didn't need my wife after all.... ... Read more

3-0 out of 5 stars I also have the light batter lifted up the blade problem.
I got this food processor because I want to make fresh pasta. My KitchenAid 275w mixer broke when I first time make pasta. I did research online and found use food processor it the way to go. But when I use the Cuisinart DL-2011 Prep 11 food processor I had problem with the blade keep lifted up. It damamge one of my bowl. But as the machine it is powerful enough. Their engineer need to think of away to improve this problem. I still have my food processor. But I don't use for dough knead now day. Just use chop food. I bough a new KitchenAid mixer with 375w power for dough knead (still not strong enough since pasta dough are dryer then the bread dough. I got it because costco carry it with lower price. I mix a little bit then use my hand to knead it. I wish there is a better choice for the pasta dough knead.) So if you want to buy this food processor thinking that you want to knead dough I will subjust you don't buy it and if you want this just for food chopping this is too expensive and over powered.

2-0 out of 5 stars long term use limited
This product was great in the beginning. However, over 2 years it has fallen apart. The plastic parts have come apart. I am forced to reassemble each time and hold it "just so' for it to work. Replacing the plastic lid...well over $100. Also, the button covers have eroded.I'm trying Kitchen Aid next time. P.S. All pieces were hand washed; never in a dishwasher.

4-0 out of 5 stars Indispensible kitchen appliance
I have used cuisinart food processors for 30 years. The service and reliablilty was far better with the original 7 cup capcacity cuisinart.Mine worked great for over 15 years. When I sent it back for repair, they replaced it with a new one.I now own 3, this 11 cup model, the 14 cup, and a mini prep.I rarely if ever use my mixmaster.I use it for everything from coleslaw to cheesecake(in the 14 cup model) With the exception of whipped cream merange(sp?), and souffles, this machine can do anything. It makes quick work of everything from slicing several onions for onion soup to chopping meat for fillings. I use the french fry disk for jullienes(sp?), because the julliene disk cuts the veggies too thin.I make pie crusts and pastry dough very succesfully with the knife.Pureed vegetable soups are smooth and delicious.I prepare recipes that would be impossible without this processor.I wouldn't be without it. The only reason I gave this 4 stars instead of 5 is because the service from the new owner of the company doesn't compare to the service from the original company. ... Read more

Briel ED271APG Multi-Pro Stainless Pump Espresso With10C Drip Coffeemaker

Editorial Review

This professional coffee and espresso machine is the workhorse type found in small cafés throughout the United States and Europe. Briel is Europe's largest manufacturer of pump-driven espresso machines. This Multi-Pro Series model delivers both thick espresso and American-style java from fresh-ground coffee or ESE coffee pods--small portions of ground coffee pressed between two pieces of food-compatible paper. Coffee pods are packed with the right weight, roast, and grind, so even the inexperienced barista can consistently make great coffee.

A self-priming pump, fed by filtered suction and water return tubes, serves both the espresso and the drip-coffeemakers. The removable 2-1/2-liter water tank has a water level indicator viewable from the front of the machine. Other features include a cup warmer, removable drip tray and grid, and coffee tamper. And an adjustable electric timing control lets you select serving size in advance. One of two filter holders brews two cups of espresso at a time. And then there's the Turbo Jet frother, equipped with a steam control knob and removable cappuccino nozzle. The frother works beautifully.

The only downside is that the brew head fits so tightly into the filter holder that it limits the amount of coffee that can be loaded into it, which complicates the brewing process when using fresh-ground coffee. A somewhat confusing instruction manual makes trial and error essential to learning how to operate this machine. --Matthew Evans

4-0 out of 5 stars Love the machine but just try to get a replacement carafe !
Unfortunately, within 3 months of getting the Briel ED271, the carafe cracked. That was 9 months ago.I have been trying to locate a replacement coffee pot since.Everyplace I ordered the carafe, after 2-3 weeks,I received a notice that the item has
been discontinued. You cannot buy a replacement, including Amazon, to my knowledge. Not funny since the whole machine was $450

Editorial Review

High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than high-carbon stainless-steel knives. Edges are ground razor-sharp at a more acute angle than traditional European-style knives. Although Global also makes a "heavyweight" line, its original knives--of which the three knives in this set are examples--have thinner blades and are lighter than traditional knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation.

These three knives--an 8-inch chef's knife, a 5-1/2-inch cook's knife, and a 4-inch paring knife--equip a cook to perform most basic kitchen tasks. The two smaller knives' wedge-shaped handles are particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack ... Read more

5-0 out of 5 stars Beautiful, functional, and long-wearing
I got my first two global knives as a wedding present more than a dozen years ago and today they're still just like new.Originally I was turned on by their looks, particularly their handles which seemed to fit my, small, hand much better than any others I'd tried and I've always collected good knives.Since then I've expanded my globals to over twenty, including a few steak knife sets, and I even take some with me when traveling abroad for more than a week or two.Easily hand washed and maintained:I have them professionally sharpened annually, they remain like new.I've never been tempted to replace them with anything else.If you love to cook, you'll really love doing it with the help of good knives.

5-0 out of 5 stars These are really wonderful knives!
They are the best I have used, they stay sharp for a very long time and a couple minutes with the global sharpener brings them right back when they finally go dull.Really, they make chopping fun.Only sharpen with global sharpeners or guides.I bought my mother in law a set and someone at her home sharpened them with a regular sharpener. Now they are just like other knives.Probably have to send them back to Global to regrind the blade angle or sharpen a few times with the proper sharpener. No one touches MY global knives!!!Honestly, I can't find anything I don't like about these knives. They fit my hand great, they stay sharp for months, they are light in weight, they are easy to sharpen (with the proper sharpener).

2-0 out of 5 stars Not a cut above the rest
I have had my Global knife set for about 2 years now and haven't used it more than a couple dozen times. The blades went dull really quick, and I can't seem to get them sharp again. Maybe I just got a bad set. ... Read more

4-0 out of 5 stars Great knife but Beware on steeling it
Cuts like a Samurai blade quality, and doesn't need to steel as frequent as the Henckels/ Wusthof knives. It has excellent weight for a medium sized hand. However, the handles get quite slippery when wet, so keep your hands clean and dry while using this knife for safety. Also, if you plan on saving money on getting a cheaper steel, DON'T, because this Global blade is much harder than the Henckels/Wusthof blades; a qood quality Diamond coated or ceramic steel is a must, or if you really like the steel design, get the Global steel which can cost quite a bit. Overall, this is a good quality knife with proper care and attention needed, just like a Samurai would do to get use to his sword. ... Read more

Employing the famed mechanism invented in 1842 by renownedFrench manufacturer Peugeot, this sleek, contemporary mill delivers ashower of freshly ground pepper when its top is twisted. 5-0 out of 5 stars Nothing to Sneeze At
Peugot began making pepper mills before they became a car-maker, and they clearly know their business. I purchased my Peugeot Reims Stainless-Steel Pepper Mill two years ago and am very pleased with its quality. The grinding mechanism is the most important aspect of any pepper mill: the hardened steel apparatus here is top-notch. The coarseness of the pepper can be adjusted by either tightening the top nut or by manually adjusting the top portion while grinding. Thus, the user has a great deal of control over the grinding. The only drawback is that it leaves a slight metallic odor on my hands after use.

The mill is an eye-catching culinary curio. However, ultimately a customer's satisfaction with kitchen gadgets relies a great deal on ease of use and comfort. I find this mill quite functional and comfortable, but a few other reviewers obviously have not - perhaps because they are used to curvier wood mills. You might want to test this mill in a store before purchasing it here.

5-0 out of 5 stars The Best Pepper Mill Ever!!!!
I've searched far and wide for years for a good pepper mill that will grind a consistent texture. For me, every other pepper mill will leave large bits of pepper corn, which hurt my teeth!I loved this pepper mill ($80 at the viking store) so much that I purchased the travel pepper mill for $50 to carry with me!This is such a good price, I'm almost tempted to buy another one.....

1-0 out of 5 stars Deceptively attractive
The one I received was either defective or its design does not allow a really coarse grind. The coarsest setting produced an intermittant flow of medium pepper grinds. This is not a cook's peppermill. Probably ok for a scrambled egg and it does looks good on the breakfast table. ... Read more

Editorial Review

Great bakers get that tender, delicate texture in their cakes and coffeecakes by carefully measuring and sifting the flour and dry ingredients. To make sure cakes are melt-in-your-mouth good, try this well-designed sifter from Amco. Its 5-cup capacity handles dry ingredients for even a large, three-layer cake, and the heavy-weight stainless-steel construction and shiny, streamlined design add a modern sensibility to a traditional baking tool.

With a spring-action hand trigger, this sifter can be squeezed with one hand or shaken side to side with both hands to evenly distribute ingredients through the fine mesh screens. If you're new to sifting, be sure to sift flour and ingredients before measuring to achieve the best results; sift onto waxed or parchment paper, and then measure the required amounts. The sifter is dishwasher-safe, but to make sure there's no build-up of ingredients inside the sifter, hand wash in hot soapy water and dry thoroughly. Zyliss, the Swiss maker of quality kitchen accessories, has refined the garlic press into a streamlined kitchen tool. There's no need to tediously peel garlic before pressing any longer--just place the whole clove into the press and squeeze. The peelings remain in the receptacle and garlic bits and juice are pressed out. The press is easily cleaned with the accompanying cleaning tool, which is conveniently stored in the handle so it won't be misplaced. Just match up the cleaner pegs with the holes in the garlic press to remove remaining peelings. Also, its aluminum construction makes this item dishwasher-safe. --Pamela Zytnicki ... Read more

5-0 out of 5 stars Great press, but requires some squeezing strength
I like this garlic press a lot, it's the only one I've tried that can process unpeeled cloves without breaking. It leaves almost no unused garlic residue in the press, and is easier to clean than traditional presses. However, it does require some force to operate, especially when squeezing unpeeled cloves. If hand strength may be an issue for you, you should consider the OXO Good Grips peeler with the black handles and red cleaning head, which takes almost no effort to use (it's also the easiest of all to clean).

5-0 out of 5 stars The Best and the Last one I will ever own!
This gadget is great!I have tried so many and they all broke. This one is worth the money.I put garlic in everything and have been using this press for the past eight years.(meaning I have not had to buy another press for eight years)And this one is still going, and showing no signs of wear.
And the little plastic cleaning tool is a bonus.

1-0 out of 5 stars What are people thinking?
I'm baffled as to why anyone gives this garlic press a postive review!I found it's performace to be completely sub-par.

The spines on the lame plastic "clearing implement" are prone to bending, making it difficult to align the pegs with holes.

The handles are too short for a solid grip, and worst of all, pressed garlic often shoots up and out the back of the press, all over the person pressing. (It would be comic if it weren't so infuriating.)

This press made the Oxo product (which, granted, broke) look not so bad. ... Read more

The looped handles are easy to grip and stay cooler than you might expect, thanks to V-shaped splits where they meet the pan, but it's still a good idea to keep hot pads nearby. The nonporous and nonreactive hard-anodized surface resists sticking and doesn't affect the flavor or color of food. It's also tough enough to handle stainless-steel utensils and vigorous whisking. Unlike pans with plastic or wood handles, the extremely sturdy all-metal construction provides you the flexibility to take the pan to the oven or broiler. But do remember to hand wash your Calphalon pans--dishwasher detergents are bad for the finish and their use voids the lifetime warranty. --Dale Steinke ... Read more

5-0 out of 5 stars You can't improve on perfection!
This stockpot is the last one you'll ever buy. It is so well-constructed, so solid, and so well crafted it will last for generations. The cooking performance is superb. It conducts heat well (it's made of aluminum) and distributes it evenly to ensure good results even on high heat. I've used it for soups, stews, cassoulets, and canning and in every instance it outperforms every other pot of its kind I've ever tried.

People may question the price, but trust me, the four other stockpots I've owned collectively cost a lot more and did a lot less. Spend the money and get yourself a once-in-a-lifetime pot that will serve your needs for good. This is a true bargain in every regard.

5-0 out of 5 stars A Great Multi Purpose Stockpot
I recieved this item as a wedding gift, and have found it to be the greatest stockpot in the world for so many things: from huge batches of pasta to ham-hock soup to turning my tomato harvest into several gallons ofsauce, this pot has never let me down. Why? the thick, anodized aluminumensures even heat. It stands up to all day slow cooking of highly acidictomatoes without staining. The handles are large and sturdy enough even formy huge, sometimes clumsy hands to grip. The lid stays on but allows steamto vent; I never have to worry about a kitchen "explosion" ontothe stove. And the whole thing is so sturdy it stands up any abuse I dishout: dropping, stabbing, three day soaks, without a stain, dent orcomplaint. I highly reccomend this product for anyone from beginning cooksto experienced chefs. ... Read more

Part of Calphalon's Commercial Hard-Anodized line, this pan is made of heavy-gauge aluminum cast in uniform thickness across the bottom and sides for quick and even heating. 5-0 out of 5 stars This pan is HUGE!
I love this pan!I know it is an omelette pan, but I use it for a frying pan. It holds so much that it cuts my cooking time in half. Instead of frying in "batches" I can fry about two pounds worth of meatballs all at once. It cooks veryevenly, and cleanup is a snap. If anything sticks, I just use a little Comet and off it comes.

5-0 out of 5 stars Excellent Large Omelette Pan
Calphalon has redesigned their 14-Inch Omelette Pan to include a helper handle on the opposite side from the "cool V" stainless steel handle. This new feature is very useful because this pan can get heavy to lift when full. I use my 14-Inch pan when I make poultry stuffing for a large turkey. When not in use, I hang this pan on a pot rack. I love the Commercial Hard Anodized line because the pots and pans are almost nonstick and can take a high heat without burning anything. The stainless handle is cool to the touch, too. ... You just might find yourself using this versatile piece of cookware more than any other in your kitchen. Reducing sauces, braising meats, boiling pasta, browning chicken: this pot can do it all, on the stovetop or in the oven. This saucier has straight sides and a wide profile, and two sturdy double-riveted handles make it safer and easier to lift when full. (Don't forget that the cast stainless-steel handles remain cool on the stove, but heat right up in the oven.) Like all of the products in Calphalon's commercial hard-anodized series, it distributes heat efficiently, so foods brown quickly and cook uniformly. In fact, try cooking over a lower setting than you customarily use; Calphalon cookware conducts heat so well that it's easy to overdo the first few times around. Unlike cookware coated with a synthetic nonstick finish, the hard-anodized surface won't chip, crack, or peel if you use a metal spatula, and it doesn't react with acidic foods such as citrus or tomato. All of Calphalon's commercial hard-anodized cookware comes with a lifetime warranty, and if treated with care, it'll last as long as you do. Always wash this cookware by hand with mild cleansers, and don't place a hot pan in cold water--it could warp. --Mary Park ... Read more

5-0 out of 5 stars Excellent for braising, deglazing, etc.
While I am mostly a Le Creuset fan, this saucier's hard anodized aluminum construction beats any Le Creuset hands down for deglazing and thickening sauces.Great price on Amazon, easy to clean, nice roomy and lightweight but sturdy pot.Very pleased with purchase, will look out for more Calphalon Commercial product deals.

5-0 out of 5 stars It completes me!!
Where has this saucier been all my cooking life??!!?? I just love it. I love the whole line.... Talk about easy clean up and super fast cooking.... This stuff is awesome. I can boil water is no time and LAY spagetti down flat to cook!!! NONE of it sticks up in the water. This pot is wonderful....Everyone needs one in their kitchen.

5-0 out of 5 stars Excellent performer, for what it is
I've noticed that people have been taking stars away from this item because of its size. I don't really understand this. Nobody should be fooled about the size of this pot. If it wasn't enough to look at the proportions in the picture and know that it's an 8.5 quart pot, the dimensions are given to you. If it takes up two of your burners, and you're surprised, guess who should have taken measurements before buying it. You.

That being said, this is an excellent pot. The heat distributes very evenly, and it is much wider than it is tall, so this entire pot gets hot fairly quickly and evenly. This pot satisfied my need for a pot that I could use to make large stew dishes for many, many people. From chili to boeuf bourguignon, this pot performs extremely well. The ovensafe handles and top give you the ability to brown your meat in the same place you cook your stew. This is more convenient than you might think.

And finally, and maybe most importantly, this pot was $20 on the Friday sale. This pot is worth much, much more, and its price allows anybody to have an excellent stock pot. Get it. ... Read more

With a diameter of 11-1/2 inches, a depth of 5-1/4 inches, and a high domed lid, this 7-quart pan is sized for a family's braising, baking, and stewing tasks. Chili for a soccer team, cassoulet for a family reunion, curried chicken for a block party--all these are well within the pan's capacity. Though it's not nonstick, like some Calphalon cookware, the matte-finish pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. Textured cast-stainless-steel handles resist heating on the stovetop and go safely into the oven. 2-0 out of 5 stars Worst Calphalon pot
It's a worst piece of Calphalon Commercial line I have owned. The pan has good size (only 10" foot print) but very thin.Like the other reviewer, the first time I have boiled a large piece of chicken breast in the pan,the interior surface at the bottom seemed to wear away leaving irregular, shiny permanent stain marks.I don't cook acidic food at all.I wish I can return this pot.

4-0 out of 5 stars good value for the money
I've had this pan for about a month, and I like it. It's a goodvalue for the money--though I would never pay the full list price. I've made an oven beef stew, bolognese sauce, and other yummy dishes without any problem. I even use it to boil pasta. I needed a good size pan I could use for searing meat, and then adding add'l ingredients and finishing off in the oven. This definitely meets my needs. It's not a heavy-gauge pan, as other reviewers have pointed out, but I think their expectations might have been a bit high considering the price. Generally speaking, you get what you pay for, though this is a good return on investment.

2-0 out of 5 stars A disappointment
I have a number of Calphalon H-A pieces. Some are high-end, others are from the lower priced lines. While I've always noticed the difference in quality in the lower priced pieces, I've considered that to be a trade-off for the reduced price. This dutch oven is a disappointment even by the lower standard. As other reviewers have mentioned, the pan is extremely thin.Worse, the first time I cooked in the pan the interior surface seemed to wear away leaving irregular, shiny marks.Other discounted pieces (especially the 12" everyday pan) hold up well over time, but this one seems to be a dud.

As a side note, Calphalon is willing to examine any pan to determine if a replacement is warranted, but after shipping costs it's hardly worth the effort to send it in. ... Read more

They say that the true measure of a chef is her sauce, and this 3-1/2-quart Windsor saucepan goes a long way toward establishing your culinary credentials. All sauces need to simmer slowly and evenly, and Calphalon's evenly conducting hard-anodized saucepans are tailor-made to do just that. At 5 inches deep, 9-1/2 inches in diameter at the top, and 7 inches at the bottom, this saucepan is constructed out of heavy-gauge aluminum in the classic Windsor style, with gently sloping sides to speed evaporation and facilitate whisking. It's ideal for rapidly heating liquids or reducing delicate sauces like béarnaise or crème anglaise. (First-timer's tip: Try cooking over a lower setting than you customarily use. Calphalon cookware conducts heat so exceptionally well--and quickly--that it's easy to overdo the first few times around.) Unlike cookware coated with a synthetic nonstick finish, the hard-anodized surface won't chip, crack, or peel if you use a metal spatula, and it doesn't react with acidic foods such as citrus or tomato. The ergonomically designed stainless-steel handle stays cool for stovetop cooking. All of Calphalon's commercial hard-anodized cookware comes with a lifetime warranty, and if treated with care, it'll last as long as you do. 1-0 out of 5 stars Bad Customer Service
We have a 4 qt. saucepan of a similar description. The inside bottom of the pan is pitted and chalky.Calphalon has not responded to our request for explanation.

5-0 out of 5 stars My NEW favorite pan
I have a dozen pieces of Calphalon Commercial cookware and the Windsor pan has now moved to the front burner. Since I received it a month ago I have used it almost every day.

First, the funnel-shaped design means the bottom of the pan is smaller in diameter than you would expect from such a large pan. This means it fits perfectly on one of the small burners of my radiant cooktop, freeing up the large burners.

It's a big pan. I was expecting something more dainty but this pan is really big enough to cook in. And the sloped sides, while apparently designed for reducing sauce and stock, also do a really nice job of keeping stuff in the pan as you stir, whisk, mash, or otherwise jostle it around. This pan rocks.

For you point of origin fanatics, you will be pleased to hear that my pan is stamped as Toledo, Ohio, USA, rather than China.

Even my teenage boys who communicate in grunts and monosyllables say "Hey, Dad, this is a cool pan." Case closed.

5-0 out of 5 stars Unique Windsor Pan
I have had this saucepan for a few months now and I'm really enjoying it.The quality and design are excellent. The Windsor is wonderful for sauce reductions or use with any recipe that needs to be concentrated.I have used it for marinara and bolognese and also for soups and chili.Cooking.com no longer carries this pan.I got it on clearance for a really great price and am very pleased with the product. ... Cue the flamenco dancers and bring on the sangria! This wide, shallow pan is an absolute must for creating the traditional Spanish rice dish known as paella. (In fact, the pan doesn't take its name from the dish--the dish takes its name from the pan.) Like all of the products in Calphalon's commercial hard-anodized series, this pan distributes heat efficiently, so foods brown quickly and cook evenly throughout. Unlike cookware coated with a synthetic nonstick finish, the hard-anodized surface won't chip, crack, or peel if you use a metal spatula, and it doesn't react with acidic foods such as citrus or tomato. Paella is a festive food, perfect for celebrations of any kind, and this handsome, sturdy pan makes a dramatic serving piece. But there's no need to limit the paella pan's uses. It's great for cooking other rice dishes such as risotto or jambalaya. You can also braise and simmer seafood on its wide-bottomed surface, toss pasta with sauce for a party, or cook up puffed Dutch pancakes to impress your brunch guests. Given its beauty and utility, it would be a shame to pull out this piece of cookware just a few times a year. --Mary Park ... Read more

5-0 out of 5 stars Excellent Paella Pan
This Calphalon Commercial Hard Anodized 16-Inch Paella Pan with Lid is excellent for use in making paella. There are other paella pans (from Calphalon and other manufacturers) that are available, but they are usually smaller in diameter, and often the lids are sold separately. I have used this paella pan for different recipes for paella, and they all have turned out beautifully. The smaller paella pans are not large enough to contain all the ingredients, whether it is for a paella valenciana or for a seafood paella. This specialty pan is an investment, but I think paella is one of the best dishes to make for a party or for a special dinner. ... Read more

These mats are nice, but they don't work as well as Silpat. They are just as non-stick, but they will stain more than Silpat do --- mine has brown stains where cookies once burnt, whereas my Silpat doesn't.And Silpat isn't even that much more expensive if you use froogle or look at their website for wholesalers.

Large enough to grind up to 2-1/2 ounces of coffee beans (enough for 12 cups), this powerful grinder ensures that freshly ground coffee is quickly available, even for big coffeemakers in the office. The details are what make this grinder exceptional: The lid is transparent for monitoring the grind, and has two down-pointing ribs to guide beans toward the blades for even grinding. The design of the stainless-steel blades, combined with the 150-watt motor, means beans can be ground quickly without overheating and spoiling the coffee's taste. For safety, the grinder will not work unless the lid is securely in place and locked down. Finally, the power cord wraps around the grinder's bottom for neat storage. 5-0 out of 5 stars A trusty, 'Brauny' little grinder
I've enjoyed this grinder for over 5 years, faithfully reducing beans to grounds and a fragrant aroma every morning. This grinder won't win any fashion awards, but it's simple to use, easy to clean, and durable. If it has a shortcoming, it would be its tendency to overgrind beans, producing a fine power that gets by my gold-mesh cone. Therefore the user needs to monitor the grind carefully.

5-0 out of 5 stars small, neat and efficient
When I received a bag of coffee beans in a gift package, I decided to do what every coffee lover eventually does, get a grinder, and enjoy the marvelous aroma of newly ground beans, and the freshest of coffee in my cup.
I've always had good luck with Braun appliances, so chose this sleek and easy little grinder, which is simple to operate and clean; it only has one lever, with the fineness of the grind determined by how long you press it down, and the progress is visible through the clear top. For an extra fine grind, use less beans for best results...there is a warning to not "overheat the motor", which would probably be the result of grinding too many beans at one time for too long.

Cleaning is a snap: The top rinses out, and a swipe with a paper towel cleans out the grinding cup, which is part of the motorized section, and the bottom has a handy spool for use as a cord wrap.
Now my little kitchen area is permeated with the smell of fresh coffee, my lattes taste better than ever, and I have the new adventure of trying out different types of beans, and delight in the wondrous world of gourmet coffee !

5-0 out of 5 stars Great coffee grinder
I've had this coffee grinder for about 6 years now, and it has never failed. It grinds beans very quickly, and the longer you hold the button down, the finer the coffee.Although you can't put it in the dishwasher, it is very easy to clean with a damp cloth.I have recommended this to friends, and they have been pleased also. ...
