It's fantastically weighted and balanced, has enough room so that your knuckles don't hit the cutting board (unlike smaller utility knives) and does every job that I've ever needed as I've made supper.
SO: DON'T buy the five-inch because it's the cheapest one in the line. A chef's knife that's comfortable in the hand is a perfect tool. A knife that's too small is not worth the money. Anyone can use a five-inch knife for occasional fine mincing, but for chopping and carving, the five-inch is about right balance for a petite woman or very small man. Measure your chopping hand from the base of the thumb to the end of the pinkie - if that length is between five and six inches, this is your knife.If not, get a bigger one. ... This is also the knife that inspired a friend who finally bought one to exclaim, "I'm surprised you didn't say, 'You call that a knife?????THIS is a knife!' when you were using my (old, stamped, serrated) knives!"She now understands my addiction to forged German steel. The Wusthof Classic line is the more conservative counterpart to the Grand Prix line.The only difference, however, is the handle style.I personally prefer the Grand Prix, but this is an issue of personal preference.The balance and grip of these knives are as close to perfect as I have found.For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle.This makes the blade much stronger, and less likely to snap. This particular model, the bread knife, is a great knife.Many people think tomatoes are the hardest food items to clearly cut.I think bread is much more difficult; but this knife makes the task seem easy. Wusthof knives have been in my kitchen for years and they are the best knives I have ever used. I used to be a chef in a gourmet beef restaurant and I would have loved to have had a set of Wusthofs then. Now I have my own set, but of all the knives in my kitchen I think this one probably gets the most use. Buy a Wusthof once, and never replace it: they are expensive but worth every penny.

- I own two steels, one obtained two years ago that doesn't have the washer-shaped metal guard between the handle and the shaft, and one obtained four years ago that does. The one that does has collected a lot of scratches on the guard. I can't help but wonder if hitting that metal has also hurt my blades. - The wusthof logo is stamped onto the shaft, into the metal grooves, right where the tip of a blade passes. When honing a long blade I wind up holding the steel so that the blade doesn't hit the logo. (Those raised ridges can't possibly be good for the edge). But this means I only get to use half of the steel.

The thick-bottomed omelet pans can sear and sauté as well as cook omelets and frittatas. Though not nonstick like some Calphalon cookware, pans are anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. Chrome-plated, cast-iron handles are multiriveted for durability and balance. Made of heavy-gauge aluminum, pans cook without hot spots or warping. First of all, they distribute heat more evenly than anything I've ever used before.There are no uneven cooking patterns whatsoever. Secondly, absolutely nothing sticks to them.I don't care if you boil molasses for six days straight leaving only a crusty, charred horror.You will be able to wipe it right out with some water and a sponge.These pots scoff at caked-on spaghetti sauce, scalded milk, and foods which destroy other sets. You can also use any utensil on this set that you'd like.Metal spatulas, wire whisks, etc etc.They will not scratch the cookware one bit.This is especially important for those of us that dislike plastic utensils. I would recommend finding the sets with the glass lids, if for no other reason than it's nice to be able to monitor what's going on inside without removing the lid.(I personally think they look a little nicer too.) The handles do get warm on the pots, but I don't find it a problem.Almost all pot handles get warm so I'm used to this.The pan handles do not heat up, however.Calphalon also makes handle guards that slip over if you've prone to buring yourself. Overall, you will never need to replace these pots and pans.This is the best investment I have ever made in my kitchen and I can't imagine cooking without them now.They are WELL worth the additional cost and will last you a lifetime.

The Wusthof feels solid and smooth in the hand.The components hinge out with the pleasant, firm resistance you expect from German engineering, and they don't flop around as you turn the unit.Unfortunately, the foil cutter is a serrated blade (something that I didn't see on the Amazon description) and it rips the foil rather than cutting it.I like to cut the foil beneath the lip of the bottle, and the Wusthof leaves a ragged, messy, and very visible cut, so I've been using another knife to cut the foil until I find the time to grind the teeth off what appears to be a good quality Wusthof blade. The corkscrew itself is sharp and well designed, long enough to penetrate the deepest corks, and can be screwed easily down the middle of the cork.The handle provides the right feel and control to guide the cork.The lever rests securely on the bottle and stays clear of the cork (unlike cheaper models, where the lever's claws dig into the cork as it is being extracted), and, combined with the Wusthof's main handle, provides the right leverage even for the most recalcitrant cork, as demonstrated a few days ago, when our evening meal opened with an audible and satisfying pop as I painlessly extracted a long, tightly wedged and slightly dry cork from a Bordeaux bottle with the help of the Wusthof. In summary, apart from the serrated blade, an excellent choice, well worth the price.
