    Editorial Review

A cook's knife is the indispensable backbone of any cutlery collection. It performs a wide variety of cutting chores, from fine chopping to dicing and slicing. The heavy 10-inch blade of this definitive example provides sturdy heft so the knife rather than the cook does most of the work. The extra blade length makes quick work of all cutting jobs. The knife looks formidable, but it's a pleasure to hold and use--a true kitchen friend.

Part of the Classic series, this knife represents two centuries of unexcelled Wüsthof craftsmanship. Like other cutlery in the series, it's hand-forged from a single piece of stainless steel for maximum strength; the hand-polished blade is exactingly calibrated to be hard enough to resist dulling yet soft enough to take a keen edge when it's honed or sharpened. Dishwasher-safe and with a traditionally shaped, ergonomically designed handle that is triple-riveted for durability, this knife brings a guaranteed lifetime of low-maintenance cutting to any cook who owns it. --Arthur Boehm ... Yes, the price of a Wusthof Classic is intimidating, and yes, you will feel buyer's remorse...until you use it for the first time. Even for the casual cook, the difference between a Wusthof and even a middlin' fair brand must be experienced to be appreciated. I bought one for my father (who never gets excited about ANY present, ever) for Christmas; and he hasn't stopped thanking me yet. That in itself made it well worth the price.

Cook's knives are indispensable kitchen helpers. They perform a widevariety of cutting chores, from mincing to dicing and slicing. The 5-inch bladeof this definitive example provides sufficient heft to allow the knife ratherthan the cook to do most of the cutting labor; it's modest blade length makes itparticularly useful for small chopping jobs, slicing, and cubing. Many peoplefavor a cook's knife of this size because it combines the maneuverability of aparing knife with the strength and weight of a larger cook's knife.

5-0 out of 5 stars Best knives
I have owned several sets of "never need sharpening knives" and other varieties, but this is absolutely the best set of knives I have ever owned. They slice through so easily and with no mashing of whatever you're trying to slice. They do need an occasional sharpening, but that little bit of effort is well worth it.Also, the knife extends all the way to the end of the handle, so it won't seperate from the blade or break like so many others have...especially while trying to slice through hard cheeses.Excellent knife. You really don't need a whole set though, as one serated and one straight would be sufficient.

5-0 out of 5 stars Sweet Knife
Ok, a lot of people are talking about the size of this knife compared to larger chef's knives. But, really, how many of us are cooking a feast every day?If you are, then, maybe you do need an arsenal of (bigger) knives. But for people who are simply making the family dinner, this is the perfect knife. It easily transitions from job to job and, at the end of the evening, you're not washing 17 knives.

It's fantastically weighted and balanced, has enough room so that your knuckles don't hit the cutting board (unlike smaller utility knives) and does every job that I've ever needed as I've made supper.

5-0 out of 5 stars Size matters
The right chef's knife can change prep time from a chore to a joy: mincing herbs, chopping veggies, opening squash and melons, even carving meat in a pinch. Wusthof makes some of the best - forged of high carbon stainless to keep an edge without being fragile, fully tanged and bolstered for heft and balance, with a comfortable, ergonomically-correct handle that can stand up to water and wear. You will use this for a lifetime.

SO: DON'T buy the five-inch because it's the cheapest one in the line. A chef's knife that's comfortable in the hand is a perfect tool. A knife that's too small is not worth the money. Anyone can use a five-inch knife for occasional fine mincing, but for chopping and carving, the five-inch is about right balance for a petite woman or very small man. Measure your chopping hand from the base of the thumb to the end of the pinkie - if that length is between five and six inches, this is your knife. If not, get a bigger one. ... Read more

The small size and sharp point of this paring knife make it ideal for handheld and other small or intricate cutting chores, such as vegetable peeling or mincing small amounts of parsley. 5-0 out of 5 stars Most useful, perfect shape, best steel
We bought two of these twenty years ago, and they've been the most-used knives in our kitchens. Smaller size makes it easier to handle than the 4.5" model. Full-width bolster (rather than the truncated version on the "cordon bleu" version of this tool) makes sense to prevent cut fingers, considering the razor edge this steel holds.

5-0 out of 5 stars A superb knife
I received this paring knife (included in the course fee) when I took a Wusthof knife skills course at a local shop. It's everything a knife should be - sharp, solid, well-balanced, and a comfortable fit in the hand.Wusthof got the proportions of the classic-style handle about right; not too fine, not too chunky... just right for comfort and control. After the course I gave it to my mother, who was surprised at its sharpness.(I already owned a Henckels Pro-S 3" paring knife, which has a slightly longer handle... IMO the two knives are similar in quality.)

This is also the knife that inspired a friend who finally bought one to exclaim, "I'm surprised you didn't say, 'You call that a knife?????THIS is a knife!' when you were using my (old, stamped, serrated) knives!"She now understands my addiction to forged German steel.

As always, it's best to try several knives in person and see how they fit your hand before buying, but it would be hard to go wrong with this one.

The pronounced serration of this knife's blade is ideal for cutting through tough crusts without undue pressure. The knife's length and triangular tip make it perfect for slicing both long and round loaves. Cooks frustrated by bread knives that tear crusts or send crumbs flying will welcome this efficient worker.

5-0 out of 5 stars I'm cookin' for a livin'...
One of my young ones received this as a gift and when it arrived at work we all just HAD to give it a try. We bake all of our breads from scratch and our crusty loaves surrendered meekly to this blade in two strokes no matter which recipe we attacked...it even sliced our house "Wonder Bread" sandwich loaves cleanly! This 9 inch is sooo much more versatile and heftier than the 8 inch ...size really does matter.
I'm biased against all Wusthof "Classic" knives...I think that they're too light weight and small scaled (the grip is too narrow for me) but...
I bought TWO of these for myself 'cause this is the BEST bread knife that I've EVER used although I highly recommend the "Grand Prix" line for it's better "grip".
Biased or not I'm still loadin' dis bad boy up wit tha MAX ...5 mojo*z! HAZAAH!!!

5-0 out of 5 stars best thing since sliced bread
This knife makes me wish bread did not come sliced. It feels great and performs great. It works on watermelon too, though I'm not sure if I should be using it that way, so don't take my advice there.
If you need a bread knife, buy this one.

5-0 out of 5 stars Great Bread Knife
There are really two main competitors in the high-end mainstream kitchen knife market:Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style.I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model, the bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut.I think bread is much more difficult; but this knife makes the task seem easy.

I highly recommend the Wusthof 9" bread knife. ... Read more

Called a utility knife because it does small and intermediate cutting jobs equally well, this knife pares fruit and chops small vegetables beautifully. 5-0 out of 5 stars Perfectly Balanced and Versatile
The Wusthof 4 1/2 Inch Utility Knife is perfect for almost any small to medium size job in the kitchen. It is exceptionally well balanced and almost infinitely adaptable. The knife is amazingly sharp when it comes out of the box, and holds a great edge even after a lot of use. I find this knife to be my personal cutting implement of choice when I need something smaller than a boning knife.

Wusthof knives have been in my kitchen for years and they are the best knives I have ever used. I used to be a chef in a gourmet beef restaurant and I would have loved to have had a set of Wusthofs then. Now I have my own set, but of all the knives in my kitchen I think this one probably gets the most use. Buy a Wusthof once, and never replace it: they are expensive but worth every penny.

5-0 out of 5 stars This knife a welcome accessory to the good cook.
I absolutely love this knife. It's light weight, but can do a heavy workload in the kitchen.Great for dicing, slicing, and paring.I especially love how it easily cuts through onions, making the finest dice. The manufacturer says that it is dishwasher safe, but I would definitely not run it through the dishwasher, may dull the blade. The best thing about it is it's weight in your hand, and also the safety sharpness of the blade. If you love to cook, and don't look forward to the dicing, splicing, chopping, and paring of your favorite recipes...this is the knife for you.It will make those jobs fast, and accurate. The price fluctuates on this item as well.I've seen it on sale for as low as $13.95 at some speciality stores.ENJOY!!!

5-0 out of 5 stars Utility is the key
I purchased this knife by itself (not in a set) and find it to live up to it's "utility" claims. For those of you who buy knives individually instead of in large sets, this is a nice addition. I was looking for something smaller to compliment my Santoku Chef's knife, but thought the smaller paring knife wouldn't be very useful for much else. This size works well for small chopping tasks and is easy to use for paring as well.

It really doesn't make much sense to get a set that includes several of these smaller knives. This one alone has exceeded all expectations. ... Read more

The straight, serrated blade of this 5-inch knife cuts perfectly through sausages, tomatoes, and fruit skins. 5-0 out of 5 stars Bagels anyone?
Although a little pricey for a utility knife, this knife is a perfect addition to a starter set (I have the set #8832, includes chefs, bread, sandwich, parer, stick and shears). It cuts tomatoes and bagels like butter. It is one that you will reach for for those jobs that require delicate cutting (such as sausage without tearing the skin) without having to go for the more substantial knives.

Strongly recommend as addition to a set which doesn't have this knife.

2-0 out of 5 stars Cuts well but rusted
After entirely TOO much time spent researching which knives to go with (Wustof or Henckels), I went with Wustof on recommendation from a Williams-Sonoma staff person. While the blade cuts nicely and does its job, the construction left a lot to be desired. I had the knife thru two washings and saw rust building up between the handle and full tang of the blade. Now, it's possible I have a lemon, but when I'm spending $50 per knife, I don't want to see anything really wrong with it. I don't want to be responsible for poisoning any dinner guests with rust! I bought the single knife to test whether I'd want the whole set, and well, it doesn't look like I'll be splurging.

This tool serves a vital role in the kitchen by realigning, orresetting, a knifes' edges, which bend this way and that whencontacting a cutting surface. (Often called a sharpening steel, orbutcher steel, a steel doesn't actually sharpen a knife--unless it's adiamond steel.) Consisting of a rod of hard steel-alloy and a toughsynthetic handle, this steel works as well as any. A loop facilitateshanging it close at hand so the steel can be employed often: beforeeach use is ideal to prevent a blade from becoming dull and prolongintervals between professional sharpenings. The rule is that a steelshould be at least as long as the knife blade being drawn across it;this steel's 10-inch rod is sufficient for nearly all household knives. The steel carries a lifetime warranty against defects. --FredBrack ... 3-0 out of 5 stars almost perfect
This steel is just the right thing for honing blades right before using them (for more intensive sharpening use a stone).I only have a few objections:

    - I own two steels, one obtained two years ago that doesn't have the washer-shaped metal guard between the handle and the shaft, and one obtained four years ago that does. The one that does has collected a lot of scratches on the guard. I can't help but wonder if hitting that metal has also hurt my blades.

    - The wusthof logo is stamped onto the shaft, into the metal grooves, right where the tip of a blade passes. When honing a long blade I wind up holding the steel so that the blade doesn't hit the logo. (Those raised ridges can't possibly be good for the edge). But this means I only get to use half of the steel.

However, when it comes to sharpening steels, I have found very little difference. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage.Unless you want a matching set, shop on price, and look to Henckels.

5-0 out of 5 stars A good knife needs a good steel
While there is no substitute for a knife sharpener, steeling your knives after every use (I do it when drying and putting away my knives), keeps the blades true and does allow you to go a little longer between sharpenings. If you're serious about cooking, you need a steel. ... Read more

Any cook would happily welcome this cookware set of five pans, three of which have lids, and a leather panhandler sleeve that slips over hot handles. Every piece goes into the oven, adding versatility to the set. The saucepans and double-handled saucier can simmer stocks and soups, cook chili and boil pasta, stew, and braise, plus make sauces and cook vegetables. The thick-bottomed omelet pans can sear and sauté as well as cook omelets and frittatas. Though not nonstick like some Calphalon cookware, pans are anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. Chrome-plated, cast-iron handles are multiriveted for durability and balance. Made of heavy-gauge aluminum, pans cook without hot spots or warping. Hand wash with mild detergent and scour with plastic or nylon scrubber. The set comes with a lifetime warranty against defects. --Fred Brack

4-0 out of 5 stars Overall great cookware
The calphalon hard-anodized cookware is overall a good product.I have used my pots and pans over many years now.
They conduct heat efficiently, they look good, they have a good weight to them.I would in the future still buy the same line, however only for certain jobs.If you have the money, by all means, go with allclad.Otherwise you can make great use of calphalon if you avoid them for certain foods.
I can not recommend the pots for cooking foods with high acidity, e.g. tomato sauces as the anodization will come off after a while.Even though I used only wood utensils, there are tiny dings in the bottom of many of my pots.So they don't really last a lifetime if you use the pots every day as I do.
Those pots I used in the oven, started buckling after a while.
I highly recommend the frying pans, pots you would use to cook vegetables and non-acidic sauces, stews etc. in and pots you don't use every day.For my italian tomato sauces I switched to all clad and for reducing volatile sauces I am using a copper sauce pan, due to its extreme conductibility.

5-0 out of 5 stars Best Investment I've Ever Made
I cannot sing enough praises for this line of cookware.I purchased a professional series hard-anodized set a couple of years ago, and am in love with them still.

First of all, they distribute heat more evenly than anything I've ever used before. There are no uneven cooking patterns whatsoever.

Secondly, absolutely nothing sticks to them.I don't care if you boil molasses for six days straight leaving only a crusty, charred horror. You will be able to wipe it right out with some water and a sponge. These pots scoff at caked-on spaghetti sauce, scalded milk, and foods which destroy other sets.

You can also use any utensil on this set that you'd like.Metal spatulas, wire whisks, etc etc. They will not scratch the cookware one bit. This is especially important for those of us that dislike plastic utensils.

I would recommend finding the sets with the glass lids, if for no other reason than it's nice to be able to monitor what's going on inside without removing the lid.(I personally think they look a little nicer too.)

The handles do get warm on the pots, but I don't find it a problem.Almost all pot handles get warm so I'm used to this. The pan handles do not heat up, however.Calphalon also makes handle guards that slip over if you've prone to buring yourself.

Overall, you will never need to replace these pots and pans. This is the best investment I have ever made in my kitchen and I can't imagine cooking without them now. They are WELL worth the additional cost and will last you a lifetime.

5-0 out of 5 stars Great cookware, with two drawbacks...
Calphalon pots and pans are top-quality cookware, heating extremely quickly and evenly. However, they have two drawbacks: They can not be put in the dishwasher and the handles get HOT.

If you can deal with those two issues, I'd say, buy, but if you can't you may want to look elsewhere.

BTW, the "Calphalon Commercial" set has handles that are not as hot, but still quite warm. ... Read more

    5-0 out of 5 stars A waiter's corkscrew you'll love
I'm a little old fashioned when it comes to corkscrews.I like the feeling of actually opening the bottle myself instead of having a machine do it.So basically I love waiter's corkscrews.

That said, I really love this corkscrew by Wüsthof. The screw goes in smoothly, the corkscrew is a good length to give you great leverage on the cork, it feels sturdy but not too heavy, if fits the hand well and it performs perfectly on cork and faux-cork.

I had to wait a couple months for it to be in stock but it was worth the wait.I ended getting the Messermeister Bow Tie Corkscrew while I was waiting and this corkscrew noticeably outperforms it.

It's a great purchase; with Wüsthof quality this is a corkscrew you'll pass on when you pass on.

4-0 out of 5 stars High quality, worth the price, except for the blade
I like the ritual and control of opening a bottle with these "waiter's helper" style corkscrews, rather than the quick, impersonal (and expensive) Screwpulls.Unfortunately, the first 3 inexpensive models I purchased (including the Oxo) broke or wore out, so I decided to spend a little more. The Laguiole seemed too expensive, so I tried the Wusthof.

The Wusthof feels solid and smooth in the hand. The components hinge out with the pleasant, firm resistance you expect from German engineering, and they don't flop around as you turn the unit.Unfortunately, the foil cutter is a serrated blade (something that I didn't see on the Amazon description) and it rips the foil rather than cutting it.I like to cut the foil beneath the lip of the bottle, and the Wusthof leaves a ragged, messy, and very visible cut, so I've been using another knife to cut the foil until I find the time to grind the teeth off what appears to be a good quality Wusthof blade.

The corkscrew itself is sharp and well designed, long enough to penetrate the deepest corks, and can be screwed easily down the middle of the cork. The handle provides the right feel and control to guide the cork. The lever rests securely on the bottle and stays clear of the cork (unlike cheaper models, where the lever's claws dig into the cork as it is being extracted), and, combined with the Wusthof's main handle, provides the right leverage even for the most recalcitrant cork, as demonstrated a few days ago, when our evening meal opened with an audible and satisfying pop as I painlessly extracted a long, tightly wedged and slightly dry cork from a Bordeaux bottle with the help of the Wusthof.

In summary, apart from the serrated blade, an excellent choice, well worth the price.

4-0 out of 5 stars Heavy, solid portable corkscrew
This is a heavy, solid-feeling corkscrew that should last for many years. There are many waiter-style corkscrews out there but this one is, for the money, the best built, if not exactly the most stylish. The open screw design means you can safely open old, dry corks without fear of breaking the cork off in the bottle. The foil cutter works well, even on those plastic bottle toppers. This corkscrew does require some practive, however, as you need to line up the screw correctly -- not in the center of the cork but more towards the edge, about halfway between center and edge. On one end is a tiny flip-out blade that can be used for cutting off the foil capsule. On the other end is a lever that serves as a brace that rests on the edge of the bottle to give you leverage when extracting the cork. This makes it easy to open a bottle of wine without setting it down on a tabletop.

If you need a corkscrew for the home, get an inexpensive Screwpull, but if you want a portable corkscrew, or a backup for the home, this is a solid choice. ... Read more

    Editorial Review

If you're a Weight Watcher, this collection of 500 recipes in a handy loose-leaf binder could put you in the fast lane on the road to success. This cookbook is designed for Weight Watchers' 1•2•3 Success program: points are assigned to foods based on fat, fiber, and calories, and your daily point allowance is based on your current weight. So you can eat what you want, as long as you don't go over your allotted points. The better your food choices, the more you can eat before you run out of points.

Recipes are varied and cover the whole gamut: sauces; breads; soups; meat, chicken, fish, and vegetarian entrees; pasta; vegetable, grain, and potato side dishes; and, of course, desserts. The recipes are more healthful but not drastically different from foods you and your family enjoy now. Many are familiar comfort foods, such as Pizza, Oven "Fried" Chicken, Beef Stew, Tuna Noodle Casserole, Chocolate Layer Cake, and Cheesecake.Internationally inspired favorites include Dolmades (stuffed grape leaves), Orange-Flavored Fajitas, Moo Shu Chicken, Tandoori Haddock, and Senegalese Peanut Soup. The nutritional breakdown for each recipe is more complete than in most cookbooks, and includes calories, fat, saturated fat, cholesterol, sodium, carbohydrate, fiber, protein, calcium, and Weight Watchers' points. --Joan Price ... 5-0 out of 5 stars My Favorite Cookbook
This book is the one I use over and over again, I've made so many recipes from it.These recipes do not taste like "diet" food. Although they are low in fat, calories, and food points, they really taste good too. Some favorites I make regularly from this book are the Parmesan-Turkey Meatloaf, Shrimp Creole, Tuna-Noodle Casserole, Chicken Avgolemono Soup, Indian Carrot Soup, Hummus, and our absolute favorite - the Chicken Quesadillas with Corn-Tomato Salad. I brought the Rolled Orange Sponge Cake to a family gathering and everyone devoured it - no one would have guessed it only had 2 grams of fat per serving.

I highly recommend this book for anyone looking for a great all-around sourcebook for all kinds of healthy low-fat recipes that taste great and fit into a Weight Watchers plan or even anyone who is just looking for good, nutritious meals. The book is well laid out and has an excellent variety of reliable recipes. It's easy to read and browse through, has an adequate amount of photos, and contains all the nutrition information and points for each recipe.

3-0 out of 5 stars Need to specify a serving size
WW has great recipes but they've done my pet peeve again! It is so annoying to look at, for instance, the soup you just made and be forced to either guess at 1/8 or measure the whole batch of soup and then extract an 1/8.Why not: Serving size 1 1/2 cup? ... Read more
