The Calphalon 16 1/2 inch roasting pan is wonderful to use!This is the first of several Calphalon items I have used, and I'm now in the process of upgrading all my cookware to Calphalon.
At first I was afraid to use a surface that was not non-stick- for many years my specialty was macaroni and cheese (usually overcooked).But recently the cooking bug has hit me, so I purchased this roasting rack at the recommendation of my dad, who has a set of the professional hard-anodized.
All I can say is, I'm a convert!The price tag may be a little high, but given how much I would have spent over the years, continually buying the 5-dollar foil roasters, this will pay for itself in a few years, yet last a lifetime.
One of the best features of this roaster is the non-stick rack.I didn't want to use the non-stick roaster due to how high-maintenance non-stick is... rather heat-sensitive, the need to use care with which cleaners and utensils you use, etc.; but I also didn't relish the idea of scrubbing a regular rack.This was a breeze to clean, and the turkey came out beautifully.The large size of the pan made it easier to reach the juices, so basting was much easier.
If you really prefer non-stick products, try the non-stick Calphalon roaster.But for me, this was a great purchase.I highly suggest you buy this roaster.You won't regret it!

5-0 out of 5 stars What Is Gravy, That Thou Art Mindful of It?
I have a heavy clad stainless steel roasting pan that costs 5 times as much as this. That little expenditure was most definately a mistake. There's something about this heavy aluminum that makes a great gravy. And clean up is just as easy as with 18/10 stainless.

May I suggest putting one carrot, one onion, and one stalk of celery in the bottom of the pan before you put your roast in the oven? I call this The Trinity, and it lends an incredible flavor to any drippings with an ambition to become gravy that they'll remember.

Our former pan went AWOL during our move--we repurchased immediately for the holidays. This pan has a rack, an excellent feature, good high handles and non-stick finish on the rack. This is a sturdy standby -- a must in any kitchen.

The only negative about a non-stick roasting pan is that the carmelization process of drippings does not work on a non-stick surface as it does on a plain surface. The fat seems to bead up and prevent the formation of that lovely dark stuff on the bottom of the pan that you boil up with stock to make a rick, dark gravy. HOWEVER, my workaround is to roast the neck and gizzard in the pan next to the bird. If you use a fresh turkey and NOT one pre-basted, there will be enough juice to make a dark gravy that can be skimmed after cooling. The neck and gizzard add gelatin from the bones and cartilage and a dark color as they roast. (If you use prebasted turkeys, the oil will dilute the juice, and frozen birds often release a lot of water.)

It was with a little trepidation that I purchased the Calphalon Commercial Non-Stick 16 1/2" Roasting pan as I have been using a beat up old aluminum roaster since I was in the Catering business 15 years ago.But it was time for a change when I found myself, once again taking the old roaster outside and spraying it with a hose and using a heavyduty commercial SOS pad to clean away the gunk after a birthday party where I needed to roast 4 chickens and make gravy.And once again, like a bugle call to arms, the neighborhoods dogs came-a-running to lick the greasy water as it flowed down my driveway. I realized it was time for a change even without the neighborhood busy-bodies informing me that the greasy water would eventually flow into our town water source. Of course they were correct and not wanting to be arrested for pollution I bought the Calphalon roasting pan.I recently used my new roaster to cook a turkey and I have to say I was immensely pleased with it's performance especially in regards to the even heat distribution and especially the relative ease of cleanup. You can also use this pan to roast several chickens and most large cuts of beef like a standing rib or filet mignon roasts for example. Unfortunately, the neighborhood dogs pass by wimpering an awful lot lately and look forlornly at me while I'm watering the lawn or taking out the trash.

This Calphalon Commercial Nonstick Collector's Edition 16 1/2-Inch Roasting Pan with Nonstick Rack is a perfect set to add to your Calphalon collection. You can roast everything in it, except for a very large (25 lb.) turkey (for which you would need an 18-Inch roaster). The raised handles on this roaster are large enough to use with thick potholders, so it can be easily lifted out of the oven. The roasting rack is nonstick, too, so roasted meat, poultry, or game can be gently loosened from it without tearing the crisped skin. The roaster is heavy duty, with a hard anodized aluminum alloy exterior and Calphalon Commercial nonstick interior, so it does not buckle in a hot oven (up to 450 degrees). For making gravy, I put it across two burners on the stove top, making sure to keep the temperature at medium-high and using nylon or wooden utensils. I love this pan!I know it is an omelette pan, but I use it for a frying pan. It holds so much that it cuts my cooking time in half. Instead of frying in "batches" I can fry about two pounds worth of meatballs all at once. It cooks veryevenly, and cleanup is a snap. If anything sticks, I just use a little Comet and off it comes.

Calphalon has redesigned their 14-Inch Omelette Pan to include a helper handle on the opposite side from the "cool V" stainless steel handle. This new feature is very useful because this pan can get heavy to lift when full. I use my 14-Inch pan when I make poultry stuffing for a large turkey. When not in use, I hang this pan on a pot rack. The name says it all - bake and serve (in style).The rattan basket dresses up the glass dish when using it as a serving piece at a potluck dinner or on a side buffet table (which we all know you already use your other Pyrex baking dishes for!)

The glass dish easily goes from the oven to the fridge / freezer to the dishwasher for easy clean up.The snap-on lid makes transporting food a worry-free event (*don't put the lid in the dishwasher though - it warps after a while).

It is a shame this has been discontinued, but I suppose it was the precursor to the food carrier sets that they make these days.Try to find one of these on ebay if you can.Even if you don't end up using the rattan basket often, you'll use the glass baking dish all the time!

Everyone has an oblong Pyrex dish, it seems. But not everyone has one with snap-on plastic top and brown woven base. I have used mine for toting casseroles to potluck suppers and for serving casseroles and desserts at a casual buffet. The Pyrex dish can go from freezer to oven to table to refrigerator or dishwasher, but I handwash the plastic top so it won't become misshapen, and I wipe off the woven base with a sponge. I found this book in a Harry & Davids store last year.I loved the book and I read it from cover to cover! All the classic recipes are there and there's different menues to choose from.You can go from classic to elegant.

He shows all the basics about how to cook a turkey and the best and least best ways of cooking a turkey. I really enjoyed it and I'll use it every Thanksgiving!My only complaint was his recommendation to put the yam casserole under the broiler to melt the marshmellows...I had them in 30 seconds and they caught on fire and burned up! I would recommend just putting the caserole back in the oven instead for a few minutes to melt them.

I have to admit...I love everything about Thanksgiving...even the shopping and preparation and cooking.It's a blast being out in the grocery store the weekend before Thanksgiving and getting the turkey, potatos, yams, corn, gravy, cranberry sauce, and everything else for the great American meal.

But I do see where all this can stress a person out, especially if they are doing a big dinner for a lot of guests.We all want to think our dinner will look as good as those that appear on the cover of Gourmet magazine.

Rick Rodgers fun and fascinating book will give you everything you need to know.From putting together your shopping list, to what can and cannot be prepared in advance, to the meal itself, and to how to serve those wonderful left-overs.

In addition there's a vast variety of recipes from the traditional to the more exotic, as well as tips on the best equipment to use and even your place settings.

Whether your an old pro like me or a first-timer, you'll find a lot of usefeul ideas and tips in this great book.

I love this book for several reasons, but the main reason is that it is a book for EVERYONE.It is a book for inexperienced cooks as well as veteran turkey roasters.It has classic recipes for those who don't stray far from tradition and more adventurous recipes for those who want to mix things up a little. Plus it's just a great read! I have read it cover to cover and enjoyed the extra history and stories that Mr. Rogers adds to the book. This will be my third Thanksgiving using Thanksgiving 101. It's only mid-October, and I've already been reading through the recipes, gearing up for the big day!He has lots of great tips for planning out your menu and cooking timeline, including what can be made ahead of time and what can't.It is great information.

The Best (Manufacturer's Inc.) 11-inch Masher with Metal Handle is on my essential list of kitchen utensils. This masher is very heavy-duty and large. I boil peeled and quartered largerusset potatoes for about 15-20 minutes in either my 5-quart or my 8-quart Calphalon hard-anodized aluminum pot, drain off the water, add some warmed milk, sweet butter, sea salt, white pepper, and then mash them. I like lumpy mashed potatoes, so I mash them for a short time. I use an up-and-down, twisting motion with the masher. If you want creamier mashed potatoes, simply add more warmed milk and mash them longer. Spoon out your mashed potatoes into a serving bowl, and soak the masher with your pot so clean-up will be easy. I use this thermometer for making candy as well as cooking meat, and it works really well.There is a clip to attach it to the pan while you cook.No more wondering whether you're at the "soft-ball" stage yet or not.I love it for oatmeal no-bake cookies.

I purchased this product 4 years ago and have replaced the probe three times for about $7 each. The latest probe just malfunctioned.I really loved it at first...perfectly roasted chickens,loin roasts, and turkeys.Oddly enough, the thermometer works great but the probe itself isn't designed to handle much time in the oven.If you like to roast your chickens in a hot 400 degree oven ,the probe will eventually stop working or will become completely unreliable.Even at lower temperatures, the heat finally takes its' toll...it just takes longer for it to happen.One would think that something designed to be left in the oven would be able to take the heat.I will buy yet another probe because when this thing is working, it is great.That is worth $7 a year for me....but not for everyone.Per another reviewers advice, I am calling Polder.

The idea is good - nice to have an alarm and a thin remote wire that allows the oven door to be kept shut.
HOWEVER, After using this product half a dozen times over the course of a year or so, the LCD screen failed.For a while I could sort of guess at the temp based on the remaining segments of the numbers, but finally tossed it in the garbage yesterday.This is not acceptable.There are plenty of other options.No more Polder products for me. ... I over heard My son who is 24 recently tell his girl friend to go watch and learn how his mother cooks Thanksgiving Dinner.
I thought of how he loves my Turkey Dinner, but always hated the mess of cleaning up the dishes.

I always had the problem of what to serve the Turkey on.

Well here it is. A wooden board instead of a glass or plastic plate. When the clan rolled in to Chez Snerdley for Thanksgiving 2003, I had no worries about serving them a prize Turkey.Why?Because I had coated that thing with my secret recipe baste.But that's not the whole story, because that baste would have never gone on as smoothly or evenly without this gem of a basting brush.Because of this Good Grips item, I was free to focus on my other priorities: green bean casserole and Jell-o salad (the latter of which gave 2 relatives food poisoning, unfortunately).

Thanks to OXO for making such a quality product!Everyone's already asking me for my baste recipe - I'll just tell them to talk to the brush!

I picked these up in a friday sale and its a great value for all 3 tools. I would have paid more for the tongs alone in a regular store. The tongs are solid, have a locking clasp and are dishwasher safe. The separator and baster are made of heavy duty plastic.

A big fan of Pedrini products, even I was pleasantly surprised by the size, quality and craftsmanship of these tools! The tongs alone are worth purchasing this set for. And while many people only think of using a baster and a gravy separator around Thanksgiving, these tools are indispensable all through the year. Use the baster to remove extra liquid from your crock-pot dishes and stews, then reduce/thicken it in a saucepan before returning it to the pot. The gravy separator makes an excellent dispenser for pancake and crepe batter - very easy to control. An excellent set.

When it comes to knives, I am an unabashed Wusthof fan. When we get to carving forks, however, there is a problem. This is a beautiful, superbly-made fork that will ably perform any conceivable task. However, Calphalon makes one that is every bit as functional for about one-fifth the price. This is when I must sadly say, "Sorry, Wusthof, but no can do.".

I was given one of these forks as a gift. It is a fabulous fork. The reason I gave it only three stars is that I recently bought a Calphalon knife set, and it came with a fork that is in every way the equal to this fork, yet even as an open stock item, costs a fraction of the price. If you must have the name, buy it. On the other hand if you want the best quality, and value your money.... there are alternatives.

As a longtime Wüsthof-Trident collector, I've acquired both their Classic Straight Forks and their Classic Curved Forks. I use a curved fork for turning pot roast that is being cooked in a Dutch oven, as well as for lifting roasted meat, game, and poultry from a roasting pan onto a carving board. I use this straight fork (also called a bayonet fork or chef's fork) for carving roasted meats, game, and poultry. I also use a tine of this straight fork to pierce roasts for checking the color of their juices as a test for doneness.This fork is made to the same specifications as the Classic line of Wüsthof knives - it has full tang construction, meaning that it's forged from a single blank of high-carbon, no stain steel, and it has the traditional triple-riveted design. The handle of the straight fork feels balanced in my hand as I use it to pinion the roast to my carving board for carving and also maneuver it in tandem with my carving knife to detach, lift, and plate slices of meat with ease. The tines of this 6-inch fork are 4.5 inches long. Wüsthof makes an 8-inch straight fork, too. Both of these straight forks can do double duty as sauté forks. This is how my 16-year old son describes his maternal grandmother's cutlery (I'm divorced). After this past St. Patrick's day, after he struggled with carving her famous shoe-leather corned beef, I showed him how to carve a properly-cooked one with my trusty Wusthof. He carved one perfect slice, turned to me, and said, "no fair". I took pity on him and got him one for himself. The food at Grandma's isn't any better but at least the slices are nice and pretty.
I guess my point is that if a kid who's pressed into carving a roast can notice a profound difference, it's a pretty sure bet you will too. It's not cheap, but it's money well spent.

As a longtime knife collector, I've amassed a large assortment of knives, including over 40 from the Wüsthof-Trident Classic line. I own a few carving sets and an electric carving knife, but this Wüsthof Classic 8-Inch Carving Knife is my old stand-by for carving roasted meats, poultry, and game. The reason I prefer this carving knife over all others is that it holds its sharpened edge beautifully, and it has the perfect heft and balance for my hand. For specialty carving and slicing needs, however, I do use my Classic knives with the Küllenschliff edges, such as the ham, salmon, and roast beef slicers. When carving, I pinion the roast on the carving board with my straight carving fork, then slice alongside it, and use the knife tip to carve around bones and lift off the carved meat slices. I've found that this carving knife is ideal for all general purpose carving. It's very easy to keep it well sharpened by using Washita Arkansas whetstones and honing oil or by using a Chef's Choice 3-Stage Diamond Hone Professional Sharpener. Before each use, I always hone it with a honing steel. I hand wash and dry it, as I do with all my Wüsthof knives, and keep it stored in a wooden block.

There are really two main competitors in the high-end mainstream kitchen knife market:Henckels and Wusthof.Those who have used both usually have a preference.My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line.The only difference, however, is the handle style.I personally prefer the Grand Prix, but this is an issue of personal preference.The balance and grip of these knives are as close to perfect as I have found.For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle.This makes the blade much stronger, and less likely to snap.

This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few.For chopping, the chef's knife or utility knife are more useful.This knife is too long and thin for chopping; its balance isn't right.Therefore, this knife is really limited to carving meats.For most cooks, this is an expensive knife fora rare job.If you are completing your collection, I recommend this knife.If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife. ... I am writing this the day after Thanksgiving. The first Thanksgiving for which I was entirely responsible myself. I don't cook, I'm the "order takeout" type of person. So you can imagine the jitters I had when facing the challenge of what to cook for the first Thanksgiving at my house.

Thankfully, Williams Sonoma's Thanksgiving recipe book saved the party. Not only saved it, but made it a huge success. The recipes were laughably easy and most of all very quick to make, yet everything I fixed had a definite festive touch - not your everyday homecooking at all. The book features beautiful color pictures of all dishes, along with the clearest of instructions for even the most unexperienced cook like me. There are plenty of recipes to chose from - from simple to more sophisticated, from traditional sweet potatoes and green beans to more unusual side dishes, but all are very manageable. However, not only side dishes are listed here. There are various turkey recipes to chose from, as well as desserts.

The book also addresses essentials like how to make turkey stock, gravy and cranberry sauce (I highly recommend the one with ginger and fresh grapefruit juice/zest!) and comes complete with recommendations for different menu courses from simple to elegant. Of course, there is also a section on recommended cooking and serving tools.

My summary: I have no experience whatsoever with cooking, but everything I made yesterday tasted simply delicious. Thanks, Williams Sonoma! I might be a chef after all!!! Now, if I could just decide whether my favorite were the yams with pecan nut topping, or the sauteed corn with chipotle peppers. Or maybe the Brussels sprouts with orange zest and hazelnuts, but who could forget the green bean salad with the caramelized onions and goat cheese...

Every year we pull it off the shelf and select recipes for the year. Along with plenty of recipes to choose from, it has all the vital information you need for Thanksgiving in a nice compact form. Turkey roasting times, carving instructions, checklists, and timing guides are all included. It is convienent to have all of the recipes in one book. Each year we cook some of the same recipes and we try a couple of new things. Every recipe has produced excellent results.
