Calphalon Commercial Hard Anodized Collector's Edition 16-1/2-Inch Roasting Pan with Nonstick Rack Average Customer Review: Kitchen list price: $118.00 US | Canada | United Kingdom | Germany | France Editorial Review Large enough to hold a massive turkey, two chickens, or a family-size primerib, this 16-1/2-inch roasting pan withstands oven heat to 700 degrees F and is safe formetal utensils. It comes with a nonstick rack that lifts food off the pan's bottom foruniform, all-around roasting while preventing a turkey's back from boiling in pan juices.Because it's nonstick, the rack won't pull off pieces of the bird's browned skin. Made ofanodized aluminum, the pan is harder than steel and conducts heat evenly whether it'sbaking lasagna or caramelizing a roast's pan juices. The pan's riveted, cast-stainless-steelhandles stand straight up for easy handling and are large enough to accommodate ovenmitts. The rack has its own set of large handles. Both pan and rack carry a lifetimewarranty against defects. --Fred Brack ... Read more Features Reviews (4)
May I suggest putting one carrot, one onion, and one stalk of celery in the bottom of the pan before you put your roast in the oven? I call this The Trinity, and it lends an incredible flavor to any drippings with an ambition to become gravy that they'll remember.

Calphalon Commercial Nonstick Collector's Edition 16-1/2-Inch Roasting Pan with Nonstick Rack Average Customer Review: Kitchen list price: $136.00 US | Canada | United Kingdom | Germany | France Editorial Review Large enough to hold a massive turkey, two chickens, or a family-size primerib, this 16-1/2-inch roasting pan is clad in three layers of nonstick coating durableenough to withstand oven heat to 450 degrees F. It comes with a nonstick rack that liftsfood off the pan's bottom for uniform, all-around roasting while preventing a turkey'sback from boiling in pan juices. Because it's nonstick, the rack won't pull off pieces of thebird's browned skin. The only negative about a non-stick roasting pan is that the carmelization process of drippings does not work on a non-stick surface as it does on a plain surface. The fat seems to bead up and prevent the formation of that lovely dark stuff on the bottom of the pan that you boil up with stock to make a rick, dark gravy. HOWEVER, my workaround is to roast the neck and gizzard in the pan next to the bird. If you use a fresh turkey and NOT one pre-basted, there will be enough juice to make a dark gravy that can be skimmed after cooling. The neck and gizzard add gelatin from the bones and cartilage and a dark color as they roast. (If you use prebasted turkeys, the oil will dilute the juice, and frozen birds often release a lot of water.)

Safe in the oven, microwave, refrigerator, freezer, and dishwasher, the dish is made of Pyrex, a special glass that withstands the shock of going from hot to cold, or vice versa, without breaking. The dish is nonreactive (useful for acidic marinades) as well as stain- and odor-proof, and comes with a two-year warranty against breakage from oven heat. --Fred Brack ... The glass dish easily goes from the oven to the fridge / freezer to the dishwasher for easy clean up.The snap-on lid makes transporting food a worry-free event (*don't put the lid in the dishwasher though - it warps after a while). It is a shame this has been discontinued, but I suppose it was the precursor to the food carrier sets that they make these days.Try to find one of these on ebay if you can.Even if you don't end up using the rattan basket often, you'll use the glass baking dish all the time!

Thanksgiving 101 Average Customer Review: Paperback (06 October, 1998) list price: $15.00 -- our price: $10.50 (price subject to change: see help) US | Canada | United Kingdom | Germany | France Editorial Review Getting ready for your first turkey or dissatisfied with the dry results you got last year? Not to worry--"Mr. Thanksgiving," Rick Rodgers, is here to teach Thanksgiving 101. And he ought to know. For the last eight years he has been traveling the country to teach his class as the media spokesperson for Perdue Farms, an industrial giant among turkey producers. Before getting to what he calls the "Main Event," Rodgers has advice about how to plan ahead and coordinate the labor to make the day itself more enjoyable. He opens with sections on appetizers and beverages (Glittering Spiced Walnuts, Spicy Cheddar and Pecan Balls, Bloody Marys and Ramos Fizzes) and soups and salads. The "Main Event" is everything, absolutely everything, you would want to know about buying, thawing, prepping, and roasting a turkey. You needn't look any further. There's a long question-and-answer-style section that anticipates any questions you might have. Then it's right on to everything from Perfect Roast Turkey with Best-Ever Gravy to Holiday Meatball Lasagna. Follow all that with sections on stuffings and dressings, side dishes, yeast and quick breads, desserts (there's more to do with that pumpkin than make pie--how about Pumpkin-Walnut Roulade with Ginger Filling?), and leftovers (Turkey Tetrazzini), and you can see how Rick Rodgers's Thanksgiving 101is the cookbook equivalent of one-stop shopping for your holiday meal. --Schuyler Ingle ... Wüsthof Classic 8-Inch Carving Knife Average Customer Review: Kitchen (31 July, 2001) list price: $102.00 -- our price: $79.99 (price subject to change: see help) US | Canada | United Kingdom | Germany | France Editorial Review To slice meats neatly and with ease, carving knives must have thin, narrow blades with flexible tips for negotiating a roast's bones. These qualities plus the 8-inch length of this fine slicer make it ideal for carving the largest cuts of meat and poultry. The pointed end aids in cutting and detaching slices as you work. Part of the Classic series, this knife represents two centuries of unexcelled Wüsthof craftsmanship. Like other cutlery in the series, it's hand-forged from a single piece of stainless steel for maximum strength; the hand-polished blade is exactingly calibrated to be hard enough to resist dulling yet soft enough to take a keen edge when it's honed or sharpened. Dishwasher-safe and with a traditionally shaped, ergonomically designed handle that is triple-riveted for durability, this knife brings a guaranteed lifetime of low-maintenance cutting to its owners. --Arthur Boehm ... Read more Features Reviews (4)
The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style.I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap. This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few.For chopping, the chef's knife or utility knife are more useful. This knife is too long and thin for chopping; its balance isn't right. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife fora rare job.If you are completing your collection, I recommend this knife. If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife. ... Thanksgiving: Festive Recipes for the Holiday Table (Williams-Sonoma Kitchen Library) Average Customer Review: Hardcover (01 October, 1997) list price: $14.95 US | Canada | United Kingdom | Germany | France Reviews (4)
Thankfully, Williams Sonoma's Thanksgiving recipe book saved the party. Not only saved it, but made it a huge success. The recipes were laughably easy and most of all very quick to make, yet everything I fixed had a definite festive touch - not your everyday homecooking at all. The book features beautiful color pictures of all dishes, along with the clearest of instructions for even the most unexperienced cook like me. There are plenty of recipes to chose from - from simple to more sophisticated, from traditional sweet potatoes and green beans to more unusual side dishes, but all are very manageable. However, not only side dishes are listed here. There are various turkey recipes to chose from, as well as desserts. The book also addresses essentials like how to make turkey stock, gravy and cranberry sauce (I highly recommend the one with ginger and fresh grapefruit juice/zest!) and comes complete with recommendations for different menu courses from simple to elegant. Of course, there is also a section on recommended cooking and serving tools. My summary: I have no experience whatsoever with cooking, but everything I made yesterday tasted simply delicious. Thanks, Williams Sonoma! I might be a chef after all!!! Now, if I could just decide whether my favorite were the yams with pecan nut topping, or the sauteed corn with chipotle peppers. Or maybe the Brussels sprouts with orange zest and hazelnuts, but who could forget the green bean salad with the caramelized onions and goat cheese...
