Lodge Original Finish Cast Iron Eight-Section Cornbread Skillet Average Customer Review: Kitchen list price: $17.95 -- our price: $8.49 (price subject to change: see help) US | Canada | United Kingdom | Germany | France Editorial Review By dividing this cornbread skillet into eight wedge-shaped sections,Lodge exploits cast iron's baking advantages to ensure that a tasty crustenvelops each wedge when it emerges from the oven. Because cast iron isunmatched for heat retention and distribution--no hot spots--that crust will becrisp and uniform. The skillet is 9 inches in diameter, and each wedge is 3-1/2inches long and 1 inch deep. The skillet weighs 5-1/2 pounds, must be seasonedby coating with melted shortening and then baked, and needs to be coated withoil or cooking spray after each use to prevent rust. This skillet's weight and care requirements put off some cooks, but, as has beenknown since the Middle Ages, cast iron permits precise baking and flavor- retentive cooking, has a natural nonstick finish when seasoned, and lasts forgenerations (thereby increasing its value). As it blackens with use, cast ironimparts to food a mystical aura of rustic nourishment and flavor. --Fred Brack ... Read more Features Reviews (11)

Cuisinart 5-Quart Everyday Stainless-Steel Stockpot with Lid Average Customer Review: Kitchen (15 September, 2003) list price: $75.00 US | Canada | United Kingdom | Germany | France Editorial Review Tall and narrow to minimize evaporation, this stockpot is designed to simmer stocks, soups, stews, and pasta sauces. With its tight-fitting lid in place, it braises meats, poultry, seafood, and vegetables on top the stove or in the oven. And it functions equally well as a casserole for, say, cassoulet or choucroute. In canning season, it simmers fruits and vegetables. Cuisinart's Everyday Stainless cookware features a bottom disk of copper--cookware's best heat conductor--sheathed in steel to conduct heat rapidly and uniformly, permitting cooking at lower temperatures and preventing scorching. This cookware goes safely into ovens and under broilers, the bottoms don't warp, and it is stain- and corrosion-resistant. Because the handles are welded to the pots and pans, there are no inside rivets to clean around, and the cookware scrubs up hygienically. The mirror-finish 18/10 stainless steel begs to be displayed in an open rack. --Fred Brack ... Read more Features Reviews (5)
This good little stockpot fits the bill very nicely. The copper disk on the bottom acts as a decent heat diffuser, particularly if you follow the instructions and keep the heat on medium or low. The handles usually stay cool enough to drag the pot around on the stovetop (though they will heat up uncomfortably if you've got a full pot on high boil). The shape of the pot (sides almost as high as the pot diameter) means that liquid can simmer overnight without reducing too much, or all evaporating away. The size is small enough to fit on the top rack of the dishwasher, and big enough to make stock from a whole chicken (this past thanksgiving, I boiled up the broken-up frames from two 12-pound turkeys). My only objections to this pot are that the lid is very light, without the heft or deep draw of the All-Clad or Kitchenaid lids, and that the handles are so low down on the side of the pot that it's hard to hang it on my kitchen grid (I have a Heller grid system, with plastic hooks).Considering the price difference between this and the All-Clad, however, that's not a deal-breaker. If you're planning on doing some blanching, you probably want to get the Everyday Stainless pasta set (which is this pot with an insert).Putting the pot itself in cold water will only cause the copper disk on the bottom to separate off: copper is more heat responsive than stainless, and will shrink and grow faster in response to rapid temperature changes. This is the other reason why the higher end pots are aluminum "clad" with stainless for the whole pot, and not just a disk on the bottom.(And for stock, if you know how to care for a pot, it's not worth the extra money).
When I opened the box and felt the wonderful finish for the first time, I was hooked. In terms of the sensual, this is the smoothest, nicest feeling piece of cookware I own. Visually, this piece is a treat.I love the way the brand name is visible on it's side. The fine reputation of this company appeals to the snob in me, and the signature on the pot says I have good taste in cookware.Yes, this is a bit of a joke, but not entirely. I was amazed at how FAST water boils in this pot!Incredible! And the ease of cleaning is fantastic! All stainless steel does in fact get marks and stains, but the finish is so good on this piece, I simply wash and dry it, and put a tablespoon or two of white vinegar in it after cleaning, put the lid on, let it sit overnight, then rinse and dry.Perfect! No harsh chemicals, no scratchy cleansers....This technique does not work on my other stainless steel. The pot is heavy, something I like in cookware. It haswell designed handles that really do stay cool. It serves it's purpose magnificently. It heats evenly, and I assume this is due to the aluminum bottom. I searched for a long time to find a pot of this size by the way.Five quarts is so perfect for s single person household, yet for some reason, stockpots of this size are scarce as hen's teeth it seems. I love this pot! It has me convinced that I want a teakettle made by these people. Thank you Cuisinart for such a beautiful product!

Chicago Metallic Commercial Perforated Pie Pans, Set 2 Average Customer Review: Kitchen list price: $6.95 -- our price: $6.99 (price subject to change: see help) US | Canada | United Kingdom | Germany | France Editorial Review When you are working with a metal pie pan, you can expect your crust to brown quickly. But when you are working with a perforated metal pan, you can expect your crust to be melt-in-your-mouth flaky. The perforations allow air to circulate, which creates fewer air pockets and a fluffier crust. Preferred by professionals, its high-quality aluminized steel is an excellent heat retainer and bakes consistently all the way up the sides of the pan. With the thicker material, you can count on a more lasting durability and less chance of corrosion. It is dishwasher-safe, but if hand washing be sure to use a soft plastic or nylon sponge. Abrasive cleaners or steel wool may damage the quality of your pan. --Madeleine Miller ... Read more Features Reviews (1)

Kaiser Bakeware Patisserie Wooden Rolling Pin Average Customer Review: Kitchen list price: $24.00 -- our price: $24.00 (price subject to change: see help) US | Canada | United Kingdom | Germany | France Editorial Review This traditional wooden rolling pin flattens pastry and pizza doughs quickly and smoothly, but doesn't take up as much storage space as a large pin. Its barrel is 9-3/4 inches long and 2-1/2 inches in diameter, and has ball bearings to ensure smooth rolling with minimal effort. The barrel is unfinished, so flour can fill in the grain during repeated use, creating a nonstick surface. A wood rolling pin should be wiped clean with a damp cloth and dried. --Fred Brack ... For several years now, I've been buying most of my new bakeware on the Internet. When I decided to buy a new wooden rolling pin, I ordered one from a well-known Manhattan commerical restaurant supply. I had to send it back because it was too large and too heavy for me to use. Then I ordered this Kaiser wooden rolling pin, which has the perfect size and weight for me to use when rolling out pie, cookie, biscuit, and pizza doughs. Like all quality rolling pins, it has ball-bearing construction so that doughs roll out evenly. I lightly flour my wooden baking board and rub some on the rolling pin, too, so that the dough won't stick to it when I am making pizza crust. I have a stockinette knit tube that slips over the rolling pin when I use it for rolling out pie dough on my canvas pastry cloth. I rarely wash my wooden rolling pin with soap and water; I just wipe it off after each use with a damp dishcloth and allow it to air dry. Kaiser also makes a great kids' 4 inch wooden rolling pin, which can be purchased separately or as part of a kids' wood accessories set that includes a blending spoon, pastry brush, tasting spoon, and pastry cutter. ...
