    Editorial Review

These heavy, powerful 9-inch poultry shears are Henckels' premier model. Forged high-carbon steel lies beneath their gleaming plate and provides strength. Their blades--one notched to fit around bones, the other serrated to prevent slippage--curve inward so cutting action is smooth and exact. An adjustable screw securing the blades allows them to be taken apart for resharpening. Wash and dry these by hand--the blades' inner surfaces are not stainless. --Fred Brack ... Read more

2-0 out of 5 stars Really hard to hold onto with slippery fingers
They are really pretty, but the handles curve the wrong way. I have large hands but I'm having a really hard time holding onto these against the spring so I'm returning them. (Plus I missed the part where they can't go into the dishwasher. Opps! (Not that I've put them there yet, but I read the care tag that came with them.)

    Editorial Review

There are certain dishes that absolutely require cast-iron cookware, and others that just simply taste better when made with it. Just try throwing an aluminum pot onto the campfire and watching the blisters form or sampling a hearty spoonful of jambalaya that wasn't made in a cast-iron kettle. Fancy alloys and coatings on other types of cookware are simply trying to emulate the innate qualities of properly seasoned cast iron: heat retention, even heat distribution, and a scratchproof nonstick surface that will never warp. Since 1896, Lodge has been steadily producing the world's most extensive selection of professional cast-iron cookware, lovingly poured one piece at a time. Cared for properly, these products will last for generations. --Dominic Johnson ... Read more

5-0 out of 5 stars NO Complaints, Tiny Bit of Advice
After reading the other reviews, there's nothing I can add to better describe the quality and value of this pan.It is HUGE, works great, and is inexpensive.

My ONE bit of advice, spend the extra $4 on the pre-seasoned version. My house smelled like a foundry for days after the seasoning process was done on this pan, it is WELL WORTH $4 not to have to put up with that stink for a few days. Its not a horrible smell, but it lingers.HOWEVER, if the pre-seasoned pan is sold out, dont wait, buy this pan and season it yourself, its not that big of a deal.

5-0 out of 5 stars If you know what cast iron cooking is, there're no negatives
I am surprised by some of the comments here cast as negatives on this pan:
It rusts if left in the sink too long.
    It has to be seasoned.
    I couldn't season it.
    It's so heavy.
    It's not really black, it's a silvery-grey.
It comes with complicated instructions about how to season it.

Well, all of these things may be true. But you know, it is _cast iron_. You really have to want to use cast iron to use this pan at all, and you use cast iron because of the advantages it has--all of which are mistakenly cast as negatives by a few reviewers.

Of course it rusts if "left in the sink too long." It's unfinished iron (before you season it), and iron rusts. You do not leave unseasoned cast iron cookware in the sink at all, ever, for any reason (or in any other constantly wet place). Toss any of your unfinished iron stuff into the sink. It'll rust. Your kid will wrinkle up if left in the bathtub for a couple hours--is this a deficiency in your kid? No, it's the nature of the thing. You're not supposed to leave the kid in there that long! Your nonstick Calphalon will become very sticky, losing its finish, if you keep washing it in the dishwasher. Is that a deficiency in the product? Well, no--as Calphalon says, DON'T DO THAT. "Doc, it hurts when I do this." "Don't do that."

Of course it has to be seasoned. It's... cast iron. And the instructions are a lot more involved than "fry up your bacon and wash any which way." But do you want cast iron or not? If yes, accept that it has to go through some seasoning. And only the first couple treatments are artificially administered as treatments per se--the majority of seasoning comes very easily through normal use and normal washing (for cast iron). So anyone can season it.

(Remember to coat the WHOLE PAN in shortening when doing the oven-seasonings, not just the interior. I have a feeling many complaints about rust, especially on the bottom, are from people who are seasoning only the cooking surface. [And then soaking it in a sink, which you NEVER do.] You need to season the whole pan, inside, outside, handle, everything.)

It's not black? Well, yes--when it's not seasoned. Seasoning improves with use of the pan over time (and proper care), and that black color develops. It starts out grey; after the first oven-seasoning with shortening it may be a brownish color; after a few months of use a dark brown; eventually nearly black--and that is beautiful.

So how do you care for and clean it? Well, until it is fairly well seasoned, you NEVER let it sit in water for any amount of time. ANY TIME AT ALL. You don't soak it. You don't dishwasher it. You don't suds it up. You don't set it in the sink.

You let it cool, and then you clean it with very hot water and a brush--a plastic brush should do--to scrub the food off. (Not a hard abrasive plastic or steel pad or brush. Just a good stiff plastic bristle brush.) If you need any extra abrasive power at all (rarely will you), use salt as a scrub. Then you towel-dry it well, and then put it on a burner at medium for four or five minutes (I always set a timer). Occasionally, you may want to give it a fine coat of oil or shortening; I put a little on, let it sit, and then wipe it clean.

Over time, the iron will become pretty well sealed and the pan nearly black (the cooking surface will be black). And it will be nonstick.

This is cast iron. It's great stuff. And yes, there is some user-participation involved. But for the benefits of cooking with cast iron, they're worth the trouble to many who cook.

5-0 out of 5 stars The pan to end all pans
I have one of these and it's my favorite piece of cookware. It's durable enough that it will last you a lifetime, so it's about the best value you can find in a piece of cooking gear. I use mine just about every meal I cook. There is a 'grill pan' version of this that is also quite useful.

    Pros:

    - you can use it both on the stovetop and in the oven
    - after a few uses, it's basically non-stick
    - retains a lot of heat, meaning it's great for searing, stir frying, etc. other pans lose all their heat on contact with the food
    - no teflon, which is harmful to humans and pets
    - heavy, so it stays put on the stovetop

    Cons:

    - you MUST season it
    - it's heaviness means it is not good for cooking omlettes or anything you might want to flip in the pan
    - it's cast iron, so it will rust if left in the sink too long
    - not dishwasher safe ... Read more

    Editorial Review

The Cook's Illustrated Complete Book of Poultry is, bar none, the Great Mother Hen of all poultry cookbooks. If it is incomplete in any way, it is only that the editors have not included poultry recipes from absolutely every culture in the world familiar with the birds. But with this book tucked under your wing, you can check out poultry recipes in cookbooks from all corners of the globe and know exactly how to get the results you want. Thanks to the Cook's Illustrated magazine test kitchen, all possible contingencies have been exhaustively covered.

There are 38 chapters in this book, starting with a guide to buying poultry (the more expensive birds are better than their commercial sisters) and ending with a note on smoking. You won't even get to Chicken Salad until chapter 23. You will find nearly 500 recipes, the perfect roast turkey among them. There are 300 pen-and-ink illustrations demonstrating everything from carving a bird to getting the pit out of a mango. Want to know which is the best canned chicken stock? The best countertop deep fryer? The best roasting rack? The best way to sauté chicken cutlets? It's all in here, in meticulous detail. That stir-fry that has always given you trouble? It's a thing of the past. Always felt intimidated by duck? Forget about it.

Plan on getting lost in The Cook's Illustrated Complete Book of Poultry once you open the cover. You will surface only long enough to go to the grocery store. Your life will never be the same. It's that kind of book. --Schuyler Ingle ... Read more

5-0 out of 5 stars Everything you ever wanted to know about "the bird"
Great book for cooks of all levels for everything from how to cook chicken/turkey, soup, stews, and ideas for left-overs.Similar format to the Best Recipe book in the many tests were done for the best recipe.Included are not only recipes, but ideas for modifications, how to turn over a bird that is cooking, and what flavors go well together. This was a gift to my husband and I - we have used it a great deal find it helpful for everything from ideas to practical questions.A great gift for cooks.

4-0 out of 5 stars Better Holiday Dinners Mean a Better Turkey...
Last week me and my boyfriend made the basic roast turkey recipe and it was the best turkey I ever tasted. The skin is cooked crispy but not burned. The meat, even the white meat is juicy and tender, and the gravy compliments the bird so well you'll want to make turkey every week. Some may be discouraged that you need to soak the turkey for 12 hours beforehand, but believe me, the end result is worth it.

This book is worth buying just for the praise you would get on holidays from making this recipe.

4-0 out of 5 stars Definitely a book on chicken.
If you like chicken, you'll love this one. It's a good one for the library as are all CI's works. If you're familiar with them, then you know what to expect.

I agree with the previous reviewer about the index not only of this book but all of the Cook's Illustrated books. For having such high standards, they really should correct this problem. I don't have this issue with any other books in my library and it's extremely annoying coming from them especially. ... Read more

This impressive appliance is designed to be easy and safe to use, clean to operate and wash, and produce exceptional food. It delivers on all accounts. The detailed instructions lead you through the process of heating oil to the correct temperature, then lowering the frying basket into the oil as the lid remains closed. This means that odors and mess are kept inside the fryer.

    A Better Frying Experience

The D895UX features a patented rotating basket. This titled rotating basket revolves the food through the oil provides. The end result if that it allows you to use half the amount of oil normally required--without sacrificing anything in taste. The whole process makes surprisingly nongreasy food because the oil is heated evenly to the correct temperature. You end up with healthier, but still scrumptious, fried foods. And, the windowed lid allows you to monitor the cooking process safely.

    A Host of Great Features

The fryer has a non-stick interior that is easy-to-clean, while the adjustable thermostat with indicator light allows you to set frying temperature from 300 to 370 degrees, giving you the flexibility to fry foods jus the way you like them. A built-in digital timer with bell can be pre-set; a viewing window lets you check on the food while it's cooking. Safety is built in--the sides of the fryer remain cool, and the hot oil stays inside, and non-slip feet keep fryer in place. When the food is done, there’s an exterior lift handle that makes it easy to raise or lower the basket with the fryer lid closed to prevent splattering. The 1.5-pound capacity accommodates ample French fries, calamari, or tempura for four.
    Easy Cleanup

DeLonghi gives careful attention to cleanup. Forget dealing with messy, hot oil.The ingenious easy clean oil drain system makes draining and recycling cooking oil safe and easy.Simple open the door on the front of the unit and drain. A tube unfolds from a hidden compartment and efficiently drains the oil so that it can be used again--a system that's both easy and clean. The lid and frying basket are dishwasher-safe. There are two replaceable filters--dual filtration prevents the release of oil vapors and odors in the kitchen—and a detachable cord with patented condensation shield. For safer operation, the magnetic cord easily detaches from the fryer if accidentally pulled. This unique safety feature is designed with a patented condensation shield to prevent dripping onto the cord connection. 4-0 out of 5 stars temperature sensor
This is an excellent deep fryer except for one thing:the temperature sensor is not sensitive enough, nor accurate enough. When set at the highest, 370 degrees F., the sign on the fryer indicates 15 minutes is necessary to come to this temp. The light goes out in 5 minutes, at 360 degrees (two separate thermometers used to check). After 15 minutes, the temp does indeed nearly reach 370 degrees, but the sensor shuts off the heat which drops the oil to 340 degrees before the sensor light comes back on to indicate the heating element is working again. It messes up the crispness of my calamari which should only take 2 or 3 minutes...limp squid.French fried potatoes are fine, since so much more time is involved that the oil can recover and do the job.Cleaning is a breeze and the rotary function is a real plus.

2-0 out of 5 stars Very Disappointed
After using it around 10 times, I've found that it ceases to rotate probably 1/2 the time. It has a very small capacity (can't cook enough chicken fingers for a family of four). Also, the basket is NOT non-stick, so the food sticks to the basket and is difficult to remove.Clean up is fairly easy, that's the only positive thing to be said.As mentioned, there is no recipe book included, which was vexing.Save your money, this is disappointing in all aspects.I've had it for less than 2 months and am looking to replace it already.

5-0 out of 5 stars One Problem
This is a great little fryer, but would be difficult to use for a family more than 2, in my opinion. The fryer works fantastic and I only have one complaint. There is an area on the rear of the fryer that collects oil and is difficult to clean.Imagine opening the lid and having all the moisture run to the back hinge of the lid.The oil that collects doesn't get into any hinges, but it collects in a small crevice that should be easier to clean. It's a small nuicance though since the fryer really works great. Also, the top does detach from the base which makes is very easy to clean.

This is in regards to the reviewer who said the fryer has poor performace with battered foods. If you put your battered items in the basket and then drop it in the oil and don't stir it, then yes, you will have a mess as he says... However, this is easily worked around. In order to cook battered foods successfully, you need to drop the basket in the oil first, and then place your battered foods in the oil. This may sound a little dangerous, but if you're gentle, it's no problem at all.I've done it many, many times and have never had a problem as I batter A LOT of foods. Now, with this process they will still stick to the wire basket as he mentions, but it is MUCH less, and then once the item is in the basket you can use steel tongs to move it a bit to keep it from sticking. As long as you do this in the first few seconds, it won't stick and the rest of the frying goes flawlessly. If it sounds hard or like a lot of work, it isn't; it's actually quite easy.I batter shrimp, veggies, & oysters, and even though they do get a little stuck sometimes, it's nothing major, and it certainly does not "destroy" the food as he mentions. ... I'm kind of quirky - I have to get ALL the fat off of the chicken before I cook it.With a knife, my chicken usually looks "hacked up" when I'm done. With these shears, the fat is easily removed, and the chicken still looks beautiful!I highly recommend this timing saving product!

    5-0 out of 5 stars For the Poultry Surgeon . . .
These Sabatier poultry shears have four great features (among others): (1) Made in France, by Sabatier, a 160-year-old house of cutlery design and manufacture; (2) Ergonomic--your hand doesn't get cramped from cutting up large amounts of poultry; (3) Hygienic--they go in the dishwasher, so any Salmonella or other bacteria are eliminated; and (4) Great Buy.

My J.A. Henckels's chrome-plated poultry shears are beautiful but so hard to sanitize because they cannot go in the dishwasher. 5-0 out of 5 stars Great cooking the way it used to be.
OK, so all of us have steered ourselves away from fried foods & towards poached chicken breasts (skinless, of course) and steamed vegetables. How about just a little taste of good eating from the past? No one is recommending a return to deep-fried foods as an everyday meal, but the taste treats in this book are just too good to ignore!

Rodgers'chatty writing style and well-tested recipes combine to provide accurateand easy-to-follow instructions.Since working with a deep fryer issomething that many us have not done in years (if EVER!), he providesdetailed background info on the types of equipment available, differentvarieties of oil & shortenings, and many good tips to avoid excessgreasiness and off-tastes in cooked foods.Appetizers, entrees, anddesserts are all covered, with great photos of completed items.

Some ofthe recipes are incredibly simple, such as the Cornish game hens (hens, oil, lemon, salt, pepper) and can be prepared in under 15 minutes.Othersare a little more involved, but well worth it (the apple fritters, withjust a light dusting of powdered sugar, are fantastic). There's even afoolproof recipe for doughnuts with a cider glaze--great for weekendmornings!

I have to say it again--I'm not going to be cooking deep friedfoods every day, but when I want to prepare something just a little bitspecial, this is a book that I will turn to time after time. ... Read more

The straight sides even make it ideal for tossing and sautéing. Tight-fitting and banded with stainless steel, the tempered glass lid lets you monitor food as it cooks while locking in flavor and nutrients. Unlike most nonstick surfaces, the Quantum cooking surface is durable enough for use with metal utensils. Soft, ergonomically designed handle and lid knob are easy to grip and stay cool to the touch, while the helper handle assists with balance and control. Be sure to hand wash this fryer. Comes with 25-year warranty on cookware and nonstick coating. --Victoria Jenkins ... Read more

5-0 out of 5 stars The Best Frying Pan I've Ever Owned-Really!
I bought this OXO pan from Amazon.com back when it was regularily priced around $42.00. I was hesitant to buy at that price but gave it a try. Even at that price I am thankful I purchased it. At the clearance price it's at now, it's an absolute steal-buy it while you can.

The pan is a generous 12 inches in diameter, with the walls standing at 2.5 inches high (measured from the inside). The 8-inch long handle is made of stainless steel and is covered with that soft, black rubber OXO grip that we all have seen. At the end of the handle there is a d-shaped hole for hanging. There's a "helper handle" on the opposite side from the main handle to assist in lifting the pan if it's too heavy. The lid is made of tempered glass, comes with an OXO soft grip handle, and has an aluminum metal ring around the edge where it meets the pan.

The hard anodized aluminum body of the pan is considered to be a medium to heavy weight. The inside non-stick surface cleans like a dream. This pan puts my set of T-Fal to shame. The pan heats up quickly and distributes heat evenly, all on a medium heat. This OXO 12-inch Chicken Fryer isn't just for frying chicken. Buy it and it will quickly become your favorite all purpose pan. ... Read more

    Editorial Review

The Instant Marinader is perfect for marinating, storing, poaching, and steaming foods. To marinade, simply place your meat and marinade inside the dish, close the lid tightly, insert the pump, and pull the air out. The vacuum will cause the pores of the meat to open, allowing the meat to quickly soak in the marinade. The Instant Marinader is also great for storing foods because the vacuum helps keep meat fresh and vegetables crisp. It comes with a removable rack for poaching fish and steaming vegetables. The Instant Marinader is freezer-, microwave-, and dishwasher-safe. --Jane DePaolo ... Read more

Accurate to a tenth of a degree, this Pyrex digital thermometer takes the guesswork out of cooking by temperature. Made with a durable stainless-steel probe, the tool has an easy-to-read display that delivers readings from -50 to 392 F (-45 to 200 C) with a one-second delay. The plastic storage case doubles as a perpendicular holder so you can keep your fingers away from the heat source. It also includes an apron clip and a basic temperature guide for cooking meat. Simple buttons turn the power on and off and switch between Fahrenheit and Centigrade. Pyrex includes an extra battery. --Emily Bedard ... Read more

2-0 out of 5 stars Accurate but a display issue.
Very accurate thermometer. However I do not think it has an automatic cut off regarding power.Mine is now useless as far as display, I think the battery has gone dead.If a calculator has an automatic turn off mechanism, why not this?

4-0 out of 5 stars Works as Advertised
Instant is not quite accurate, but if your willing to wait 3-5 second, it will give you a reading.I checked it against the tap water (hot & cold) and it appeared to be accurate. Postive features:
    * Provided 2 batteries in the package
    * Quick reaction time to final temp
    * Was able to fit the second battery inside the case
    * The protective sleeve doubles as a holder (holes in the side take the probe so holde is perpendicular to the probe)

    Overall, slick, fast, good price.

Down side, I thought instant read meant instant read, to me that is 1 second or less.Oh well.

3-0 out of 5 stars Display Problems
I have similar problems with the display. It hates moisture.I bought this thermometer for use in homebrewing applications where it is necessary to hold ingredients at precise temperatures for extended periods of time...As soon as the steam rising up from the pot hits the thermometer, the display fades out and you can't read it... remove it from the steam and it works fine, at least for awhile -- but if you keep putting it back in the steam, eventally it will get too moist and you have to wait for it to dry out. ... Chef's Choice 9-Inch Poultry Shears
    Kitchen
    list price: $68.99
US | Canada | United Kingdom | Germany | France

    Editorial Review

These ultrasharp shears are designed especially for cutting quickly and safely through poultry. Fully forged from an ultrahigh-carbon stainless metal alloy, the shears feature molded-on black molten polymer handles for a nonslip grip. Made from a unique alloy called Trizor steel, these shears have a higher carbon content than other kitchen knives and shears, giving them a higher tensile strength, which makes them stronger and more resilient. The ultrasharp blades come out of the box 2 to 3 times sharper than other scissors, and the edges last up to 10 times longer than those of other brands. Even so, the shears can be sharpened with conventional sharpeners. Molded-on handles are safe in the dishwasher, but hand washing is recommended to keep steel blades scratch free. --Doree Armstrong ... Read more
