    Editorial Review

There are certain dishes that absolutely require cast-iron cookware, and others that just simply taste better when made with it. Just try throwing an aluminum pot onto the campfire and watching the blisters form or sampling a hearty spoonful of jambalaya that wasn't made in a cast-iron kettle. Fancy alloys and coatings on other types of cookware are simply trying to emulate the innate qualities of properly seasoned cast iron: heat retention, even heat distribution, and a scratchproof nonstick surface that will never warp. Since 1896, Lodge has been steadily producing the world's most extensive selection of professional cast-iron cookware, lovingly poured one piece at a time. Cared for properly, these products will last for generations. --Dominic Johnson ... Read more

5-0 out of 5 stars NO Complaints, Tiny Bit of Advice
After reading the other reviews, there's nothing I can add to better describe the quality and value of this pan.It is HUGE, works great, and is inexpensive.

My ONE bit of advice, spend the extra $4 on the pre-seasoned version. My house smelled like a foundry for days after the seasoning process was done on this pan, it is WELL WORTH $4 not to have to put up with that stink for a few days. Its not a horrible smell, but it lingers.HOWEVER, if the pre-seasoned pan is sold out, dont wait, buy this pan and season it yourself, its not that big of a deal.

5-0 out of 5 stars If you know what cast iron cooking is, there're no negatives
I am surprised by some of the comments here cast as negatives on this pan:
It rusts if left in the sink too long.
    It has to be seasoned.
    I couldn't season it.
    It's so heavy.
    It's not really black, it's a silvery-grey.
It comes with complicated instructions about how to season it.

Well, all of these things may be true. But you know, it is _cast iron_. You really have to want to use cast iron to use this pan at all, and you use cast iron because of the advantages it has--all of which are mistakenly cast as negatives by a few reviewers.

Of course it rusts if "left in the sink too long." It's unfinished iron (before you season it), and iron rusts. You do not leave unseasoned cast iron cookware in the sink at all, ever, for any reason (or in any other constantly wet place). Toss any of your unfinished iron stuff into the sink. It'll rust. Your kid will wrinkle up if left in the bathtub for a couple hours--is this a deficiency in your kid? No, it's the nature of the thing. You're not supposed to leave the kid in there that long! Your nonstick Calphalon will become very sticky, losing its finish, if you keep washing it in the dishwasher. Is that a deficiency in the product? Well, no--as Calphalon says, DON'T DO THAT. "Doc, it hurts when I do this." "Don't do that."

Of course it has to be seasoned. It's... cast iron. And the instructions are a lot more involved than "fry up your bacon and wash any which way." But do you want cast iron or not? If yes, accept that it has to go through some seasoning. And only the first couple treatments are artificially administered as treatments per se--the majority of seasoning comes very easily through normal use and normal washing (for cast iron). So anyone can season it.

(Remember to coat the WHOLE PAN in shortening when doing the oven-seasonings, not just the interior. I have a feeling many complaints about rust, especially on the bottom, are from people who are seasoning only the cooking surface. [And then soaking it in a sink, which you NEVER do.] You need to season the whole pan, inside, outside, handle, everything.)

It's not black? Well, yes--when it's not seasoned. Seasoning improves with use of the pan over time (and proper care), and that black color develops. It starts out grey; after the first oven-seasoning with shortening it may be a brownish color; after a few months of use a dark brown; eventually nearly black--and that is beautiful.

So how do you care for and clean it? Well, until it is fairly well seasoned, you NEVER let it sit in water for any amount of time. ANY TIME AT ALL. You don't soak it. You don't dishwasher it. You don't suds it up. You don't set it in the sink.

You let it cool, and then you clean it with very hot water and a brush--a plastic brush should do--to scrub the food off. (Not a hard abrasive plastic or steel pad or brush. Just a good stiff plastic bristle brush.) If you need any extra abrasive power at all (rarely will you), use salt as a scrub. Then you towel-dry it well, and then put it on a burner at medium for four or five minutes (I always set a timer). Occasionally, you may want to give it a fine coat of oil or shortening; I put a little on, let it sit, and then wipe it clean.

Over time, the iron will become pretty well sealed and the pan nearly black (the cooking surface will be black). And it will be nonstick.

This is cast iron. It's great stuff. And yes, there is some user-participation involved. But for the benefits of cooking with cast iron, they're worth the trouble to many who cook.

5-0 out of 5 stars The pan to end all pans
I have one of these and it's my favorite piece of cookware. It's durable enough that it will last you a lifetime, so it's about the best value you can find in a piece of cooking gear. I use mine just about every meal I cook. There is a 'grill pan' version of this that is also quite useful.

    Pros:

    - you can use it both on the stovetop and in the oven
    - after a few uses, it's basically non-stick
    - retains a lot of heat, meaning it's great for searing, stir frying, etc. other pans lose all their heat on contact with the food
    - no teflon, which is harmful to humans and pets
    - heavy, so it stays put on the stovetop

    Cons:

    - you MUST season it
    - it's heaviness means it is not good for cooking omlettes or anything you might want to flip in the pan
    - it's cast iron, so it will rust if left in the sink too long
    - not dishwasher safe ... Read more

    Editorial Review

Chefs will tell you what your grandmother already knew: nothing beats cast-iron cookware for durability, conductivity, even heat distribution, and value. Season cast iron properly and foods won't stick either--no need for a synthetic nonstick coating that might peel or crack. Cast iron even adds iron to the nutritional content of a meal, just like your grandmother said. Made by Lodge, one of the oldest and most trusted names in cast-iron cookware, this 7-quart Dutch oven is built like a Sherman tank, with a sturdy handle and a heavy iron lid with a textured surface for braising. On the down side, the Dutch oven is heavier than a box full of bricks, but think of it as cookware and weaponry rolled into one. Be sure not to use dishwashing liquid on seasoned cast iron, and towel dry and coat with a light layer of oil after washing. Never leave cast iron sitting in water, because it will rust. If you treat your cast-iron cookware properly, your own grandchildren will still be using it when that fancy aluminum-alloy pan is long gone to the great yuppie kitchen in the sky. --Mary Park ... 5-0 out of 5 stars Lodge Lives Forever
Cast Iron is ALWAYS a good value for the money and it's indestructible (I'm still using my mother's Lodge skillet that she got for a wedding gift in 1954). This dutch oven goes from the table to the campground with ease. It stews and bakes beautifully - get a dutch oven cookbook and learn how to make campfire biscuits as well as those stews and chilis at home! Cast Iron still manages to look dressy on a table and you can tote it from your stove to the church potluck! Also makes a fabulous wedding, shower, or housewarming gift. Forget expensive wedding registries - buy the bride this Lodge Dutch Oven and Lodge Cast Iron Skillet. She'll hand them down to the next generation. Also great for those kids who just moved into their first apartment - they'll never destroy THIS piece of cookware no matter what they burn! A must have for EVERY cook.

5-0 out of 5 stars Pre-seasoned is a plus, but not necessary.Fabulous Oven!
This Dutch Oven is a workhorse in my kitchen.I purchased it pre-seasoned because I've never had a factory-seasoned piece of cast iron cookware.Bottom line:While the pre-seasoning was a plus, it's not necessary.Just follow the seasoning instructions that come with all the Lodge cookware, and you'll be fine.

My family has had cast iron for generations, and I won't pay the exhorbitant prices for those "upscale, professional" dutch ovens that are all the rage these days. This Lodge oven browns spectacularly, and while the dark interior may not show the developing fond as well as a lighter one, that's not a problem if one simply uses one's nose.We can all tell when enough is enough...

I particularly like the spikes on the lid of this oven which aren't present on the more expensive ones. These spikes allow condensation to fall back only my roasts while they cook and I don't have to worry about a dry product. The lid on this oven also fits the 12-inch skillet which I own, and that's a plus.It conducts heat well and when I use it camping as an oven, breads and biscuits come out as well as at home.

Yes, it's heavy, but that's the nature of cast iron, no??If you want something lighter that comes close to the quality of this Lodge piece, be prepared to shell out big bucks.

5-0 out of 5 stars Lodge is the best !
This was my first cast iron cooking vessel.I just love the thing (tho' it is a little heavy for my 5 foot 1', 100 pound frame- in addition to cooking, it provides a really good daily workout).I have found this dutch oven to be so versatile that I cook almost everything in it.I am Indian and love cooking, and have cooked Indian, American, Chinese, Mexican food, and my own creations in it.It just keeps going from electric stove, to oven to dining table, and takes all of the abuse (I have used it to cook acidic foods like tomatoes, lemons, etc., alkaline foods, neutral foods, even Indian spices like turmeric do not destroy it- turmeric can spell doom for a lot of cookware).I have even used it on the stove top to cook cornbread and Indian flatbreads (my expensive non stick skillet did not survive the Indian flatbread cooking). ... Lodge 3-Quart Cast Iron Chicken Fryer with Iron Lid

    Editorial Review

Lodge has been making cast-iron cookware for over 100 years. And thanks to cast iron's excellent durability, some of the original pans are probably still around. It's not hard to see why cast-iron pans are the ones most often passed down from generation to generation--nothing can dent, warp, or bend their heavy construction. This 3-quart cast-iron chicken fryer consists of a 3-inch-deep fry pan, which works with any dish that requires a wide, deep cooking surface, and a tight-fitting lid to protect you from splatters. Cast iron has excellent heat retention, so you don't need to cook over high temperatures. Also, unlike many cooking surfaces, it actually becomes more stick-resistant as it ages and develops its characteristic dark finish. If you're concerned about nutrition, cast iron has been proven to safely add iron to food. Because iron can rust, this pan should not be immersed in water for long periods, and it should stay out of the dishwasher. Just wash it with soap and water and quickly dry, avoiding abrasive cleaners. --Laura Cuthbert ... Read more

3-0 out of 5 stars Pop for the extra couple dollars!
It's a pan, we cook in it, but it took forever to get rid of the metallic taste in our food (yes, we seasoned it per the instructions). We know now that we shold have put out the few bucks more to get a pre-seasoned pan.

5-0 out of 5 stars Love it as a coffee bean roaster, not a chicken fryer
I think this chicken fryer is a good idea, as is any cast iron skillet for chicken, but it's too small to fry chicken in the amounts we fry it in.It can barely fit two of our home grown chicken breasts, or three of the smaller, store-bought ones. It works well for making something like almond chicken, when it's not as important for the chicken pieces keep their distance from each other. I don't think it's necessary to have a lid to make fried chicken.Ours turns out wonderfully, cooked in a regular old huge cast iron skillet. We don't use a slow cook method (35-40 minutes, Betty Crocker, are you kidding me?), and the chicken comes out juicy, even without a lid.

The reason I give this skillet five stars is that I do LOVE it for roasting green coffee beans. The high sides are very helpful... I can get almost a pound of beans roasted with my method of continuous stirring, and I hardly lose any over the sides. When it's my husband's turn to roast, he uses the lid and heavy duty oven mitts and shakes the whole pan at intervals. We both think that roasting coffee would be a real hassle without this particular pan.The oil that comes from the coffee beans makes a wonderful pan seasoning, too.We re-season all our cast iron (when we need to just re-season the bottom of the pan, not for the initial seasoning) by roasting coffee beans on the stovetop.

5-0 out of 5 stars Another must have in the kitchen
I have a family of 5 and we use our fryer almost weekly.Works great for bacon to keep your stove top cleaner and anything else you want to cook. ... Read more

This knife sets combines high performance and durability with desirable safety features. The key to this combination is the blade. Blades are made from high-carbon stainless steel, which resists rust and discoloration. The edges are hand-ground to Chicago Cutlery's exclusive Taper Grind edge, which tapers gradually for a smoother performance than traditional blunt angles. For added safety, the blade extends through the handle and is held firmly in place by three brass rivets. The walnut handles are ergonomically designed so you can face a marathon chopping session. This set includes two 3-inch paring knives, a 5-inch utility knife, a 6-inch utility knife, and 7-1/2-inch fillet knife, an 8-inch carver, an 8-inch chef's knife, and a 10-inch bread knife. 1-0 out of 5 stars An investment? That's funny.
Brass rivets expand and contract. Wood expands and contracts. Together these elements are a bad concept from the word "go", because they will ultimately separate because someone will at one time or another put them in the dishwasher. The metal is only tempered 4 times leaving the metal soft, meaning there is a lot of sharpeing to do. Henckel, cutco, trident are expensive and chefs all over the world use them because the are used everyday and they retain their sharpness because they are tempered 7 times (the maximum amount before metal becomes so hard that it becomes brittle)

Wood is pourus and is the perfect breeding ground for bacteria. You don't just wipe off knives and put them in a wood butcher block? What moran came up with that great concept? Utensils need to be sterilzed through a dish washer and very hot water with good cleaning agents.

Why woould you buy a knife that you can't put in the dish washer? Why would you ever purchase a knife that requires maintenance. There's no moving parts

Wood handle and stainless steel spells disaster. Learning to sharpen your own knives is not easy, chefs don't even do it. Reading direction from a pamphlet and attempting to sharpen your knives for the first time spells disaster. Your knives will never be the same if you attempt this. Companies sell sharpening tools to inexperienced knife sharpeners (like yourself) so they wreck their own knives and buy new. You buy clothes that require dry cleaning, correct?bring your knives in and have them professionally sharpened and protect your investment. You should only buy one pair of knives in your lifetime and they can be handed down from generation to generation.

A dull knife is a dangerous knife. A dull knife will require more pressure which will lead to a person cutting themselves.

Take it from me. I was a CEO with a company who marketed these knives to people like you and we made alot of money too. These knives were never designed to be passed on from generation to generation.

5-0 out of 5 stars Premium steel between two wooden handles
I've had my set for maybe 20 years or more. I have an electric knife sharpener and every few months I run them all thru it. I use the steel on them every two or three times I use them and they are always superbly sharp. Being a lazy bachelor I run them thru the diskwasher. I'm not going to baby them, would rather buy a new set every few years, but haven't had to. Wood is white with age and a few cracks here and there but still holding up just fine. People who complain about these knives aren't doing the bare minimum to keep them sharpened. This is superb steel.

5-0 out of 5 stars Knives the way they should be made.
These knives are made the way I wish all of my knives had always been made. They require the use of steel and occassional sharpening and oiling.Relatively speaking, they're high maintenance knives ... yet I have tried many knives that are far more expensive and haven't found one that matches the cutting ease nor good balance. The maintenance is the price you pay to have knives that are of such high quality, and I wouldn't take them any other way. While the blade will not hold an edge as long as some others, when well taken care of it will outlast the others and the edge will be sharper than all others out there, a result of their using high carbon non-stainless steel, a metal not used in virtually any other knives, and certainly none of this quality. ... If you're preparing shrimp and hate deveining them, this is the tool to get. Not really "veins," the dark line on the outside of a shrimp is actually its digestive tract - so if you eat it, you're basically eating shrimp excrement. Put that in your cocktail sauce!Still, this is a delicate little cord that you don't want breaking up into pieces, but just yank out quickly and get on to the next shrimp. This tool does just that, and ergonomically fits your hand.

I would definitely recommend this product!

Seriously, I got a set of these recently, and they have made all the difference in my chicken marsala. My old tongs are single-piece molded rubber, designed for use with non-stick cookware, and twist something awful when trying to handle any but the lightest ingredients. As someone else pointed out, these stainless steel tongs are no good for non-stick, but I have been getting away from non-stick anyway, ever since discovering Calphalon Commercial Hard-Anodized cookware.

The wide, flat head of these tongs allows breaded foods to be gently lifted from the cooking surface without tearing the breading, and the hinged metal arms prevent torque. The lock mechanism is great, and allows you to put the tongs down just about anywhere without having to deal with splayed-out arms while cooking. As far as cleanup, I've been scared to put mine in the dishwasher, but manual cleanup is very easy, and I have yet to see food stick to the business end of this great product.

4-0 out of 5 stars simply put...
Good tool. Well thought out lock.Keep away from your non-stick cookware though. There are siliconized or plastic coated tipped tongs out there for use there.Very nice, very handy.Get them.

5-0 out of 5 stars Sturdy with a great locking mechanisim
These tongs a little more expensive, but they won't "twist" on you the way that cheaper tongs will when you try to pick up and flip a heavier item. The great locking mechanisim, which means never having to deal with sliding rings again, is worth the price of admission.I've used these tongs (and their longer 16" cousins) for everything, including grill duty, for about 3 years and they're just as good as new. ... Editorial Review

It's easy to prepare recipes ahead of time in this long, deep, oval baking dish: take it right out of the freezer, put it in a cold oven, then heat as high as 500 degrees F. Or use the dish under the broiler or in the microwave--you can almost hear the cheese and cream bubbling in the potatoes au gratin. You can even serve directly from this colorful, pleasing cookware, making a statement with both food and style. The easy-to-clean enameled stoneware resists chipping and staining, and will not absorb odors or flavors. Its generous, sure-grip handles make it easy to carry a hot dish from oven to table. --Schuyler Ingle ... Read more

    1-0 out of 5 stars Amazon's Misrepresentation
In the product detail, Amazon states that this product was made in France, as it should since this is a trademark French brand name, so I ordered one.

But the actual product I received was made in Thailand. I contacted Amazon for a resolution since I placed this order with a promotional certificate. I received extremely unprofessional and ignorant responses only containing their lengthy return policy and they completely avoided my inquiry of the misrepresentation of the country of manufacture.

I also purchased a $200 Panasonic Drill that advertised by Amazon as made in Japan, but in fact was made in Mexico. I also wrote to Amazon about the misrepresentation, I have never received any response at all.

I think many customers would simply not have made the purchase had they known the misrepresentation of such nature. Since the return for such heavy items are very inconvenient. Some will just settle even when they deserve a better solution. Shame on Amazon for such misrepresentation and intentional avoidance to correct the mistake.

5-0 out of 5 stars This will become your favorite dish!!
This is the nicest casserole dish ever! It's big and sturdy and cleans up SO nicely and being made by Le Creuset that is quality you can count on to last you a very long time. I own several pieces of this line and highly recomend them to anyone who insists on a good quality product.

5-0 out of 5 stars Stylish and Functional!
If you're looking for a casserole-type dish that's both functional and stylish, this is an excellent choice. What I like best about it is its ability to literally go from the freezer to the oven and then to the table.....food stays hot for a minimum of 30 minutes too.I've made many lasagnas/casseroles and desserts in mine, and it's held up very well....no visible burns or scratch marks (and it's been subjected to enduring high heat and many cutting utensils). Also, cleanup is surprisingly easy with or without using a cooking spray beforehand. Now I know why Le Creuset is as reputable as it is.Buy it for its functionality, and enjoy it for its good looks. ... Editorial Review

If you're not sure why you need a square spoon, think about it while you're stirring a sticky batter or sauce. The straight bottom edge allows you to scrape the bottom of a pan or bowl to ensure that nothing is sticking, and the angled corner reaches into tight places. In addition to its effectiveness with sticky dishes, this wooden spoon won't scratch your nonstick cookware. Made by an Amish company that's produced kitchen tools since 1837, the spoon is finished with a light coat of mineral oil to keep it from drying out. The wood won't stain or absorb odors, and its thick handle won't warp or bend, no matter how vigorously you stir. If you want to show off this finely crafted utensil, there's a small hole in the handle for hanging. To protect the beauty of the wood, the spoon should stay out of both direct sunlight and the dishwasher. --Laura Cuthbert ... Read more

5-0 out of 5 stars square design for scraping, hollow bowl for sipping
This is what wooden spoons are designed to do:stir, scrape, and occasionally ladle. Finally, a spoon that can scrape into those squared bottoms of your stockpot! A must for spaghetti sauce, beans, etc.

The maple wood holds up well, very little fuzzing and no cracking after a year of use. If you can't find this or one like it on Amazon, find it in a retail store like I did.

4-0 out of 5 stars Nice BIG spoon...
The spoon is a pretty good value. It's a nice shape and seems to be very sturdy. Keep in mind that the spoon is quite large. It reminds me a little of an oar for a kiddie rowboat. :-) It probably isn't the best tool for working with small batches, but it's a good tool for working with big batches. ... Read more

5-0 out of 5 stars No splitting issues
I was concerned about splitting after all the reviews I read. I called Catskill Craftsmen direct, and they informed me that the splitting issues were the result of poor storage and improper care. When I purchased mine, I oiled it regularly (twice a week for the first month) and stored it upright on its edge. I haven't had an issue at all. You can't put this through a dishwasher or not oil it in very dry climates. Living in Louisiana, I was a little worried, but my chopping block is fine. Plus Catskill told me to call them direct with anymore issues. Great chopping block, great customer service!

1-0 out of 5 stars Another one bites the dust
Mine lasted a little longer than some of these others, but I still haven't gotten the use out of it I'd expected. It developed a 4 inch long crack along a seam after 3 yrs.Very disapointing, and judging by the other comments a common cause of failure.

Yes, this cutting board looks great and is wonderful to use, but bottom line: it failed after 3.Buy something else!

2-0 out of 5 stars Split within a year
I purchased this block in Dec. 2002.We moved into our new home in January 2003 and this block split in two places by the end of 2003.We treated it exactly as it says - lots of mineral oil and only occasional washing.Disappointing, now I am inclined to buy a thinner cutting board. ... Read more
