4-0 out of 5 stars Great Book, Not So Great Recipes!
Although this book gives excellent tips on the techniques and 'know how' of canning, the recipes are quite lacking in exact measurements.I have now made three of the recipes in this book and have had to modify all three.For example, the recipe for Cranberry Orange Relish calls for a full cup of vinegar.After following the recipe exactly it ended up tasting like a bad, vinegary wine.Next time I will decrease the amount of vinegar by 1/2 a cup.

I'm not sure if anyone actually tried out these recipes before deciding to publish them in a book but if they did, their idea of a good relish is not the same as mine.

This was otherwise a great book with great tips and techniques.Just make sure you do a test batch first so you know what needs to be changed in the recipe!

This book is very thourough. The step-by-step instructions on what to do and what NOT to do are idiot proof. The book explains everything you would need to know to properly can foods. I recommend it for first time canners such as myself. The only downside-not many recipes. Also I only have a water bath canner and nearly half of the recipes are for a pressure canner. I did make some excellent Berry Jam from the book and it turned out perfect. (the first time too) A great book for beginners ready to dive in and can to their hearts content.

I am new to canning, but not new to dabbling in the kitchen, so I felt it was time to learn. I ordered this book before the holidays so I would have time to read it thoroughly and learn to use my canner in time to give gifts to my friends for the holidays. I've been able to pick a nice variety of recipes so not all my friends receive the same item.There were a few helpful tips that weren't in some of the other canning books I read with explanations as to 'why'. I just started canning--after watching my mom and grandma do it all of my life.They have all the gadgets and I was really intimidated at first.However, once I found a water bath canner and a few recipes that looked easy, I set out on my own.My first task:quick mustard pickles.Impatient as I was, I set out canning BEFORE I ordered this set.My mom told me that I really needed a jar lifter above anything else.She was right!I stood staring at the bubbling water trying to think of some way to get the hot jars out of the water without breaking them or burning myself!I finally managed it but it wasn't easy.The funnel would have saved me from making a complete mess of my counter top.The jar wrench (pay attention previous reviewer) is for loosening the rings when they're too snug.I can remember when my mom would forget to take the rings off before storing her canned wonders only to discover a few months later that the rings had rusted.A jar wrench would have really come in handy. The lid magnet will also save you some time and aggravation too.Without it, I was forced to fish for the lids with medal tongs. I later found out that this isn't wise since the medal can scratch the sealant and cause your seal to fail. Chopsticks?They might work sometimes but I found that my lids would stick to the bottom of the pot that I was sterilizing them in. Chopsticks are too cumbersome in my opinion.Finally, the coating will help protect your jars.Using bare metal can weaken your jars, and you don't want that!

For under $10, this set will pay you back many times over.Canning is all about organization and speed.The faster you can get your goodies into the jars and sealed, the better your chances for a successful canning experience.Who wants to spend half the day preparing your harvest only to have to throw half of it away due to spoilage?Sometimes gadgets are a good thing.

One last tip.One of the previous reviewers lamented about the difficulty in finding canning supplies.Amen!The internet seems to be the only way to go unless you have access to old time country stores.Two websites that have helped me tremendousely are canningpantry.com and mrswages.com.

I got these for my wife for Christmas 2003.She wanted to start canning.She canned a bunch of pinto beans and loved the set.It is a rather low end set but for the price and frequency of use it is worth 5 stars.

This was a nice set of canning tools I THOUGHT I needed. The wide-mouth jar funnel and the jar lifter are about the only items I regularly use, although the lifter is a bit akward. The magnetic lid lifter is nice but if you can use a pair of chopsticks they work just as well. Also I already had the pair of tongs in the set, and what is the jar wrench for? It's a good set to have around but with some imagination, and a working pair of hands, you can still manage to can and preserve to your hearts content without it. ... Read more

Before I start, I would like to state the only reason I am giving this cd a five star rating is that it's because it is quite possibly the finest rock and pop music ever written. However, if I were to judge this cd on quauntity rather than quality, this would be a one star cd.

"The Beatles 1" is a collection of all 20 of their American singles as well as seven that went to number one in Britain. While it's no lie that these songs are classics, but really, exactly how many times does this stuff have to be rereleased before everyone is tired of The Beatles?

The burning question is, why don't The Beatles have their own boxed set? I mean, seriously, they are the most important band that ever existed, and yet they haven't gottent their own seven or even eight disc best of with all their hits and the classics that weren't. That's a sin. It would probably take years to put together, but for The Beatles, it would be worth it.

My advice is to only purchase "The Beatles 1" is if you're a beginning fan. Other than that, this cd is not necessary in the least. ... Read more

If you liked the food in the 50's in the midwest, then you'll love this book. But, if you live in the 21st century on either coast, then you'll think you've slipped and fallen into a time warp. The recipes in this book emphasize such "all-time favorites" as corn relish and pickled watermelon rind and suggest such exotica as bland, but chunky pasta sauce.

I give it one star for its history of culture value and no stars for the recipes. I suspect that most [...] will be amazed at far we've come from the Dark Ages of American cuisine.

Thanks to my grandmother, I have been canning since I was young. This cookbook caught my eye so I ordered it and have tried several of the recipes.They are all excellent and so easy to prepare.From jams to bread and butter pickles this very thin and colorful book contains a lot of extremely tastey recipes that your friends and family will love.The measurements are exact and the recipes easy to follow.Great for any cook that enjoys preserving or as a gift to someone who wants to try something different in the kitchen.I can't recommend enough!!! ... I have to start out by saying that I prefer to make spreads with added pectin.I don't have the time, or patience for the long simmering times required to make a jam or jelly without commercial pectin, and I don't typically care for the flavor that the long cooking times produce.
With that said, all of the recipes in this book call for the long-boil method of producing jams and jellies, so I didn't find this book useful.
The pictures are very nice, and the scientific information is accurate.She does list processing times for all of the recipes, my biggest pet peeve with any jam recipe is a last line that says "put into jars and seal", but a lot of the recipes call for ingredients that I have no idea where to acquire (crystalized angelica???), and cooking processes that can take days (mushroom catsup).
I would skip this book in favor of a more inclusive canning guide, or a few hours spent researching recipes and techniques on the internet.
