- I own two steels, one obtained two years ago that doesn't have the washer-shaped metal guard between the handle and the shaft, and one obtained four years ago that does. The one that does has collected a lot of scratches on the guard. I can't help but wonder if hitting that metal has also hurt my blades. - The wusthof logo is stamped onto the shaft, into the metal grooves, right where the tip of a blade passes. When honing a long blade I wind up holding the steel so that the blade doesn't hit the logo. (Those raised ridges can't possibly be good for the edge). But this means I only get to use half of the steel.

On this particular pan, the combination of a relatively short, thin handle and heavy, deep pan, makes it quite easy for the handle to rotate in your hand (even using a towel!), flipping the pan over.Its best not to try and toss this like you would a wok, because its quite possible the pan will flip over in your hand. Leave it on the stove, though, and it heats beautifully, and the nonstick surface is the best I've ever had on a piece of cookware.A great pan for stir-frys for one or two. It is comfortable to use and easy to clean.Even when i have left it in a pan of scambled eggs and not cleaned it or a good while, i dont have to soak it to get any remaining *residue* off.. I have found the one with one rounded and one straight edge a bit better for *scraping* the sides of pans and bowls but that might just be apersonal preference as i have both.if i only had one i think i would get this one because it is better for mixing and almost as good for stirring hot pots. a great value for the price.
