Sound like an oxymoron? Myra Kornfeld argues that choosing to be a vegan does not mean you have to deprive yourself--rather, you can pamper your palate with luscious, healthy food. There are those who advocate salt-free, fat-free, flavor-free food, but Kornfeld sets the record straight right from the beginning. She uses salt for seasoning, and reminds us, thank goodness, that you need fat in a healthy diet. Clear instructions, a chapter on ingredients (including sections on grains, greens, and beans--how to buy them, cook them, and use them), and a short primer on equipment make this a good book for beginners. More accomplished cooks will appreciate Kornfeld's innovation. She isn't afraid to use herbs and spices, and she knows the capabilities of her ingredients. In a simple Rich Stock recipe, for instance, she calls for celery root, and explains in a note that you can substitute celery, but that the root gives a much deeper flavor. Kornfeld's food is voluptuous in presentation, too: Smoky Chestnut and Sweet Potato Soup calls for a dash of rum, and it's served with toasted, chopped hazelnuts and a pinch of freshly grated nutmeg; Hominy, Tomatillo, and Squash Stew is topped with Ginger and Lime Cream made from tofu; and a Fennel, Orange, and Pomegranate Salad is so beautiful and the flavor so complex, you'll swear you're eating four-star cuisine.

The book is a little difficult to navigate, as it's divided into "meals." So if all you're looking for is a side dish, you'll need to set some time aside to peruse the whole book. Every recipe starts with a few words of wisdom, usually information on the ingredients or a description of the final product. The final chapter is on desserts, and here Kornfeld really gets voluptuous. The recipes include Cranberry Orange Tart, Chocolate Pudding Tart, and Lemon Pudding Cake with Blueberry Glaze--there's no depriving anyone of anything here! Vegans will appreciate the creative and inventive approach, but this cookbook is also useful for nonvegans. Most people can't picture a vegan or vegetarian meal in their minds, isn't that the number 1 question that we get, "what do you eat?".Even for the most seasoned of us, it can be hard trying to pull together something new and exciting.

I love this cookbook because instead of simply, "soup" or "side dish", she gives you a complete menu.This takes the hard work out of what tastes great together.Also, she's a restaurant chef, so you know you're getting the best tasting meals.Usually when I flip through a cookbook, I go past most meals listed and only find a few that I'm even willing to try, but I think I'll try everything listed!

A note though, these aren't your 20 minute prep meals.Be prepared to invest a little time in a great sunday dinner, if you're willing.

I purchased this book several months ago. During that time I've tried several of the recipes - the French Lentil soup is very good. The chili and corn biscuit casserole was unappetizing. The chili was so-so and the corn biscuits were too heavy to my taste. The recipe for Mushroom, French Lentil and Chestnut Ragu says to "see Glossary" for the chestnuts but there's nothing in the glossary regarding chestnuts. It wasn't until I read another recipe (Smoky Chestnut and Sweet Potato soup) that chestnuts were discussed. The Mediterranean Salad sounds good on paper but was lackluster. Far too much red onion (which my guests mostly picked out). Although a number of the recipes are relatively simple there are several with very long lists of ingredients that take too much time and too many utensils to prepare. As someone who works full time, a 20-ingredient recipe holds very little allure, no matter how good it sounds. I had trouble finding some of the ingredients. For example, the author specifies several different types of squash which I haven't been able to locate at any of my local grocery stores or farmer's markets.The book is organized in menus which are not listed in the table of contents. If you're looking for a specific recipe you'll have to spend some time with the index trying to locate it which is not convenient. The author definitely has some good ideas but this book probably will sit on my bookshelf more than on my countertop.

I have owned this cookbook for a number of years now and have yet to make anything I didn't absolutely love. Don't be daunted by these recipes with lots of ingredients, some are much less time-consuming than they look.

These are far from hum-drum recipes - the chefs at Millennium are very daring with their ingredient combinations and when cooking from this book you end up with wonderful meals that are full of very complex and rich flavours.

This is a book for the adventurous cook - those who like typical table fare may find this book too much of a stretch. However, those who are looking for high quality vegan/vegetarian dining will find that they have to look no further.

I am always hesitant to rate anything a perfect score.With this book, I am tempted.This book transforms me into a vegan gourmet chef.With each recipe I make , my wife tells me it is the best she's ever had.One word of warning - the cost of some of the ingredients is not for the budget conscious...Enjoy.

Bought the book a couple of years ago by chance and have so far tried more than 20 recipes, every one of them was a hit. I got a lot of new cooking ideas from the book. For any tofu-haters, they would never guess the Chocolate-Almond midnight you made was mostly tofu! Some of the recipes are indeed quite complex, it took me two days to prepare the Indonesian Rice Tamales with Carrot-Lemongrass Sauce for a gathering but it was quite worthy. I must admit that I haven't tried out all the recipes in this book so far. But the vegan tiramisu is so outstanding, that even if it was the only tasty recipe, this book would be worth it!!! My non vegan friends can't believe it is made without dairy and request me to make it for birthdays and other celebrations. When I became vegan I thought I would never be able to eat tiramisu again, but thanks to Bryanna I can enjoy my favourite dessert again! I can`t wait to try the nondairy cheese fillings!

I've been vegan for about 4 years now, and I've been cooking all of my meals for 2 or 3. I've spent over $100 on a shelf full of vegan cookbooks. This one is the best I own. It's the only cookbook I have that has recipes that make food that's outright better than anything I ate before I went vegan! Ever since I started making my own vegan pizzas, I absolutely stopped missing the greasy things that I'd been getting delivered, and the pasta recipes here are the best I've ever had.

The only problem with this book is that the recipes can take a while to prepare. If you're not a big fan of cooking, this probably isn't the book for you. But if you're glad to spend an hour in the kitchen making a meal and want to have some great vegan food, this book is a must!

This blender arrived on Friday the 11th, and is being returned on Monday, the 14th.

My first suspicion came as I unpacked the blender and I noticed the base was not chrome, but in fact, plastic.(which was not disclosed on the technical information).The cord was thin, and only had two prongs at the end, in comparison with my old Waring blender with a very thick black cord and3 prongs at the end for heavy duty performance.

My enthusiam dampened, I put an inch of freshly peeled and thinly sliced ginger in the blender, went first to
puree, then to liquify, then with no decent results went through all of thedifferent selections and barely got useable results.I then put in a half of bunch of parsely, (unchopped)read the instruction booklet, tried the selections for different speeds, and end up with chopped parsley flakes everywhere.Unwilling to give up in spite of failed attempts, I added my berries, and applesauce. Berries, sweet, soft berries, and soft applesauce. I pureed, I liquidfied, I went through all the speeds, and ended up with bits of berries, ginger, and tons of parsely flakes everywhere and produced the worst unblended drink in my blending career.Perhaps most people don't blend fresh ginger and parsely (so-o good for you and tasty too), but my old waring blender has been making this drink for me for years, giving me smooth pureed results each time.

Hindsight being better than foresight, I realized I allowed myself to be seduced with the very nice new shape of the blender jar, thinking it would work much better than the old shape, and the new "touch pads" .Wrong on both counts.The wide shortened new shape looks great, but somehow doesn't work as well as the narrow original shape of the blending jars.The touch pads are a pain to use, and you have to be in the right light to see if you've turned the machine on or if it's off.I was very disappointed in the blender, but more in Cusinart, a brand I have trusted for years who makes the best food processor imaginable.So much for trusted brands. I'm refurbishing my Waring blender with new parts, at least I know it works well.

This blender has features to recommend it IF did not have a documented history of breaking.The clutch unit that engages the blade is plastic and breaks . . . frequently.

The digital control pad is easy to clean, no more using a cotton swab to clean between buttons.Except for the previously mentioned clutch unit, the blender is very well made.It seemed to labor when blending milkshakes or smoothies.

Overall, the blender worked in an acceptable manner before it broke.It was only used about 15 times before the clutch disintergrated.

I am replacing the Cuisinart with an Oster Beehive, which has an all metal drive unit.

I have an old Osterizer (beehive) that I finally decided I needed to replaced.I looked at several different blenders and finally ended up with the Cuisinart.It is performing well for me.Most of the items I am making require crushing ice cubes, and this blender has done a wonderful job.I am getting nice smooth drinks with not chuncks.

As another reviewer mentioned, the based is a chrome plastic convering.But unlike many other blenders, this does not feel too flimsy.

The base is sturdy and the controls repsond well (I had tried a Kitchen-Aid and could not get the off button to work).Clean-up was a breeze, although I do wonder if the pastic based on the jar will hold up over time.I am so use to the metal one from the Osterizer, that the platic does not seem as durable.

My only real complaint is that this unit is a bit noisy.The Kitchen-Aid was very quite by comparison (but pulling the cord to turn a blender off did not seem like such a good thing), so I guess I had expected a quiter unit (the Oster is at least 25 years old -- probably older -- it was my other comparison point for noise).

Longevity will be the key to this unit, but for now it seems likeone of the btter choices available. ... Read more

I was looking for an electric grater, because my hands get tired very easily and grating had become a real chore. After reading reviews, I decided to give a manual grater one more try. Well, it is a pleasure to use a well-designed tool that delivers what it promises. Grating is effortless, you can produce mounds of grated cheese in no time and without hand fatigue. I bought the attachment for it, and while I have used without it for larger chunks of cheese, I recommand it for smaller pieces. The grater is very sharp(that is what makes so easy to use), and you would not want to grate the tips of your fingers with it! Highly recommended!

I wonder if the viewer who had the grater handle crack in the dishwasher didn't buy a cheap imitation grater.There are many look-alikes that are not the Microplane brand, and I would trust nothing but Microplane.I have washed mine in the dishwasher (although I prefer to quickly clean in the sink right after I use it before stuff gets dry and stuck) and I have never had any of my Microplanes break.I own every type of Microplane and they are amazing.Don't buy a discounted imitation product, when the Microplane will give you years of great use (thus saving you money in the end!)

I loved this item.I purchased from another discount store, (not Amazon).Works fantastic, nice large size for grating orange peal, or other large items.However, after washing in the dishwasher a few times, the handle cracked, and then broke.

I too, find the lids difficult to work with.In fact, over the years I have had many bowls with lids and really like the bowls but the lids always were of poorer quality and lasted much shorter periods of time - making the accompanying bowls no longer utile as storage media.

This CD was and is still amazing.I've been listening to it everyday for almost a year now, and none of the songs have grown old! My personal favorites are "Tusk", "Say That You Love Me", "Gypsy", "Go Your Own Way", "Don't Stop", and "Hold Me"; although there isn't a song on this collection I won't listen too. I highly recommend it.

Many of the foods are very bland. Europeans are used to this, but Americans require more flavor in their food. Omnivores will find these foods almost entirely too strange to even consider eating, and severalrecepies call for either weird combinations or ingredients that are tooexpensive or too hard to find. "Nutritional Yeast", for example,is sold under the Australian brande Vegemite, and most Americans find it tobe disgusting. It is also expensive (I'm Australian,so I like it, but myfriends hate it). My advice? This is an imaginative book with many ideas,but don't be afraid to modify. I haven't tried that chocolate cake yet, butsince reading the other review, I don't know if I'll be brave enough to!

Doesn't the moist chocolate cake on the cover look delicious? Don't you wish you knew how to make a wonderful vegan chocolate cake that was moist and rich? Well, I'm sorry to say, you won't learn it from this book.Although, the book is full of new ways to prepare old favorites, if you arean American, the European terms, serving sizes and flavor combinations maybe a bit of a turn-off. However, if you are the adventurous type, you maywelcome the new taste experience. Just, do yourself a favor, and stay awayfrom the chocolate cake.

I am a vegan and I've really enjoyed the dishes in this book. The only problem I have with it is that there are few dishes omnivores would appreciate. When you become a vegan, your taste changes somewhat and morefoods become appealling. The recipes in this book are pretty easy.Some of them are kind of bland but you can always add extra seasonings.I thought the Middle Eastern Noodle Pilaf was great after I sprinkled it liberally with garlic powder, extra pepper, and extra cumin.

I like this book because it has a lot of recipes that combine vegetables with legumes with rice or other starches, basically providing a complete, balanced meal with the preparation of just one dish.

This author does sometimes tend to the spicy - i.e. Jay's Mondo Chili includes chili powder, cumin, paprika, AND Tabasco! And he does use a lot of different types of chilis in his recipes (New Mexico, poblano, jalapeno, serrano), some of which I don't know where to find.

Overall, however, I do find this book has survived the test of time in that several years after I bought it, I still turn to it to try something new, or to re-make a previously enjoyed dish.

I've had this cookbook for four years and I love it.The recipes are all very good and aren't missing anything by not having meat or dairy.They're very creative, restaurant-worthy recipes that non-vegans such as myself will love as well.I like that the author didn't try to copy recipes with meat and dairy like "macaroni and cheeze", which never taste like what they're trying to imitate although they might be good if you don't think of it as mac and cheese.I especially enjoy the soup and chili recipes! ...
