All-Clad LTD 9-Piece Cookware Set with Nonstick Fry Pan
    Kitchen
    list price: $944.00 -- our price: $639.99

    Editorial Review

Distinguished among All-Clad's renowned cookware collections by its stylish, charcoal-black, hard-anodized aluminum exterior, the LTD line provides serious and professional cooks all the virtues that make All-Clad's worldwide reputation unsurpassed. Key to its high performance is a three-ply, bonded construction. Sandwiched between the hard-anodized aluminum exterior and an 18/10 stainless-steel interior is a thick core of pure aluminum that spreads heat evenly across the bottoms of pots and pans and all the way up the sides. The interior is highly polished, so it's stick- as well as corrosion-resistant. The striking exterior resists scratching, chipping, and peeling.

This nine-piece set of stylish LTD cookware consists of a 10-inch fry pan with a layer of scratch-resistant, professional-grade nonstick coating bonded to the interior steel layer; a 2-quart covered saucepan; a 3-quart covered saucepan; a 3-quart covered sauté pan; and a 6-quart covered stockpot. Polished 18/10 stainless-steel pan and lid handles are riveted for strength and grooved on the top for comfort. Both the lids' handles and the pans' long handles (holed for hanging on hooks or pegs) stay cool on the stovetop but won't be harmed by an oven's heat. LTD cookware carries a lifetime warranty against defects and should be hand washed. --Fred Brack

KitchenAid KSM110PS Custom 300-Watt 4-1/2-Quart Stand Mixer, Metallic Chrome
    Kitchen
    list price: $349.99
US | Canada | United Kingdom | Germany | France

    Editorial Review

KitchenAid's stand mixer is a substantial piece of equipment: 300 watts of mixing power make child's play of creaming butter, kneading dough, and whipping cream. The kid in you will appreciate how quick and easy it is to mix up a batch of cookie dough; the 4-1/2-quart bowl can hold up to 8 cups of flour, which translates into as many as 192 sweet treats.

This model comes with three attachments: a flat beater for making batter, meat loaf, and all textures in-between; a wire whip for egg whites, mayonnaise, and more air-infused creations; and a hook for mixing and kneading yeast doughs. All three are solid in construction and easily secured to the beater shaft with a simple twist; untwisting them is a bit trickier because the attachment stems are short and can be hard to grasp, especially if they get the least bit greasy. This model also includes a pouring shield for guiding ingredients to their proper destination, and the bowl itself locks tight to the base.

Standing 14 inches high, jutting out a foot, and weighing more than a grown woman's bowling ball, this stand mixer isn't the sort of appliance you'll wipe down and put away. Better to find a square foot of free counter space for easy access; besides, this machine is as pretty as it is rugged--you'll want to show it off.

To complete the package, KitchenAid includes a spiral-bound guide with instructions, mixing tips, and 67 recipes, from crispy waffles to a caramel walnut banana torte. --Betsy Danheim ... Read more

Krups 888-43 Caffe Centro Time 10-Cup Coffee/Pump Espresso Machine
    Kitchen
    list price: $375.00 -- our price: $299.95
(price subject to change: see help)

    Editorial Review

This espresso/coffeemaker by Krups is one fine combination. On the coffee side it has a 24-hour programmable clock/timer that lets you set the current time and program the timer for "wake-up" coffee. With a 10-cup serving capacity the coffeemaker automatically shuts off after two hours for added safety. And for the impatient coffee lover, there's "stop 'n' serve," which allows you to remove the carafe at any time during the brewing cycle for up to 20 seconds, serve, then replace on warming plate for continued brewing. The removable filter holder swings away for convenient refills and easy cleanup. The double-wall construction keeps heat from escaping during brewing, preserving coffee's aroma and flavor. The espresso/cappuccino side has an advanced system that ensures quick heat-up time and a rotary steam knob that enables you to steam milk or dispense hot water for tea. The "perfect froth" attachment produces great looking, tasty froth. The 37-ounce removable water reservoir produces continuous cups of espresso, so it can please a crowd. --Jane DePaolo

Cuisinart DFP-14 Custom 14-Cup Food Processor, White
    Kitchen
    list price: $320.00
US | Canada | United Kingdom | Germany | France

    Editorial Review

With its massive 14-cup capacity, this is the food processor for cooks with big projects (or big families!). Large enough to knead dough for two good-sized loaves, the processor features an oversized (5-by-3-inch oval) feed tube, which allows slicing and shredding of whole fruits and veggies, as well as a smaller feed tube. The controls are completely intuitive, with "on" and "off/pulse" buttons that can easily be wiped clean. The motor is remarkably quiet--although this is a food processor, so don't expect the sound of butterflies--and powerful enough to manage batches of heavy dough.

The processor includes three stainless-steel discs--one for slicing, one for chopping/mixing, and one for shredding. The work bowl is made of Lexan, known for its durability and resistance to both heat and cold. And the real treat? All pieces but the base can be put in the dishwasher--and the base is easy to sponge clean. The processor includes extensive instructions, a recipe book, a video, a custom spatula, a five-year warranty against motor defects, and a three-year warranty against other defects. --Ariel Meadow Stallings ... (price subject to change: see help)

    Editorial Review

This is a Japanese chef's knife, a low-tip style with a broad blade and slightly curved cutting edge. For Asians, this knife is the same kitchen workhorse the French chef's knife is for Europeans. Its cutting edge is less curved, so it provides little rocking action, but for straight-down slicing and precise chopping, it's superb. Its 7-inch blade can be manipulated by cooks of any hand size, and its balance should please. Classic three-rivet handles distinguish Pro S from Henckels' other quality lines. Handles are smaller, a feature those with small hands may appreciate. Pro S knives this size and larger are high-tech welded to combine three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. While this santoku knife is dishwasher-safe, hand washing is recommended. --Fred Brack ... Read more

    Editorial Review

Generously sized at 12 by 17 inches, this rack comes in handy during baking time--for instance, when cookies need to be elevated and cooled so their bottoms don't become soggy. The rack can also be used in a large roasting pan to lift poultry or a meat roast off the bottom of the pan, ensuring even browning. Nonstick, it won't tear either a delicate crust or a turkey's skin. If necessary, scour this rack with a nonabrasive cleanser and a nylon or plastic scrubber; hand wash with mild detergent to preserve the nonstick surface. --Fred Brack ... Read more

5-0 out of 5 stars Flat top!
This rack has flat wires instead of round, which makes it even better than most other racks for cooling cookies!Gives a more firm support and makes it easier to get a spatula underneath to move cookies around. The finish is nonstick and easy to clean, I've had no trouble sticking mine in the dishwasher.Highly recommend!!

5-0 out of 5 stars A Must Have Cooling Rack!
This is an excellent cooling rack!Certainly a must have if you like to bake, especially cookies! The wires are a good size for cooling. They are flat rather than round, which I love, the flat surface gives more firm support to your cookies. The nonstick finish is very easy to clean.I have 2 and am considering ordering 2 more.It is also to nice to cool baked items on this rack with it is still in the pan, it allows the bottom to cool much better then if it was just sitting on your counter.Highly recommended!

2-0 out of 5 stars Not what I expected
I was looking for a rice cooker and read good things about this one, Zojirushi has a very good reputation. I unpacked it and washed the spoon, non stick pan and measuring cup and started my first batch of rice. It is a 5 cup and it says 1 to 5 cups of uncooked rice so I tried 1 cup. I opened the cover 10 minutes after the cook cycle ended and stirred it and quite a bit of the rice was very brown on the bottom. Also there were little what looked like plastic sheets very lightly stuck to the side of the pan and you could peel them off it was definitely from the rice. I tried another batch with the same results. I contacted Zojirushi directly. I was using Nishiki rice the tech said they used the same. He told me that it can be hard to cook 1 cup of rice. He said ignore the markings in the pan and mix equal amounts of water and rice. He also told me to fill the pan with just enough water to cover the bottom and no rice and run it through the cook cycle and if it looked like raindrops inside when finished it was working properly but if there was a puddle of water left in the pan then the pan was bad. I ended up with a puddle of water and called Zujiroshi back and got a different tech and explained step by step what I did and he said I must have a warped pan, but that should not cause the rice to brown. He told me I should be able to cook 1 cup of rice and to make sure I rinsed the rice until the water was clear. This person told me I should use the markings on the pan. I made sure I rinsed it very good and tried again. With a lot of effort and trying all different things you can get it to be less brown but it also seems like the rice is hard when the cook cycle ends and even after 15 minutes or so after that it seems harder than it should. I have had rice at different peoples houses from basic rice cookers and you just add the water and rice and it comes out great with very little effort and there is no reason why it should take so much efort with this to get just ok rice. I ordered it online and am sending it back(30 day money back refund) and it sounds like the company I ordered it from is saying if they plug it in and the light comes on they will not consider it defective and they will not try to make rice with it. I like the design, it comes apart for easy clean up and I would have to believe something is not right with this but because of the way the company that I bought it from is willing to handle this I am just going to get my 30 day refund back which I am entitled to. My next purchase will be at a local store. So I am left to wonder what was wrong? Would another one do the same? There are not a lot of 5 cup rice cookers around here. My next choice will probably be either the Panasonic SR-SH15PS Which is an 8 cup, a little bigger than I need or a basic National with a glass cover which I would probably go for but I can get the Panasonic for just about the same price maybe a little cheaper.

5-0 out of 5 stars Money well spent!
If you are looking for an easy way to cook rice without the mess, this is it! Add your washed rice, add your water, close the lid..and its done! Cleanup is a snap! And the rice turns out perfect every time....

For fluffy, evenly sized cheese shreds, this is the perfect grater. Its design is based on that of a rasp, the small and efficient woodworking tool. The cutters are especially sharp, which guarantees easy grating. But this also means you'll need to exercise extra caution--no one likes grated knuckles. The large handle allows for a firm grip, and the completely flat grating surface makes it easy to move the cheese across the blades. Carrots, onions, and medium to firm cheeses all worked beautifully with this grater. It's also an excellent choice for larger strips of citrus zest or ginger. --Jill Lightner ... Read more

5-0 out of 5 stars A Must Have for the Casual Cook
I never thought I'd ever use something like this. It just seemed, well, too fussy! However after watching Rachael Ray use one over and over on her show, I thought I'd give it a try. The price was definitely right!I must say, I don't know how I ever got along without it.It's perfect for grating chocolate and hard cheeses, and absolutely essential for zesting lemons and limes (what a difference fresh zest makes in a recipe!) without getting ANY of the bitter pith.I'm getting one for my mom and my best friend...I just love this kitchen tool!Don't think you have to be a gourmet to have use for this. Even the casual cook will find it indispensable!

Much smaller than your traditional blender, this handheld stick blender is compact and easy to store in a small kitchen. Additionally, it saves you the time and effort of cleaning up a blender pitcher as the Quick Prep lets you blend right in your soup pot, mixing bowl, or glass. The powerful motor has two speeds for the best blending results: low is perfect for milk shakes, pancake batter, dips, and dressings, while high works better for baby food, soups, and whipped cream. 1-0 out of 5 stars Warranty service costs $5 + shipping & insurance
Warranty repair will cost you shipping and insurance PLUS a $5 "shipping and handling" fee unless you live in California, where enlightened legislation prevents this sort of costly "warranty" malarkey that's tantamount to no warranty at all. Cuisinart's CSB-77 hand blender, a fancier single-speed 200-watt model with an all-stainless-steel body, requires a $10 fee.

5-0 out of 5 stars Purchase a super hand blender!!
Amazon sells the two best (I know that is gramatically incorrect since there can be only 1 'best'.).

    Cuisinart:
    1) $15 less, even taking into account the $5 KitchenAid rebate.
    2) Nylon guard which means the preparer may use right in the cooking vessel.
    3) Longer warranty (18 mos. versus 12 mos. KitchenAid).

    KitchenAid:
    1) Multi-speed (versus 2-speed for the Cuisinart).
    2) Mixing attachment is removable which means easier storage.
    3) Choice of colors (for those who care).

In using the Cuisinart for the first time, I made a wonderful discovery.Save that old carafe. For purees of large quantities of Italian tomatos, it is, in combination with this wonderful Cuisinart Quick Prep Hand Blender, a wonderful substitute for the 'food mill' suggested in my pasta cookbook (and much more stable than the hard plastic cup included with the blender). Both will clean up like a dream and the Pyrex pot has a further advantage of a pouring spout. From sauce pot to carafe to blending to container to fridge (including cleanup of all) took only about ten minutes!

5-0 out of 5 stars Quite a handy gadget
Emeril Lagasse calls these "boat motors." Of course he probably uses the professional Waring version that costs over $100. I find this much less expensive model to be quite well built with a powerful motor (it actually pulls itself down into the sauce). Clean up is simple enough- simply run it in a bowl of hot soapy water. I recommend it. ... Read more

For professional accuracy, nothing beats this digital thermometer for instantly ascertaining the temperature of foods, whether they're frozen, on the buffet line, or being cooked. Its 1/3-inch LCD face, protected by a rugged polycarbonate cover, displays temperatures from minus 58degrees to 302 degrees F, and updates every second. An on/off switch prolongs the life of the 1.5-volt watch battery that powers the thermometer. (Two batteries are included.) The thermometer comes with a pocket case and has a 4-5/8-inch stainless-steel stem tipped with a temperature sensor, so the thermometer reads temperatures near a food's surface or deep inside. --Fred Brack ... 5-0 out of 5 stars love it, love it, love it
I use this product all of the time. Meat, bread, you name it.

3-0 out of 5 stars Adequate, not great
As others have said, this really can't be described as an "instant read" thermometer. Before I bought it, I was thinking that it would take a moment to calculate, then display the temperature right away. What it actually does is slowly climb. It does jump in the beginning, like from 0 to 100, but as it gets closer to the right temp, it definitely slows down. I don't know why that happens, but you can literally watch it tick up from 137.1 to 137.2, and so on and so forth. Usually by that point I just yank it out and say it's close enough, which is hardly instant. :)

That said, I don't think it takes two minutes to read, as another reviewer opined, though as I said it takes longer the higher it climbs, so maybe if you're cooking really hot stuff it might. For most of the normal temps I'd estimate it at about 30 seconds. It just feels longer because you have to stand and stare at it. :) Not a great product, but if you don't mind a little waiting, it's quite cheap, and it will get the job done eventually.

By the way, I agree the on/off switch is quite small, but I don't have a problem with it. If you have nails you might, though. Happy cooking!

Ideal for crème brûlée and meringues, thistool provides a home cook with the same tool for caramelizing sugarthat a restaurant chef uses. Use it also, as pros sometimes do, forputting the finishing touches on barbecued ribs or roast meats. Thetorch has an adjustable temperature and a safety lock. Its flame pointsstraight out without flaring for safe, precise work, and its handle istextured for a firm grip. A button on the back of the head operates thetorch with the push of a thumb. 1-0 out of 5 stars disappointing
difficult to start and difficult to maintain flame.would think twice before buying again. especially difficult if one is left handed.

4-0 out of 5 stars Operator Error?
I own this torch and I have no problems with it at all. Sometimes I have to tweak the little slider that adjusts the gas flow in order to get the torch to stay lit, but once it's lit for a few seconds I can adjust the slider as appropriate.Perhaps the people having so many problems just aren't taking the time to use it properly, because it works great for me.

4-0 out of 5 stars Works just fine

These pretty little ramekins are a bit different in style than the traditional vertically rippled cups that look like miniature soufflé dishes. The tall, smooth sides are only interrupted by three horizontal ridges--it's a clean look, and actually makes them more practical. They're easier to grab from under the hot broiler and also easier to scrub clean after use--no more caramelized sugar trapped in the ripples! The smooth interior flares just slightly at the top to provide a broader surface area for that tasty top layer. Each ramekin holds up to 8 ounces when filled to the very brim, and goes easily from freezer to oven or microwave--terrific for make-ahead fruit crisps or cobblers. This two-pack is great for replenishing a broken set or as a stand-alone set for a couple. --Jill Lightner ... Read more

If you've never experienced a potato ricer, it's not too late to make up for lost time. This simple implement doesn't have a digital clock, doesn't blink when it's ready, and doesn't have a tiny computer chip imbedded in it to do all the work. It takes a bit of pressing and squeezing, but the light and airy potatoes that result will be both memorable and worth the work. Place boiled potatoes in the bowl of the ricer, set it across a saucepan (using the ridge on the head of the bowl), and press the potatoes through the disk--that's it. Stir in a bit of butter and cream, dust with paprika, and enjoy. And be sure to try the ricer with other root vegetables, such as carrots, yams, and turnips. --C. Whitney-Ward ... Read more

5-0 out of 5 stars It's not just for mashed potatoes
We would hate to be parted from our ricer - it has become an important tool in our kitchen!

The only "gotcha" about it is that, even though the ricer is very sturdily built, if you make mashed potatoes, or other mashed veggies, with it, they must be completely cooked. Our son tends to undercook veggies and then wonders why it's so hard to use and why the handle flexes.

We cook the veggies until a knife can be easily inserted into them, and don't have his troubles.

And, while it makes great mashed potatoes, with three ricing discs of different sizes, we've used it for other things. One of our favorites is spaetzle, a German dumpling dish.

    Splurge!You'll be happy you did!

5-0 out of 5 stars Absolutely
Absolutely the best potato ricer on the market.Don't use it just for that, use it to strain blanched spinach, etc.If you use it only for potatoes, don't bother chopping them. Just cut them in half and boil. When they are done, put them in the ricer, skin side up and let it do it's thing!Just potato, no skin....the ricer does all of the work!

5-0 out of 5 stars the only one to buy...
this is it...if you know what a ricer will do for potatoes and you learn how to use it, this is the one your looking for. The Williams-Sonoma is plastic, it flexs and it does sloppy work. The Cuispro straddles a bowl, is rock solid and drops in the dishwasher for cleaning. buy it.

Washing and drying leafy vegetables has never been simpler or more fun than with this gadget. One hand is all you need to press the soft, cushioned knob to start the spinning; when the built-in brake is applied and the job is done, the basket and bowl can be taken apart and used separately. The knob locks down for easy storage, and the spinner is dishwasher-safe. Use this tool with lettuce, raw spinach, broad-leafed herbs, and greens--they end up clean and oh-so-dry, and the drier your leaves, the better salad dressings will adhere and the less mushy your sandwich bread will become. 2-0 out of 5 stars Just okay...
I'm still looking for the perfect salad spinner. I had this one and broke it after trying to take the lid apart to try to clean under the lid--don't attempt that! I didn't like how this one had a domed lid so you couldn't stack stuff on top of it. I also found that the interior of the basket wasnt smooth but a bumpy basket weave so little bits of lettuce get stuck in it.

2-0 out of 5 stars Worked great until it broke
This was a wonderful salad spinner for the several months it worked. Then it broke. In my kitchen, very few things break. The occasional wooden spatula after fifteen years of use is fine but things tend not to break unless I drop them. This is my second Oxo product that broke while I was using it (the other one was a knife--yes, a knife snapped in two while I was cutting).I still love my Oxo peeler but with two out of three of my Oxo products breaking, I'm done with Oxo for the most part.

I got one of these for Christmas and at first was doubtful about how well it could do at aerating the sauces I'd use it for. By the time I got finished using it for the first time, I was sold. It's especially useful for cheese sauces or anything where ingredients tend to stick to a pan's bottom no matter how careful you are. The flat build means you can get into those corners.
